This is my friend Cheyanne's recipe, she made it for me when I had my last baby. It's different because it's made with chicken not beef. I have made it without the bell pepper and celery and it was still great. Easy, healthy and delicious.

2 chicken breasts, cut into chunks
2 celery ribs, chopped
1/2 medium onion, chopped
1 green bell pepper, chopped
2 tablespoons butter
1 (15 ounce) can chopped tomatoes
1 (8 ounce) can Mexican tomato sauce
2 teaspoons sugar
1 teaspoon salt
1 teaspoon chili powder
3 cups cooked macaroni or 3 cups pasta, of choice

Steps:

  • Saute celery, onion and bell pepper in butter until soft. *I do not like crunchy veggies so I start with the celery because it takes the longest, then after a few minutes I add the onions and then the bell peppers.
  • Once the veggies are the way you like them add the chicken and brown for a few minutes.
  • Add all remaining ingredients and simmer 20 minutes.
  • Toss in the pasta and serve.

Another Abs Diet I'm posting for DH. He was really excited when he came home with this one! Anyway, it's great if you're on the diet or just want a healthier meal. Hope you enjoy! To prepare this you will need 2 clean bricks.

2 large boneless skinless chicken breasts
1 teaspoon coarse salt
1 teaspoon cracked black pepper
1/2 teaspoon hot red pepper flakes
1 tablespoon garlic, chopped
1 tablespoon fresh rosemary, chopped
1 fresh lemon, juice of
1/4 cup extra virgin olive oil

Steps:

  • To prepare this you will need 2 clean bricks.
  • Rinse and dry the breasts.
  • sprinkle them with salt, pepper, red pepper, garlic, and rosemary,.
  • place in a baking dish, pour on lemon juice, and olive oil and refrigerate for 30 min to an hour.
  • wrap each of the bricks in aluminum foil.
  • brush the grill with a stiff wire brush.
  • dip a paper towel (folded into a small square) in oil and holding it with tongs rub it over the rods of the grill to oil them.
  • Then place the chicken at a 45 degree angle to the rods, put the bricks on top.
  • Cook over high heat for 4 to 6 minutes per side reorienting each breast every 2 minutes for a crosshatching effect.
