CHERRY CHOCOLATE KISS COOKIES - VALENTINE KISSES

These cookies are similar to Peanut Butter Blossoms, but are cherry cookies instead of peanut butter. I like to make them for Valentine's Day-- and call them Valentine Kisses. There are many variations-- you can use make the dough and use white or semi-sweet chocolate chips or use mini-kisses for smaller bite size cookies. The dough can be rolled in plain sugar, or red decorator sugar for an extra festive look.

1 cup butter, softened
1 cup powdered sugar, sifted
1/8 teaspoon salt
2 teaspoons cherry juice
1/4 teaspoon almond extract
2 1/4 cups flour
1/2-3/4 cup chopped or crushed maraschino cherry
1 cup granulated or decorator sugar (as needed)
12 ounces Hershey chocolate kisses (1 per cookie) or 12 ounces Hershey's Hugs chocolates (1 per cookie)

Steps:

  • Beat butter, add sugar and salt. Beat in cherry liquid and almond extract. Beat in flour. Fold in cherries.
  • Refrigerate dough for at least 30 minutes (you don't have to, but dough is easier to work with when cold).
  • Roll dough into balls, coat in sugar and place on cookie sheet. These cookies will flatten on their own, but I typically put a thumb print in the center to flatten some.
  • Bake at 325 degrees for 14 minutes. Let cool on pan for 1-2 minutes.
  • Add Hershey Kiss/Hug to center of the cookies. (Hugs melt especially fast, you may want to let the cookies cool a little longer before adding Hugs, but cookies should still be warm so chocolate can melt into the cookie).
  • Transfer to wire rack to cool.

4 large egg whites
1-1/4 cups sugar
1/3 cup chopped walnuts
1/3 cup chopped pitted dates
1/3 cup chopped candied cherries

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Beat on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and the sugar is dissolved. Fold in the walnuts, dates and cherries., Drop by teaspoonfuls 2 in. apart onto lightly greased baking sheets. Bake at 300° for 20-30 minutes or until firm to the touch. Cool for 1 minute before removing to a wire rack. Store in an airtight container.

OH MY ! These taste like chocolate covered cherries.Eat them when the kisses are still soft and the cookie is warm and when you bite you will think your eating one. I had a hard time putting them down!

1 c butter
1 c powdered sugar
2 tsp maraschino cherries juice
1/2 c maraschino cherries, chopped
1/2 tsp almond extract
few drops red food coloring
2 1/4 c all-purpose flour
1/2 tsp salt
48 chocolate kisses,unwrapped

Steps:

  • 1. Heat oven to 350. In large bowl combine butter,powdered sugar,cherry juice,almond extract and food coloring,blend well.
  • 2. Stir in flour and salt.Add cherries.mix well.Form dough into 1 inch balls and place on ungreased cookie sheet.Bake 8 to 10 minutes.
  • 3. Immediately top each cookie with kisses.Remove from cookie sheet.
