CHICKEN CAESAR WRAPS WITH CRISPY CHEESE



Chicken Caesar Wraps with Crispy Cheese image

12 ounces romaine hearts (from 1 to 2 heads), chopped
Dressing, recipe follows
Eight 10-inch/burrito-size flour tortillas
Roasted Chicken, recipe follows
2 cups store-bought Parmesan crisps, preferably Moon Cheese, or see recipe below for homemade
Extra-virgin olive oil, for cooking
6 tablespoons (96 grams) mayonnaise
1/4 cup (60 grams) lemon juice (from 1 lemon)
1/4 cup (63 grams) Dijon mustard
1/4 teaspoon Worcestershire sauce
2 cloves garlic, grated
1/2 cup (120 grams) extra-virgin olive oil
1/2 cup (60 grams) shredded Parmesan
Pinch kosher salt
Freshly ground black pepper
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
One 3- to 4-pound whole chicken
1/4 cup (60 grams) mayonnaise
2 cloves garlic, grated
1/2 teaspoon Worcestershire sauce
8 ounces shredded Parmesan
1/4 teaspoon cayenne pepper
Place an oven rack in the middle position. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.

Steps:

  • Coat the lettuce in some Dressing and reserve the remaining Dressing for serving on the side.
  • To assemble a wrap: Lay a tortilla flat on a clean surface. Pile about 1 1/2 ounces dressed lettuce on the lower third of the tortilla. Top with 3 to 4 slices chicken (more or less, as desired) then sprinkle with the Parmesan crisps. Fold the wrap over the filling, tuck in the sides and continue to roll. Repeat with the remaining tortillas, lettuce, chicken and Parmesan crisps.
  • Heat a drizzle of olive oil in a large skillet over medium-high heat and crisp the tortilla for a few minutes on both sides, or until golden. Repeat with the remaining wraps.
  • Remove the wraps to a work surface. Cut in half on a bias and serve with additional Dressing for dipping.
  • Whisk together the mayonnaise, lemon juice, Dijon mustard, Worcestershire and garlic in a mixing bowl or measuring cup. Slowly drizzle in the olive oil and whisk to emulsify. Stir in the Parmesan and season with salt and pepper. Adjust the consistency with a little water if it is too thick.
  • Sprinkle the salt and pepper all over the outside and in the cavity of the chicken and rub into and underneath the skin. Place on a rack over a sheet pan and refrigerate, uncovered, for at least 6 hours or up to overnight. Allow the chicken to come to room temperature before cooking.
  • Place an oven rack in the middle position. Preheat the oven to 425 degrees F.
  • In a small bowl, combine the mayonnaise, garlic and Worcestershire, then schmear the mixture all over the chicken. Roast the chicken on a rack in a roasting pan until a thermometer inserted in the thickest part of the thigh (avoiding bone) registers 165 degrees F, begin checking at around 50 minutes. (If the skin gets too dark, tent with aluminum foil.) Allow to rest 30 minutes before carving. Carve the chicken into bite-sized pieces.
  • In a medium bowl, add the cheese and cayenne pepper. Toss to combine. Spread the cheese evenly across the prepared baking sheet. Bake until the cheese is bubbling, crispy and golden brown, 18 to 20 minutes. Set aside to cool completely, then break up into shards.

4 boneless skinless split chicken breasts
2 Tbsp margarine or butter
2 rolls Pillsbury Crescent Rolls Big and Flaky
12 ounces Philadelphia Cream Cheese

Steps:

  • Pre-heat oven according to crescent rolls' packaging. Rinse split chicken breasts (trim fat if desired).
  • In a large skillet heat butter or margarine until melted. Place chicken in skillet. Fry chicken on medium high heat until golden brown on both sides, until mostly cooked through.
  • Unroll crescent rolls, leaving 2 stuck together per breast halve. Spread cream cheese on one side of dough. Place fried chicken breast halve on top of crescent dough and cream cheese and wrap around chicken until breast is fully wrapped.
  • Place wrapped chicken on a non stick baking sheet in the oven until crescent rolls are golden brown approx. 10-15 minutes. Serve with favorite side dish and enjoy!

3 (8 ounce) cans chicken breasts
2/3 cup salsa or 2/3 cup picante sauce
2 cups shredded Velveeta cheese
1 (16 ounce) package flour tortillas (8 count burrito size)
1 (16 ounce) container sour cream (for dipping)
additional salsa (for dipping)

Steps:

  • In a large bowl, mix well salsa and drained chicken (mix well enough to break up any large chunks of meat).
  • Place large spoonful in center of tortilla.
  • Top with shredded cheese.
  • Spread out evenly--avoid getting too close to edges of tortilla.
  • Either fold in half and grill about 4-5 minutes on George Foreman-type grill.

2 tablespoons honey
1/3 cup dried cranberries
2 tablespoons whole berry cranberry sauce

1/2 cup spinach leaves

Steps:

  • sit goat cheese out prior to making so it can soften.
  • preheat oven to 350 and lightly toast walnuts for 8 minutes, stirring halfway through.
  • use electric mixer to beat together goat cheese and honey.
  • add the walnuts, dried cranberries and cranberry sauce.
  • heat flatbreads in oven for 4 minutes.
  • spread goat cheese mixture over bread.

4 to 6 slices turkey bacon, cooked until crisp and crumbled
Reserved roasted potato wedges
1 cup shredded cheddar cheese
1 tablespoon olive oil
1 cup sliced red onions
4 reserved roasted chicken breast halves
1 cup prepared salsa
1/3 cup prepared ranch dip
4 (8-inch) spinach tortillas

Steps:

  • Preheat oven to 375 degrees F.
  • Arrange potatoes on a large, foil-lined baking sheet. Top with cheese and bacon pieces. Bake 8 to 10 minutes, until cheese melts. Using two forks, pull chicken apart into shreds. Set aside.
  • Heat oil in a large skillet over medium heat. Add onions and saute 3 minutes, until soft. Add chicken and salsa and bring to a simmer. Remove from heat and stir in ranch dip.
  • Arrange tortillas on a flat surface. Top with chicken mixture and roll up. Serve with cheese fries on the side.

2 (4 ounce) skinless, boneless chicken breast halves
¼ cup sun-dried tomato dressing
8 sun-dried tomatoes (not oil packed)
1 cup boiling water
⅓ cup crumbled feta cheese
4 cups loosely packed torn fresh spinach
4 (10 inch) whole wheat tortillas
¼ cup sun-dried tomato dressing

Steps:

  • In a large resealable plastic bag, combine chicken breasts and 1/4 cup dressing. Seal, and refrigerate for several hours.
  • Preheat grill for high heat. Combine sun-dried tomatoes and hot water in a small bowl. Set aside for 10 minutes, drain, and cut tomatoes into thin slices.
  • Lightly oil grill grate. Discard marinade, and place chicken on grill. Cook for 12 to 15 minutes, turning once, or until done.
  • Cut chicken into strips, and place in a medium bowl with sliced tomatoes, feta, and spinach. Toss with remaining 1/4 cup dressing. Distribute mixture between the four tortillas, and wrap. Either cut in half and enjoy cold, or place briefly back on grill until the tortilla turns warm and crispy.

2 tablespoons olive oil, divided
1 lb broccoli, chopped into bite-size pieces
4 -5 tablespoons sun-dried tomatoes, chopped
4 cups baby spinach leaves, tightly packed
3 cups cooked chicken breasts, chopped or shredded
1/2 cup cottage cheese
1/2 cup mozzarella cheese, shredded
1/2 cup parmesan cheese, shredded
1/2 cup blue cheese, crumbled
1/2 teaspoon italian seasoning
1/2 teaspoon black pepper
1 teaspoon garlic salt
6 (10 inch) flour tortillas

Steps:

  • Preheat oven to 350°F.
  • Heat the olive oil in a large pan over medium-high heat. Add broccoli and sun-dried tomatoes, and saute for 5 minutes.
  • Add the baby spinach, and cook until wilted, about 2-3 minutes.
  • Remove pan from heat. Add rest of ingredients, except for the tortillas and rest of oil, and stir to combine well.
  • Place about 1-1/3 cups of the chicken mixture in each tortilla. Roll into a wrap/burrito, and place on a sprayed baking pan seams side down. Brush the wraps with the remaining olive oil.
  • Bake at 350F for 25 minutes, or until the tortillas are lightly browned and crispy. Let stand for at least 10 minutes, because filling will be hot!
