In order to make this chicken scaloppine, you'll first make a paillard, which just means you'll flatten the thighs by pounding them with a meat pounder, a wine bottle or the bottom of a heavy skillet. That broadens the surface area of the meat, which in turn browns and becomes crisp during cooking. It's delightful with this simple and bright lemon and white wine sauce.

About 1 1/2 pounds boneless chicken thighs
Salt
Black pepper
1 cup all-purpose flour, or more as needed
1 1/2 cups fresh bread crumbs, or more as needed
3 eggs
2 tablespoons extra virgin olive oil, plus more as needed
3 tablespoons butter, plus more as needed
1/4 cup dry white wine
1/2 cup chicken or vegetable stock
1/4 cup freshly squeezed lemon juice
1/4 cup chopped fresh parsley, plus more for garnish
Lemon wedges for serving

Steps:

  • Heat the oven to 200 degrees. Slice each chicken thigh open like a book and lay it flat between two sheets of plastic wrap. Using a meat pounder, a wine bottle or the bottom of a heavy skillet, pound each piece of chicken to 1/4-inch thickness. Put two large skillets over medium-high heat for a minute or 2. Meanwhile, sprinkle the chicken with salt and pepper and put the flour and bread crumbs on two plates or in two shallow bowls. Beat the eggs in another shallow bowl. Sprinkle all with salt and pepper.
  • Add 1 tablespoon each oil and butter to each skillet and swirl it around. When it is hot - a pinch of flour will sizzle - dredge a piece of the chicken in the flour, then dip it in the eggs and finally dredge it in the bread crumbs. Add the chicken piece to one of the pans, then repeat with another piece in the second pan. (You may be able to fit more than one paillard in each pan at a time.)
  • Cook the chicken, rotating occasionally and regulating the heat if necessary so it sizzles constantly but doesn't burn. When the pieces are brown, after about 2 minutes, turn them over.
  • Cook on the second side until the chicken is firm to the touch, 1 to 2 minutes. (Cut into one with a thin-bladed knife; the center should be white or slightly pink.) Transfer the chicken to a platter and put it in the oven. Wipe out the pan with a paper towel and repeat with the remaining chicken, adding more oil and butter to each skillet as necessary.
  • When all the chicken is cooked, turn off the heat under one of the skillets. Add a tablespoon or 2 more oil or butter to the other pan if it looks dry and sprinkle the fat with 2 teaspoons of the remaining flour. Cook over medium-high heat, stirring, for 3 to 4 minutes. Add the wine and stir and scrape the pan until the wine has reduced by about half, about 1 minute. Add the stock and lemon juice and cook, stirring, until the mixture is slightly thickened and a bit syrupy, another 3 to 4 minutes.
  • Add 1 tablespoon butter and swirl the pan around until it melts. Add any juices that have accumulated around the cooked chicken, along with the 1/4 cup parsley. Stir, taste and adjust the seasoning. Spoon the sauce over the chicken, garnish with parsley and serve with lemon wedges.

This is a wonderful lower-fat restaurant-quality dish that is easy to make, I also like to add in a few tablespoons of capers and cook with the lemon glaze if you are a lover of capers then add them in as it really adds to the flavour of this dish --- this lemon sauce is not a heavy creamy sauce which is what makes this dish lower in fat, it is more like a glaze that soaks into the chicken, and I would strongly suggest to double or even triple the glaze I most always do, and please be certain to use only dry breadcrumbs as fresh will not stick to the chicken as well --- this is *very* good!

4 boneless skinless chicken breasts (pounded to about 1/3-inch thickness)
2 tablespoons Dijon mustard
1 large egg (you may need two)
1 cup dry breadcrumbs
1/4 teaspoon poultry seasoning (or to taste)
1/2 teaspoon garlic powder
1/4-1/2 teaspoon seasoning salt
1 -2 tablespoon olive oil (for frying)
1/4 cup chicken broth
2 tablespoons fresh lemon juice

Steps:

  • In a small bowl or shallow dish whisk together mustard and eggs; set aside.
  • Combine the dry bread crumbs with poultry seasoning, garlic powder and seasoning salt; spread on a piece of waxed paper.
  • Dip the breasts firstly in egg/mustard mixture (shake off any excess egg) then coat well with the crumb mixture, pressing downs with hands to adhear the crumbs to the breast.
  • Heat the olive oil in a skillet over medium heat.
  • Add in the chicken and cook for about 5 minutes on each side, or until it is no longer pink inside; remove and transfer to a plate to keep warm.
  • For the glaze; in the same skillet add in the broth, lemon juice and 1/4 teaspoon salt (or to taste, if using capers add in now) bring to a boil scraping any brown bits from the pan.
  • Add in lemon slices and parsley; mix to combine for about 1 minute.
  • Spoon the glaze/sauce over chicken.
  • Delicious!

  • Remove from heat and keep warm.
  • To make chicken and pasta:.
  • Cook pasta and drain.

2 chicken breasts, halved lengthwise
1 teaspoon poultry seasoning
Kosher salt and freshly ground black pepper
1/2 cup all-purpose flour
2 tablespoons canola oil
2 tablespoons unsalted butter
1 (14.5-ounce) can chicken broth
2 tablespoons lemon juice
1 tablespoon chopped fresh parsley leaves
1 tablespoon chopped fresh basil leaves
Serving suggestion: Roasted Garlic and Mushroom Risotto, recipe follows
1 head garlic
2 1/2 teaspoons extra-virgin olive oil
2 (14.5-ounce) cans chicken broth
3 cans water
1 medium onion, chopped
1 (8-ounce) package sliced mushrooms
Salt and freshly ground black pepper
2 1/2 cups long-grain rice
2 tablespoons unsalted butter
1/2 cup grated Parmesan

Steps:

  • Pound the 4 pieces of chicken between sheets of plastic wrap to flatten them, about 1/4-inch thick. Sprinkle with poultry seasoning and season with salt and pepper, to taste. Coat the chicken with the flour, shaking off any excess.
  • In a large skillet over medium-high heat, add the oil and butter. Mix together and when the butter has melted add the chicken, working in batches, until they are golden brown, about 4 to 6 minutes per side. Remove the chicken, to a serving platter, cover and keep warm. Add the chicken broth to the pan and cook it over high heat until it reduces by half and thickens slightly, about 5 minutes. Stir in the lemon juice, parsley and basil. Taste, and adjust the seasoning with salt and pepper, if needed. Pour the sauce over the cooked chicken serve with the Roasted Garlic and Mushroom Risotto.
  • Preheat the oven to 350 degrees F.
  • Slice the top off the head of garlic. Put it on a large square of aluminum foil and drizzle 1 teaspoon of the extra-virgin olive oil over the exposed cloves. Wrap the foil around and over the garlic. Roast until it is soft, about 50 minutes to 1 hour. Remove from the oven and let cool.
  • Pour the 2 cans of broth into a saucepan, over low heat, and add 3 cans of water. Bring to a simmer.
  • In a large, heavy bottomed skillet, heat the remaining olive oil over medium-high heat. Add the onion and saute for 3 minutes. Add the mushrooms, season with salt and pepper, to taste, and cook until the mushrooms release their juices, about 5 minutes. Add the rice and cook for 1 minute to toast.
  • Add 2 ladles full of hot broth to the pan and gently stir the rice. Cook until most of the liquid has been absorbed. Adjust the heat so that the pan is just gently bubbling. Continue adding broth and stirring until all the broth is used and the rice is cooked but not mushy, about 20 to 25 minutes. Once the rice has absorbed all the liquid and is nice and creamy, stir in the butter, Parmesan and the garlic pulp. Cover and let rest for 2 minutes. Transfer to a serving dish and serve hot.
  • Reserve 3 cups for another use.

cooking spray
1/2 cup reduced-sodium fat-free chicken broth
1/4 cup dry white wine
4 teaspoons capers
1 tablespoon butter

Steps:

  • Pound each chicken breast half to 1/4-inch thick with meat mallet or rolling pin.
  • (I put them between 2 sheets of plastic wrap first).
  • Brush chicken with juice and sprinkle with salt and pepper.
  • Dredge chicken in breadcrumbs.
  • Heat a large nonstick skillet to medium-high heat and coat with cooking spray.
  • Add chicken and cook for 3 minutes or so on each side until chicken is done.
  • Remove from pan and keep warm.
  • Add broth and wine to pan.
  • Cook 30 seconds, stirring constantly.
  • Remove from heat.
  • Stir in capers and butter.

1/2 cup homemade chicken stock or canned low-sodium chicken broth
Juice of 1/2 lemon
2 tablespoons capers, rinsed and drained
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Cut each piece of chicken in half horizontally and place each piece between 2 sheets of plastic wrap. Using the smooth side of a meat mallet, pound to 1/4-inch thickness.
  • Place flour, salt and pepper in a shallow dish. Lightly coat chicken pieces with seasoned flour, tapping to remove excess.
  • In a large skillet, heat 2 tablespoons butter and oil over high heat, until hot but not smoking. Brown chicken in batches, turning once, about 2 minutes per side. Transfer to a serving platter and keep warm.

6 tablespoons flour
1 lemon, zest of
1 dash garlic powder

1 egg

parsley, minced
1/2 tablespoon butter

Steps:

  • Pound the cutlets into 1/4" thick cutlets. Season with salt, pepper and a dash of garlic powder.
  • In one bowl, whisk together eggs and milk or water. In another dish, add flour, season with a little salt and pepper and lemon zest, stirring to combine.
  • Dip pork cutlets into the egg mixture, turning to coat then dip into the flour mixture; coating both sides. Lay coated cutlets on waxed paper.
  • In a large saute pan, heat the butter and oil until hot. Fry the cutlets until they are browned on each side, about 3-4 minutes. Drain on paper towels to remove excess oil. Place cutlets on a serving platter and drizzle the lemon sauce on top. Garnish with minced parsley.
  • To make lemon cream sauce: In a small saucepan, melt butter. Add lemon juice, heavy cream, cheese, salt and pepper and bring to a boil. Reduce heat and simmer low for 7-10 minutes until sauce reduces and thickens to desired consistency.

My husband and I learned to make this lemony chicken entree on a cooking vacation in Italy. The recipe is very quick and easy, yet bursting with flavor and tenderness. The sauce is made by whisking a beaten egg into the reduced liquids. We love it served over a side of pasta to soak up all the lemon-wine sauce.

4 boneless skinless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
2 tablespoons flour

1 large egg, well beaten

  • In a small bowl, whisk together egg and lemon juice. Stir egg/lemon mixture into simmering wine and broth, whisking constantly until sauce is smooth and a little thickened (about 2 minutes). It will thicken more when you put in the chicken breasts which have a flour coating.
  • Add chicken and any juices back into the sauce; allow to simmer about 5 minutes until chicken is cooked through, turning chicken once. Add chopped parsley.
  • Place chicken on platter and pour sauce over top; garnish with lemon slices and additional parsley sprigs.
  • HINT: Please use FRESH lemons and parsley; it has a big impact on the flavor of the dish, and besides, no aspiring Italian chef would consider using otherwise!

  • Cook chicken for 3-4 minutes a side, or until it is no longer pink inside and the crumbs are a nice golden color. Remove and transfer to a plate to keep warm.
  • Add broth and limoncello to the empty pan and scrape the brown bits with a rubber spatula. If you are adding lemon juice for a more lemony flavor add it now.
  • Add capers, lemon slices and parsley and stir to combine. Steep for about two minutes. The sauce will rapidly evaporate so watch it carefully.
  • Place chicken breasts on plates and top with the cooked lemon circles and spoon sauce over chicken.

4 boneless skinless chicken breasts
flour, seasoned with salt and pepper
butter
angel hair pasta
lemon juice
3 -4 tablespoons melted butter

Steps:

  • Trim chicken of all fat.
  • Pound the chicken as thin as you prefer- the thinner, the better.
  • Put a pot of water on to boil for the angel hair.
  • Coat chicken in seasoned flour and shake off excess.
  • Melt about half a stick of butter in a non-stick frying pan.
  • Add chicken and cook until lightly browned on both sides and cooked all the way through.
  • Cook pasta 2-3 minutes or according to package directions.
  • Remove chicken from pan and place on serving plates.
  • Melt the other half of the stick of butter in same pan with lemon juice to taste.
  • Add drained pasta to pan and toss to coat.
  • Place pasta on plates with chicken and pour any excess butter/lemon juice mixture over chicken and pasta.
  • My hubby makes his OWN separate butter/lemon juice mixture for just his plate!

1 pound thin chicken cutlets (scaloppine)
3/4 teaspoon salt, plus more for seasoning meat

1 garlic clove, minced
1/2 cup dry white wine
1 1/2 cups low-sodium chicken broth
1/4 teaspoon saffron threads
1/2 cup heavy cream
3 tablespoons chopped fresh flat-leaf parsley leaves (optional)

Steps:

  • Warm the olive oil in a large skillet over high heat. Season the chicken cutlets with salt and pepper. Cook the chicken until golden and cooked through, 2 to 3 minutes per side. Transfer the chicken to a serving plate and tent with foil to keep warm.
  • Reduce the heat to medium, add the shallots and garlic, and cook until tender, about 2 minutes. Deglaze the pan with the white wine, using a wooden spoon to scrape all the brown bits from the bottom of the pan. Cook until the wine is almost evaporated. Add the chicken broth and saffron threads, bring to a simmer, and cook for 10 minutes, or until reduced by half. Add the cream, salt, and pepper to the skillet and stir to combine.
  • Simmer for 1 minute to blend the flavors. Pour the sauce over the chicken. Sprinkle with the parsley if desired and serve immediately.

2 1/2 lbs chicken breasts (pounded thin)
2 fluid ounces olive oil
8 ounces sliced mushrooms
2 lemons (halved)
4 fluid ounces heavy whipping cream
4 artichokes
4 teaspoons parsley
20 ounces angel hair pasta, cooked just al dente
8 tablespoons fried pancetta
4 tablespoons fried capers
1 tablespoon fresh lemon juice
1 quart chablis
3 teaspoons butter
1 quart whipping cream
1 tablespoon thyme
1 teaspoon salt
1 teaspoon pepper

Steps:

  • FOR THE CHICKEN: heat a sauté pan over medium heat.
  • Add oil and heat.
  • Add chicken pieces to the sauté pan and sauté on each side for one minute (or until no longer pink).
  • Add the sliced mushrooms to the sauté pan and sauté with the chicken for an additional minute.
  • When the mushrooms are cooked, squeeze the juice from the lemons into the sauté pan and coat the chicken with the juice (ensure there are no seeds).
  • Add the cream to the pan and stir to incorporate.
  • Add the lemon sauce and stir to incorporate- DO NOT RETURN TO HEAT/FLAME!
  • FOR THE LEMON SAUCE: boil the chablis to reduce to 2 cups.
  • Add the lemon juice and butter and melt slowly.
  • Add the whipping cream and simmer on low heat until thickened.
  • Add the spices and cool to room temperature.
  • TO SERVE: in a large bowl, twirl the pasta into a nest.
  • Sprinkle the chicken pieces on the pasta and pour the remaining contents of the pan on and around the chicken.
  • Sprinkle the artichokes, pancetta and capers over the entire dish.
  • Garnish with chopped parsley.

I searched 'Zaar for this and did not find a recipe like this. The spelling of "scaloppine" is per the original recipe. Hopefully people can still find it if the other spellings (scallopine and scallopini) fit in the title. :) My sister sent me the link for this; it's from myrecipes.com but I'm posting here because 'Zaar is really the only place I like to go for recipes. Also I wanted to streamline this a bit. On myrecipes.com, the recipe is posted in two parts; Basic Chicken Scaloppine and the lemon-cilantro addition. My favorite part about this is that it contains ingredients that are safe for my IBS. My second fave part, my sister says her 5-year old daughter (my first niece!) loves this stuff. Copied from the site, but reworded as necessary for 'Zaar's preferences. Serving size per original recipe, but I've approximated prep and cook times. I couldn't figure out how to separate the ingredient list for the Basic Chicken Scaloppine and the Lemon-Cilantro part, so I noted it in the directions. I hope to try this tomorrow. Please let me know how it turns out for you. It appears to be different from other scaloppine recipes posted here. ETA: I just made this tonight; bf really loved this. For the 2 of us, I used only 2 chicken breasts and just over half the amt of flour and a bit less oil, but I kept all other ingreds the same. Bf thought it wasn't nice of me to not make him 2 breasts, that's how much he enjoyed this! I loved this too, and will make this often. I did leave off lemon wedge, and it wasn't really missed. The flavors were wonderful!

4 boneless skinless chicken breast halves (5 to 6 oz. each)
1/2 cup all-purpose flour
4 teaspoons olive oil
1 teaspoon olive oil
2 garlic cloves, peeled and minced
2/3 cup chicken broth (skim off fat)
1 teaspoon lemon peel, grated
1 tablespoon lemon juice
1/4 teaspoon red pepper flakes (original recipe lists as hot chile flakes)
2 tablespoons fresh cilantro, chopped
salt and pepper
lemon wedge

Steps:

  • BASIC CHICKEN SCALOPPINE (first three ingredients).
  • Rinse 4 boneless, skinned chicken breast halves (5 to 6 oz. each); pat dry.
  • Sprinkle both sides lightly with salt and pepper.
  • Place halves between sheets of plastic wrap; with a mallet or a rolling pin, gently pound chicken to an even 1/4 inch thick. Peel off wrap.
  • Put about 1/2 cup all-purpose flour in a shallow container. Turn each piece of chicken in flour to coat lightly.
  • Set a 10- to 12-inch nonstick pan over medium-high heat; when hot, add 2 teaspoons olive oil. Lay 2 pieces of chicken in pan; cook, turning once, until no longer pink in the center (cut to test), 4 to 6 minutes. Transfer to a platter or plates and keep warm in a 200° oven.
  • Repeat to cook remaining chicken in 2 more teaspoons oil.
  • LEMON-CILANTRO CHICKEN SCALOPPINE (last 9 ingredients).
  • You'll need to use the Basic Chicken Scaloppine (see above) and then continue with remaining directions below.
  • Keep basic chicken scaloppine warm in a 200° oven.
  • Add olive oil and garlic to hot pan used to cook chicken (don't wash) and stir over high heat until garlic is slightly limp, about 15 seconds.
  • Add chicken broth, lemon peel, lemon juice, and chile flakes to pan; stir until mixture is boiling. Boil, stirring occasionally, until juices are slightly reduced, 1 to 1 1/2 minutes, then stir in fresh cilantro.
  • Spoon sauce evenly over chicken. Add salt and pepper to taste, and garnish with lemon wedges.
  • Yield.

From David Rosengarten's It's All American Food. This will be salty because of the prosciutto so be sure to use low salt chicken broth. A large amount of butter is called for in the original recipe, but I used less than half the amount and I still thought the chicken tasted great!

4 (2 ounce) boneless skinless chicken breasts
1/4 lb prosciutto, very thinly sliced
2 large eggs
flour (for dredging)
10 tablespoons unsalted butter (I used about 5 tbl)
4 slices thinly sliced deli mozzarella cheese
4 tablespoons grated parmesan cheese
1/2 cup dry marsala
1/2 cup low sodium chicken broth

Steps:

  • Place chicken breasts between pieces of waxed paper and pound them with a mallet until about 1/4" thick.
  • Lay out slices of prosciutto side by side on counter, with the length of the slice facing away from you.
  • Place one of the chicken cutlets on top of 3 or 4 prosciutto slices. Fold the upper and lower edges of the prosciutto slices in and over the chicken cutlet. The cutlet will be partially covered by the prosciutto. Flip the cutlet over and it will be totally covered. Repeat with all 4 cutlets. (That seemed like a lot of work to me. I cut a pocket in the chicken cutlets and inserted diced prosciutto. Turned out just fine.).
  • Break eggs into a wide shallow bowl and beat well.
  • Place enough flour to dust the chicken in another wide shallow bowl.
  • Dip each cutlet into the egg, coating well. Let excess egg drip off and then dip lightly in flour.
  • In two 8" saute pans, place 3 tbl butter (I used half that amount) and heat over medium heat.
  • When butter is foaming, place 2 cutlets in each pan.
  • Cook the cutlets until golden on the outside and just done inside (about 2 or 3 minutes per side).
  • Preheat broiler.
  • When chicken is done, remove cutlets to broiler pan.
  • Top each piece with one tablespoon (or more) of parmesan and then a slice of mozzarella.
  • Place under broiler until cheese has completely melted and browned slightly.
  • Meanwhile, make the sauce. Spill butter out of saute pans and wipe them lightly with a paper towel. (I didn't do this and used the pan juices and butter in the sauce.).
  • Return pans to high heat and add 1/4 cup marsala and 1/4 cup chicken stock to each pan.
  • Boil quickly until only 3 or 4 tbl of liquid is left in each pan.
  • Turn heat to low and place 2 tbl of butter in each pan (again, I used less). Swirl with a whisk until a creamy brown sauce is formed.
  • Divide cutlets between 2 plates and pour marsala sauce over and around them.
  • Serve immediately.

4 sunburst or pattypan squash, sliced
Kosher salt
Canola oil, for frying
1 cup orange juice
1 cup lemon juice
2 cloves garlic, sliced
2 tablespoons honey
1 sprig fresh mint
1 sprig fresh basil
2 tablespoons olive oil
2 boneless, skinless chicken breasts, pounded thin
1/2 cup all-purpose flour
Kosher salt and freshly ground black pepper
1/2 cup white wine
1/2 cup orange juice
1/2 cup lemon juice
1/2 cup chicken broth
1 red pepper, seeded and sliced
1 tablespoon extra-virgin olive oil
1/2 cup chicken broth
Kosher salt and freshly ground black pepper

Steps:

  • Squash: Put the squash slices in a colander and sprinkle with salt, toss to coat. Put a heavy bowl on top to press down the squash and let sit for 30 minutes. Drain the squash, rinse and dry it completely. Fill a deep saute pan with 1-inch of canola oil. Heat the oil over medium-high heat and deep-fry the squash slices until golden brown. Remove the squash to paper towels to drain. Put the squash into a large jar or bowl and add the citrus juices, garlic, honey, mint sprigs and basil. Set aside.
  • Chicken: Heat a large saute pan over medium-high heat and add the olive oil. Dredge the chicken breasts in flour and season with salt and pepper, to taste. Brown both sides of the chicken, about 4 minutes on each side. Remove the chicken from the pan then deglaze the pan with wine and reduce until most of wine is cooked off. Add the orange juice, lemon juice and broth and reduce by half. Season with salt and pepper, to taste.
  • Pepper puree: Add the olive oil to a large saucepan over medium heat. Add the red pepper and saute until soft, about 10 minutes. Transfer the pepper to a blender and add the chicken broth. Blend until smooth. Season with salt and pepper, to taste.
  • Arrange 1 chicken breast on each plate with a few slices of the squash. Top with some the red pepper puree and serve.

This was my favorite thing to order when we go to Fridays. It is no longer on the menu but now I can make it at home! I got this from Robbie's Recipes. Not exactly low in calories but definitely worth it every now and then.

2 cups chablis or 2 cups other very dry white wine
1 1/2 teaspoons fresh-squeezed lemon juice
1 tablespoon real butter
2 cups heavy whipping cream
2 teaspoons minced fresh thyme or 1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 -2 1/2 lbs boneless skinless chicken breasts
2 tablespoons olive oil or 2 tablespoons vegetable oil
8 ounces sliced fresh mushrooms
2 lemons, sliced in half
1/2 cup heavy whipping cream
1/2 cup coarsely chopped canned artichoke heart
4 teaspoons chopped fresh parsley or 2 teaspoons dried parsley
1 lb angel hair pasta
4 ounces pancetta, chopped
4 tablespoons capers

Steps:

  • In a 2-quart saucepan, boil wine until reduced by half. Add lemon juice to pan, then whisk in butter until melted. Add 2 cups cream and simmer on low heat until thickened, stirring often. Remove from heat, stir in spices, and set aside.
  • -Pound chicken breasts with the flat side of a meat mallet or the bottom of a glass until thin.
  • -Fill a large pot with water and begin to heat to boiling (for preparing pasta later).
  • -Heat oil in a large skillet or wok over medium-high heat; add chicken to pan and sauté on each side for 60 - 90 seconds, or until chicken is cooked through. Add mushrooms to pan and sauté with until mushrooms begin to soften. Squeeze juice from both lemon halves over chicken and mushrooms; pick out any seeds. Add 1/2 cup cream to pan and bring to a boil, stirring often. Remove from heat; stir in artichokes, parsley, and prepared lemon sauce; set aside and keep warm.
  • -Add pasta to boiling water and cook as directed on package.
  • -In a separate skillet or pan over medium-high heat, quickly sauté pancetta and capers until pancetta is browned; remove from heat.
  • -On individual serving plates or one large platter, swirl portions of drained pasta into "nest(s)". Arrange chicken pieces in center of nest, pour sauce/mushrooms over and around chicken, and then sprinkle pancetta/capers evenly over all.

1/2 cup lemon juice
1/4 cup white wine
1/2 cup heavy cream
1 pound (4 sticks) butter
6-8 (3-oz.) chicken breasts, pounded thin

1/2 to 3/4 cup flour, seasoned with salt and pepper, for dredging
6 ounces pancetta, cooked
1 1/2 cups mushrooms, sliced
1 1/2 cups artichoke hearts, sliced
1 tablespoon capers
1 pound angel hair pasta, cooked
chopped parsley, for garnish

Steps:

  • To make the sauce: Heat the lemon juice and white wine in a saucepan over medium heat. Bring to a boil and reduce by one-third. Add cream and simmer until mixture thickens (3 to 4 minutes). Slowly add butter until completely incorporated. Season with salt and pepper. Remove from heat and keep warm. To make chicken and pasta: Cook pasta and drain. Heat a small amount of oil and two tablespoons butter in a large skillet. Dredge chicken in flour and saute in pan, turning once, until brown and cooked through. Remove chicken from pan and add to pan remaining ingredients. Heat until mushrooms soften and are cooked; add chicken back to pan. To serve: Place cooked pasta on each plate. Add half of butter sauce to chicken mixture and toss. Taste and adjust, adding more sauce if needed. Place chicken mixture over pasta. Garnish with parsley. Alternately, mix pasta and chicken mixture together. Toss with butter sauce.
