1/4 c butter
1/4 c all purpose flour
freshly grounf black pepper to taste
2 1/4 c milk
2 chicken bouillon cubes
2 c cubed cooked chicken
1/4 c diced celery
1/2 c finely chopped onion
1 c peas, fresh or frozen (frozen use peas with carrots if desired)
fresh baked home made or purchased biscuits

Steps:

  • 1. In a medium saucepan, melt butter. Then stir in flour and add pepper to taste. Add milk and bouillon. Cook, stirring well to mix, over medium heat, keep stirring until thickened. Stir in remaining ingredients (except of course the biscuits). Cook until peas are tender crisp and chicken is thoroughly heated. Serve over hot fresh homemade biscuits.
  • 2. Note: You can extend this dish with canned mushrooms, additional peas and carrots, other veggies, and/or more chicken, if desired.

GRAVY SAUCE
1/2 c butter or margarine
1 1/2 c milk
1/2 tsp salt
1/4 tsp black pepper
1 medium green bell pepper (chopped)
1/2 large onion *diced
1/2 c all purpose flour
1 small can of mushrooms (optional)
1 jar(s) (diced) pimientos 2 o.z.
1 1/4 c chicken broth
1 1/2 c velveeta cheese (cubed)
6 chicken bouillon cubes
1 large whole chicken or ( cups of turkey) boiled and deboned
BASE ( CAN USE ONE OF THE FOLLOWING ITEMS)
mashed pototoes
rice
biscuits
toast or bread

Steps:

  • 1. Boil 1 large whole chicken, add 3 chicken bouillon cubes to the water. Once chicken is falling off the bones, remove from stove top and de-bone, set chicken aside.
  • 2. In a large soup pot ( I use the same pot I boiled my chicken in) Melt butter on medium-high heat. Cook bell peppers and mushrooms in butter, stirring occasionally, until bell pepper is crisp-tender.
  • 3. Add flour, salt and pepper. 3 remaining bouillon cubes. Cook over medium heat, stirring constantly,Stir in milk and broth. Heat to boiling, stirring constantly. Boil and stir 1 minute. Turn down to a low-medium heat and stir in chicken (or turkey) and pimientos.cut up Velveeta cheese into cubes to melt faster, I let my sauce simmer for about 30-40 mins to thicken up.
  • 4. Once thickened, pour over rice,potatoes, biscuits,bread or even toast!! It's fabulous over all these different items. That way you never get board with it. I usually cook up some cornbread to go with it. Hope you love it as much as my friends and family do.

Truly fit for a King or Queen when served over a puff pastry shell. I devised this recipe years ago when entertaining the girls from the office. Any leftover mildly seasoned chicken can be used for this recipe. I would suggest baking with the skin on for a fuller flavor or use rotisserie chicken. Cook time does not include time for baking puff pastry. Serve with a side fresh fruit, berries or melon slices. Enjoy!

2 -3 scallions, trimmed, sliced with tops
4 ounces mushrooms, cleaned and sliced
1/4 sweet red pepper, small dice, added for color
1/4 cup petite frozen green pea
3 -4 tablespoons butter, divided (2 t for saute, 3T for sauce)
3 tablespoons flour
3 cups milk, any
1 teaspoon chicken bouillon granule
1 -2 whole chicken breast, skin on
salt, to taste
pepper, to taste
4 -6 puff pastry shells

Steps:

  • Preheat oven to the temperature recommended for puff pastry shells.
  • Bake puff pastry shells according to package directions. Bake and cool. This can be done ahead of time. Remove center of puff pastry, save for topping.
  • Reduce oven temperature to 325-350° for baking chicken.
  • Bake chicken breast using recipe Or use recipe Recipe #234465. Cool and remove skin. Cube chicken, set aside.
  • Over a low to medium heat, saute the red bell pepper, sliced scallions and sliced mushrooms in butter for approximately 3-5 minutes. Do not over cook. Remove from heat and set aside.
  • In the mean time, make a white sauce.
  • Melt butter, add chicken bullion seasoning, add flour and whisk to combine. It will thicken at this point. Slowly add the milk, 1/2 C at a time, continuing to whisk until the sauce thickens. You may not use all the milk.
  • Add frozen peas to the sauce. Add the peppers, onions, mushrooms and chicken. Warm through.
  • Spoon sauce mixture over each puff pastry shell, top with the center of the shell you removed.
  • Enjoy!

This is a recipe my mom made for the restaurants she worked for. She was a cook from the time she was 16 ( only cook for a small private hospital) until she retired at 90. I have no idea how many people have enjoyed the meals she made in all those years. But I know she was happy to touch that many lives. Enjoy this recipe.

4 Tbsp butter
2 to 4 c sauteed sliced mushrooms
2 to 4 c each of sauteed chopped green and red sweet peppers
SEE NOTE IN DIRECTIONS FOR OPTIONAL ADDITIONAL VEGETABLES
1 1/2 c butter
1 1/2 c flour
6 c chicken broth
4 c cream
8 to 10 c chopped cooked chicken
1 c sherry wine
salt and pepper to taste
nutmeg and cayenne to taste

Steps:

  • 1. In a large stockpot over medium high heat, melt the 4 Tbsp butter and saute the mushrooms and peppers ( 10 to 20 minutes). When cooked and tender remove veggies and any juices to a bowl and set aside.
  • 2. Melt the 1 1/2c of butter in the stockpot and add flour. Whisk together and cook over medium heat for 5 minutes or so to cook out the raw flour taste. Do not brown the roux. Whisk in chicken broth and sherry until smooth. Simmer until thickened. Remove pot from heat to make additions.
  • 3. Add cream and season the sauce to taste with salt and pepper, fresh grated nutmeg and a bit of cayenne. Add chopped cooked chicken and sauteed veggies to cream sauce and mix well. Return to heat to serving temperature (Do not boil) and serve hot over biscuits, toasted English muffins, toast points, or in puff pastry shells.
  • 4. Note: You may add other additional sauteed vegetables if desired. Suggestions include chopped celery, cubed carrots, chopped onion, and/or frozen peas. The traditional recipe includes only peppers and mushrooms.

3 tablespoons flour

1 (10 ounce) package frozen peas and pearl onions, thawed and well drained

Steps:

  • Cut chicken into bite size pieces.
  • Place in slow cooker.
  • Using a medium bowl, stir soup, flour and pepper until blended.
  • Pour over chicken but DO NOT STIR.
  • Cover and cook on Medium for 2 and 1/2 hours or on LOW for 5 to 5 and 1/2 hours or until chicken is very tender.
  • Stir in peas and onions, pimiento, paprika celery salt, if desired and cayenne pepper.

2 1/2 c coarse chopped cooked turkey or chicken, deli chicken is fine
1 can(s) mushroom stems and pieces drained
1 Tbsp chopped pimientos
1 Tbsp parsley flakes
1/8 tsp dried marjoram leaves
1 tsp onion powder
1/8 tsp pepper
salt to taste
1 c cream
1 c chicken broth
1/2 c grated parmesan cheese
4 tsp cooking sherry

Steps:

  • 1. Place prepared biscuits in the oven while you make the chicken mixture, or you can make your own from scratch.
  • 2. Make a roux. Melt equal parts of 2 tablespoons of butter in a large skillet over medium high heat, add 2 tablespoons of flour, a cup of broth stir until thickened. Add chicken, heat through and turn heat to low and add the pimientos, mushrooms, parsley, marjoram and onion powder. Add the cream, can of soup and parmesan cheese. Stir gently, heat but don't boil. Add salt and pepper. Add the sherry, stir gently to combine. Split the biscuits and spoon mixture over them and serve. Enjoy!
  • 3. Cooks tip: You can add other ingredients to this, sometimes I add frozen peas I have steamed in a steamer bag. This can also be made in the microwave.

8 large refrigerated biscuits (Pillsbury "Grands" Flaky Layers work well)
cayenne powder or sweet paprika
1 cup dry white wine
2 cups low sodium chicken broth
1 bay leaf
4 boneless skinless chicken breasts
1 tablespoon vegetable oil or 1 tablespoon olive oil
2 tablespoons butter
1/2 lb small white mushroom, sliced
1/2 small white onion, chopped
2 tablespoons all-purpose flour
3 tablespoons chopped pimiento
1 cup frozen green pea
black pepper, to taste
2 tablespoons chopped parsley

Steps:

  • Preheat oven according to package directions for biscuits.
  • Arrange biscuits on nonstick baking sheet and sprinkle with a little ground cayenne pepper or sweet paprika.
  • Bake until golden, remove biscuits from oven and then cool. (10-18 minutes depending on the type biscuit you use).
  • Meanwhile, in a medium skillet, bring wine & chicken broth to a boil. Add the bay leaf.
  • Gently drop in chicken breasts & lower heat to simmer.
  • Poach chicken for 10 to 12 minutes.
  • Preheat another skillet over medium heat.
  • Add oil and butter.
  • When butter melts into oil, add mushrooms and onion and cook 5 minutes until tender.
  • Stir in flour and cook another minute or so.
  • Remove chicken from broth and set aside.
  • Whisk 2 to 2 1/2 cups poaching liquid into the mushroom, onion & flour mixture. Discard the bay leaf.
  • Add pimentos and peas to the sauce.
  • Dice chicken into bite-size pieces and return it to the sauce.
  • Add ground black pepper to taste.
  • To serve: Split the biscuits, place bottoms on plates and cover with ladles of Chicken a la King.
  • Cap with biscuit tops and garnish with chopped parsley.

My family has a saying, there is the right way the wrong way and there is always Jamie's way. So I just like to make this very simple but good recipe my way. You can make it simple by purchasing a roasted chicken and carton of chicken broth or make from scratch like I always do. Good with left over Turkey also.

4 lb chicken
3 c chicken base
1 c sliced mushrooms
1 c diced celery
1 jar(s) 4oz. diced pimentos
1 tsp italian seasoning
1/4 c white wine
1/2 c heavy cream
1 Tbsp salt and pepper
1 tsp fresh pressed garlic
2 Tbsp olive oil, extra virgin
4 Tbsp flour

Steps:

  • 1. Prepare the chicken by boiling until done. Skim off excess fat or cool in refrigeator and remove the fat off top. Remove the skin and pull chicken from the bone in strips. Set aside
  • 2. In large skillet pour in the olive oil over medium heat. Add mushrooms, Italian seasoning, a little salt and pepper, and garlic. Saute about 5 minutes then add the celery let saute about 5 minutes more or until a little tender not soagy.
  • 3. Sprinkle the 4Tbls of flour over this and stir til mixed in good. Add the wine and stir til reduced.
  • 4. Add in the cream and stir til thickened. Pour in the diced pimentos and hot chicken broth. Stir vigorously over medium high heat until comes to a rolling boil. Add in the chicken and keep stirring not allowing to stick or burn. Keep cooking with a rolling boil for about 5 minutes continue to stir do not leave the mixture cooking with out stirring or it will stick and burn. When mixture has started to thicken it is ready to serve.
  • 5. Serve over mashed potatoe, rice, or slice of toast.

DRASTIC CHICKEN (VARIATION OF CHICKEN ALA KING)

A quick, easy very tasty meal. This is one of my own concoctions. Everyone that has tasted it has loved it.

500 g boneless skinless chicken breasts, diced (or left over roast chicken)
1 onion, chopped
2 garlic cloves, crushed
2 teaspoons paprika
2 teaspoons thyme
1 -2 tablespoon olive oil (for frying)
500 ml milk
250 g cheddar cheese, grated
1 tablespoon flour
1 tablespoon butter

Steps:

  • Brown the Onions, using the olive oil.
  • Add the diced chicken pieces, season with the Paprika, Thyme and Garlic while frying.
  • Prepare whatever sort of Pasta you like (I use Penne for this one).
  • The Microwave method for cheese sauce can be very tricky. I've messed it up enough times over the years. You'll know it's not right by the way the texture. As yet I haven't found a sure fire way of stopping this from happening, it just requires being watched, much like stove top cheese sauce I guess.
  • Using a deep dish approx 15 cm in diameter, place the butter in the dish and Microwave on High for 30-45 seconds.
  • Should be melted when removed.
  • Add Flour and combine.
  • Add the milk (DON'T MIX YET, it goes lumpy if you mix it at this point).
  • These times are only a guide. Be sure not to let the sauce boil for more than a few seconds. The texture may become a bit grainy if it boils for to long.
  • Microwave on High for 2 minutes.
  • Add the cheese and mix.
  • Microwave on High for another 2 Minutes.
  • Remove occasionally to mix and check thickness.
  • Alternatively you can prepare your cheese sauce using the stove top method.
  • For this recipe you want the sauce to be a bit runny as it will be added to the Chicken and left to simmer for 5-10 minute.
  • A tasty variation is adding Chopped Green Peppers.
  • Add them while seasoning you don't want them to get soft.
  • I'm sure that Mushrooms could be added to this recipe.
  • Fry them up and add them just before combining the sauce with the Chicken and onions.

1 diced green bell pepper
1 stick of butter
64 oz chicken stock
2 small jars of pimentos
4 c of chopped/shredded chicken
2 can(s) pets evaporated milk
1 c basamati rice/white rice
1/2 c all purpose flour
YOU CAN EVEN FREEZE IT FOR ANOTHER DINNER

Steps:

  • 1. After you cook and cube the chicken you can go head and dice the bell pepper and make sure you have the broth and evaporated milk opened.
  • 2. Now in the bottom of a stock pot melt the stick of butter and add the green bell pepper and cook until aldente. Now add the flour and stir until it is like a paste. Add chicken broth and evaporated milk while still stirring. You can go head and add chicken and pimentos. Cook until it boils and then simmer for about 15-20 mins. Now you can go ahead and start the rice on the side. The sauce will thicken as it cools. You can pull some out and freeze it for another time or you can serve it. You can add the rice or you can pour it over the rice which ever you prefer.

3-4 Tbsp canola oil
1 small onion, chopped
salt and pepper
8 oz cremini mushrooms, chopped
2-3 Tbsp all-purpose flour
3/4 c chicken broth, low salt
1/4 c silk pure coconut milk- original flavor
1/2 tsp garlic powder
2 boneless, skinless chicken breasts, chopped
3/4 c frozen peas
white rice, cooking according to the package

  • 1. Heat the oil in a large saucepan. Add the onion and sprinkle with salt and pepper. Sauté until the onion starts to become translucent, about 3-5 minutes.

Of course if you are really ambitious, and have the time, you can make Biscuits from scratch prior to making this dish. 2. Sprinkle the Montreal Chicken Seasoning over the Chicken pieces. Drizzle the Olive Oil in a large skillet over medium heat. Add the Chicken and cook until done, then remove the Chicken pieces and set aside. 3. Reduce the heat under your skillet to low. Add the Butter to the skillet and once the butter has melted, add the Onions and Green Pepper and increase the heat to medium. Cook until tender. Next add in the Mushrooms. The Mushrooms will cook quickly so stir often. 4. Next stir in the Flour to the Veggie mixture. 5. Slowly stir in the Chicken Broth and the Heavy Cream, stirring constantly. Sprinkle in the Garlic Powder and give several turns of the pepper mill over all. Continue to cook over medium heat until the Sauce is thick. 6. Add the Chicken back into the Sauce, continue to stir and heat to boiling. Cover reduce the heat to low and let the Sauce simmer for about 4-5 minutes. 7. Add in the Pimentos and Peas then give the pepper mill another work out and add a bit more Black Pepper. Stir well for 1-2 minutes to ensure the Pimentos and Peas are incorporated in the Sauce and then you are ready to serve! 8. Slice your Biscuits in half then spoon the Chicken Ala King over the top. 1 1/2 lbs boneless skinless chicken breasts
1 (10 3/4 ounce) can condensed cream of chicken soup or 1 (10 3/4 ounce) can cream of mushroom soup
3 tablespoons flour
1/4 teaspoon pepper
1 (10 ounce) package frozen peas and pearl onions, thawed and well drained
2 tablespoons pimiento, chopped and drained
1/2 teaspoon paprika
1/4 cup celery, minced
1 dash cayenne pepper

Steps:

  • Cut chicken into bite size pieces.
  • Place in slow cooker.
  • Using a medium bowl, stir soup, flour and pepper until blended.
  • Pour over chicken but DO NOT STIR.
  • Cover and cook on Medium for 2 and 1/2 hours or on LOW for 5 to 5 and 1/2 hours or until chicken is very tender.
  • Stir in peas and onions, pimiento, paprika, minced celery, and cayenne pepper.
  • Cover and cook for 20 to 30 minutes or until vegetables are tender.
  • Serve over toast with fresh fruit salad on the side.
  • You can also serve over rice.

1/2 teaspoon white pepper
2 teaspoons salt
2 teaspoons onion powder
3/4 cup unsalted butter
3/4 cup flour
8 cups Swanson chicken broth

6 hard-boiled eggs, bite size pieces

  • Place into a mixing bowl and combine chicken, pepper, salt and onion powder and set aside for 15 minutes.
  • Melt the butter and flour and make a white roux, add salt and onion powder and blend well.
  • Add in the chicken broth and bring to a simmer and when the mixture start to thicken adds half and half and whisk mixture at a simmer to thicken.
  • Stirring the mixture and add in the chicken pieces and simmer for 10 minutes.

1 tablespoon butter or 1 tablespoon butter substitute
3 cups roasted cooked chicken, shredded
1/2 cup celery, chopped
1/4 cup red pepper, chopped
1/4 cup green pepper, chopped
1/4 cup onion, chopped
1/2 cup carrot, grated
1 (8 ounce) can low-fat cream of chicken soup
1 (8 ounce) can low-fat cream of mushroom soup
1/2 cup low-fat sour cream
5 ounces frozen peas, thawed (1/2 10-oz pkg)
2 tablespoons pimientos, diced
1/4 teaspoon paprika
1/4 teaspoon pepper

Steps:

  • Melt butter in a large saucepan.
  • Add all vegetables.
  • Saute' until vegetables are barely tender.
  • Stir in remaining ingredients.
  • Cook and stir over medium heat for about 5 minutes.
  • Reduce heat and simmer about 20 minutes.
  • Serve in toast cups, or puff pastry shells, or over cornbread.
  • To Make Toast Cups:.
  • Brush a muffin tin with melted butter. Gently press and fit slices of very fresh bread into cups. Be careful not to tear the bread. Brush the bread with melted butter. Bake at 375 degrees for about 15 minutes, or until light brown.
