You just cant go wrong with this tasty chicken dish. I would be proud to serve it to company, and yet it is so easy that it is great for any day of the week. Crispy and flavorful on the outside, moist and juicy on the inside...and a real kid-pleaser. Why not add some red potatoes in the same dish alongside the chicken (poke holes in them or half if large) and bake for an easy side? 1 cup breadcrumbs (or use crushed up crackers)
1/2 cup cheddar cheese, shredded
1/2 cup parmesan cheese, grated plus
1/4 cup parmesan cheese, for topping
1 teaspoon salt
1/4 teaspoon pepper
4 -6 boneless chicken breast halves
1/2 cup butter, melted plus
2 tablespoons butter, melted for topping

Steps:

  • Mix together bread crumbs, cheeses, salt and pepper. Dip chicken pieces in melted butter and then in cheese/bread crumb mixture. Roll the breast up or tuck in the sides to form a little bundle.
  • (To freeze: wrap each raw chicken bundle in plastic wrap and then place in freezer bags. Thaw and follow baking directions below.).
  • To Bake: Place in large baking dish. Pour remaining butter on top and sprinkle with remaining Parmesan. Bake, uncovered, at 350 for 1 hour, until chicken is crispy.

12 boneless skinless chicken breast halves
2 (8 ounce) cartons chive & onion cream cheese
2 tablespoons butter
salt
12 slices bacon

Steps:

  • Flatten chicken to 1/2" thickness.
  • Spread 3 tablespoons cream cheese over each chicken piece.
  • Dot with butter and sprinkle with salt; roll up.
  • Wrap each with a bacon strip.
  • Place, seam side down, in a greased pan.
  • Bake, uncovered, at 400F for 35-40 minutes or until juices run clear.
  • Broil 6 inches from the heat for 5 minutes or until bacon is crisp.
  • If you are making these ahead for future use, freeze these uncooked on a cookie sheet in your freezer. When solid, wrap and put in a ziplock bag or vacuum seal desired quantities.
  • To cook from frozen state, thaw before cooking and follow directions above.

1 1/2 pounds packaged sliced boneless skinless chicken breast for stir-fry
1/4 cup drained marinated sun-dried tomatoes, roughly chopped
1/4 cup drained pickled onions, roughly chopped
1/4 cup pitted green olives, halved
1/4 cup roasted red pepper strips
1 teaspoon dried thyme
1/4 teaspoon red pepper flakes
Tomato and Herb Chicken Supper:
1 1/2 pounds packaged sliced boneless skinless chicken breast for stir-fry
16 grape tomatoes, halved
1 small yellow squash, cut in half lengthwise, then into 1/4-inch-thick half-moons
1 medium shallot, cut in half, then sliced into thin half- moons
3 tablespoons olive oil
2 tablespoons dry white wine, vermouth, or chicken broth
4 (3-inch) fresh rosemary sprigs
4 (3-inch) multi-branched fresh thyme sprigs
1/2 teaspoon table salt
1/2 teaspoon ground black pepper

1 large Yukon Gold potato (about 8 ounces), shredded through the large holes of a box grater
1 medium globe tomato, chopped
1 small red onion, quartered and thinly sliced
1/4 cup regular or low-fat plain yogurt
1 teaspoon granulated white sugar
1 teaspoon ground coriander
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon table salt
1/4 teaspoon ground cloves
1/4 teaspoon ground turmeric

Steps:

  • Mix all the ingredients in a very large bowl until the meat is well-coated in a uniform sauce.
  • Place a 12-inch piece of aluminum foil on your work surface; top with a 12-inch piece of parchment paper. Spoon a quarter of the chicken mixture into the middle of the parchment paper.
  • Fold the long sides so they meet in the middle of the packet, then crimp these long edges together to make a tight seal, using the foil to catch and hold the waggly parchment paper in the seam. Roll both of the ends of the packet to seal as well. continue to make 3 more packets.
  • Set the packets on a large baking sheet and freeze for at least 24 hours. Remove the sheet and stack the packets flat in the freezer.
  • To bake, position the rack in the center of the oven and heat the oven to 425°F.
  • Place 1 or more of the packets straight from the freezer on a large lipped baking sheet. Bake for about 30 minutes, or until hot and steamy inside. Cool for 10 minutes before opening and serving.

1 (1 1/4 ounce) package taco seasoning mix
8 ounces apricot jam
12 ounces salsa
1 1/2 lbs chicken pieces (4-6 pieces)

Steps:

  • For immediate cooking: Pre-heat oven to 350°F Place all ingredients into a large baking dish, turn chicken to coat.
  • Bake until chicken juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).
  • For freezing: Place all ingredients into a 1 Gallon freezer bag.
  • Lay flat in freezer.
  • To thaw and cook: Take the bag out of the freezer the night before, make sure the baggie is completely closed.
  • Place the Bag on a refrigerator shelf to thaw.
  • Preheat the oven to 350°F Empty the contents of the bag into a large baking dish and bake until the juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).

1/8 teaspoon garlic powder
1/3 cup lemon juice
1 lb raw chicken piece
1 cup regular uncooked rice

Steps:

  • Mix all of the spices and lemon juice in a 1-gallon bag, add chicken pieces, and freeze.
  • To prepare, thaw bag of chicken, preheat oven to 450 degrees. Arrange chicken skin-side down in an 8x8x2-inch bakind dish treated with nonstick spray. Pour liquid over chicken.
  • Bake for 20 minutes. Turn chicken over and baste. Bake for an additional 15 to 20 minutes.
  • Prepare rice according to package directions.
  • Serve chicken over rice.

Every time I make this, my husband swears it smells and tastes like Thanksgiving dinner. I suppose it could be made with Turkey cutletts to be even closer, but I've always used chicken.

4 frozen boneless skinless chicken breasts
2 apples, peeled and sliced
2 sweet potatoes, peeled and sliced
1 onion, sliced thinly
1/4 cup maple syrup
1 tablespoon poultry seasoning
1/4 cup chopped pecans
1/4 cup dried cranberries (craisins)
4 tablespoons butter

Steps:

  • TO MAKE IN A PAN:
  • Place the chicken breasts (still frozen) on the bottom of the pan.
  • Layer the apples, sweet potatoes, and onion on top.
  • Sprinkle on the nuts and craisins.
  • Place one pat of butter on each breast.
  • Mix the maple syrup and poultry seasoning together and drizzle on top.
  • TO MAKE IN A BAG:
  • Put everything except the maple syrup, poultry seasoning, and butter into a ziplock bag.
  • Melt the butter and combine with poultry seasoning and maple syrup.
  • Put these in a little bowl and freeze separately (in the bag).
  • When ready to cook, dump the bag out and then pour the (thawed) syrup butter mix on top.
  • To cook: Thaw. Cook covered in a 350 oven for 30-45 minutes. I confess I normally skip the thaw step and put it in the oven.
