CHICKEN PARMESAN PATTY MELTS
I came up with this dish to re-create the comforting flavors of a restaurant-style sandwich. Now it's my husband's favorite dinner. -Deborah Biggs, Omaha, Nebraska

- In a large bowl, combine 3 tablespoons Parmesan cheese, 2 tablespoons marinara sauce, pepper and salt. Crumble chicken over mixture and mix well. Shape into four patties., Place on a baking sheet coated with cooking spray. Broil 4 in. from the heat for 4-6 minutes on each side or until a thermometer reads 165° and juices run clear., Top with remaining marinara, the mozzarella and remaining Parmesan. Broil 1-2 minutes longer or until cheeses are melted. Top each roll half with a patty.

- Prep the patties as the box directs and arrange one patty on an oven-proof platter or stainless steel platter. Spread some gently heated Spaghetti Sauce over each patty and then a slice of Mozzarella and just a little dab more of the sauce on top of the cheese-A dab, now please. Place about 6-inches from the broiler heat till cheese is melted taking perhaps, 4 or 5 minutes, if that long. Serve at once with a nice tossed salad and a smooth fruity dessert, rather than something heavy. OR you can serve a small portion of very thin spaghetti that you've cooked per box directions and drained well, along with more heated Prego sauce over that to accompany the chicken patty arrangement.
