CANNED CORN BREAD MUFFINS



Canned Corn Bread Muffins image

1 1/2 cups Jack and Cheddar cheese blend
2 boxes corn muffin mix
2 large eggs
2/3 cup buttermilk
2 cups creamed corn

Steps:

  • 10 empty (6-ounce) tomato paste cans, cleaned
  • Butter-flavored nonstick cooking spray
  • Preheat oven to 400 degrees F.
  • In a large bowl, mix all ingredients except for 1/2 cup shredded cheese. Set aside. Spray nonstick butter spray inside cans. Fill each can about 2/3 full with corn muffin batter. Divide remaining 1/2 cup shredded cheese evenly over top. Place cans on baking sheet and bake for 20 minutes or until golden brown.

2 ounces (1/2 stick) unsalted butter
3 tablespoons finely diced onion
1 cloves garlic, finely chopped
1/2 cup milk
2 large eggs
1/4 cup finely diced red bell pepper
1 jalapeno peppers, finely diced
1/4 cup fresh or frozen corn, thawed
1 tablespoon finely chopped cilantro leaves
3/4 cup blue cornmeal (can substitute yellow)
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon granulated sugar

Steps:

  • Set a rack in the middle of the oven and preheat to 400 degrees F. Grease a 6 slot muffin pan with non-stick vegetable spray.
  • In a small saucepan, melt the butter. Add the onions and garlic and cook until soft.
  • In a large mixing bowl, whisk together the milk, eggs, bell pepper, jalapeno, corn and cilantro. Whisk in the butter mixture.
  • In a separate bowl, stir together the cornmeal, flour, baking powder, soda, salt and sugar. Mix into the liquid mixture.
  • Divide the batter evenly among the muffins slots and bake for 16 minutes or until set, turning the pan once for even baking.

1 1/2 cups dried cherries
1 tablespoon all-purpose flour
3 cups all-purpose flour
1 1/2 cups whole milk
8 ounces unsalted butter, melted and cooled
3 large eggs
1 cup sugar
1 cup yellow cornmeal
2 tablespoons baking powder
1 1/2 teaspoons salt

Steps:

  • Preheat oven to 350.
  • Spray a 12 cup muffin tin.
  • Place cherries and 1 tbl flour in bowl, toss and set aside.
  • Combine milk, melted butter and eggs in a bowl.
  • Set aside.
  • In bowl of mixer combine flour, sugar, cornmeal, baking powder and salt.
  • Mix with paddle to blend.
  • Add milk mixture and mix on low until just blended.
  • Add cherries and mix to combine.
  • Spoon into muffin tin.
  • Bake until tests done.
  • Remove muffins from pan to cool.

2 cups small curd fat-free cottage cheese
2 tablespoons low-fat sour cream
1 tablespoon packed brown sugar
1/2 cup chopped pecans, toasted
1/2 cup dried tart cherry, halved
1 teaspoon lemon zest

Steps:

  • Place cottage cheese in a blender or food processor. Cover and blend or pulse until smooth.
  • Transfer cottage cheese to a medium bowl. Stir in sour cream, brown sugar, pecans, cherries and lemon zest.
  • Serve immediately or cover and refrigerate for up to 8 hours. (Spread can be kept chilled longer but cherries will begin to stain).
  • Serve as a spread for muffins, bagels, English muffins or toast.
  • * To toast the pecans - preheat oven to 350ºF. Spread nuts in a single layer on a baking sheet. Bake for 5-7 minutes or until lightly toasted.

Canola oil cooking spray
1 (14.5-ounce) box honey cornbread mix (recommended: Krusteaz)
1 1/4 cups buttermilk
1 (4-ounce) can diced green chiles
1 (11-ounce) can Mexi-corn
2 teaspoons fajita seasoning
1/2 cup shredded Cheddar
2 sticks unsalted butter, softened
1 tablespoon honey
1 tablespoon Chipotle Hot Sauce (recommended: Tabasco Brand)
2 tablespoons Southwest chipotle seasoning (recommended: Mrs. Dash)

Steps:

  • Preheat oven to 400 degrees F. Spray 2 (24-count) mini-muffin pans with canola oil cooking spray; set aside.
  • In a medium mixing bowl stir together all ingredients until blended. Using a tablespoon, spoon batter into mini-muffin tins, filling to the rim. Bake in preheated oven 15 minutes or until golden brown.
  • Combine all ingredients in small bowl; beat until light and fluffy. Serve with corn muffins.

1/2 cup all-purpose flour
1/4 cup brown sugar
1/4 cup granulated sugar
Pinch ground cinnamon
1/4 cup butter, cut into small pieces
1/4 cup slivered almonds
1 box vanilla cake mix
3 eggs
1/3 cup vegetable oil
1/2 teaspoon almond extract
1/2 cup cherry preserves

Steps:

  • In a medium bowl combine all topping ingredients except almonds. Using a pastry blender or 2 forks, combine ingredients to a course consistency. Once combined, fold in the almonds.
  • Preheat oven to 350 degrees F. Line 2 (12-cup) muffin tins with paper liners for 18 muffins.
  • In a large bowl using an electric mixer, combine cake mix, eggs, oil, extract and preserves. Batter will be somewhat lumpy.
  • Use an ice cream scoop to evenly fill each muffin pan with the batter. Sprinkle tops of muffins with 2 teaspoons of almond topping. Bake 17 to 21 minutes.
