Number Of Ingredients 12

1 cup dried cherries
1/4 cup cherry or orange juice
1 3/4 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup (1 stick) salted butter, softened
3/4 cup granulated sugar
2 eggs
1/2 cup sour cream
1/2 teaspoon almond extract
3/4 cup Fisher® Chef's Naturals Slivered Almonds
1/2 cup sweetened flaked coconut

Steps:

  • Preheat oven to 350°F. Spray four mini loaf pans with no-stick cooking spray; set aside.
  • In small bowl, place cherries and juice together.
  • In medium bowl combine flour, baking powder and baking soda; mix well
  • In a large bowl, use electric mixer to cream butter and sugar. Add eggs, sour cream and almond extract. Gradually add flour mixture to butter; mix well.
  • Thoroughly drain juice from cherries. Fold in drained cherries and almonds.
  • Spread batter equally in prepared pans; sprinkle with coconut.
  • Bake 28 to 32 minutes or until toothpick inserted in center is clean when removed. Remove to cooling rack; cool completely.

MINI LOAF CHERRY CAKES

Cherry Cake made in mini loaf pans and drizzled with a sweet vanilla glaze.

Number Of Ingredients 12

1 cup all-purpose flour, + 2 TBSP
¾ tsp baking powder
2 eggs
½ cup butter, softened
4 oz cream cheese, softened
¾ cup granulated sugar
1 tsp vanilla extract
½ tsp lemon extract
1 cup cherries, pitted and chopped
1 cup confectioner's sugar
½ tsp vanilla extract
2-3 tbsp milk

Steps:

  • Preheat the oven to 350°
  • In a large bowl, mix together the 1 cup + 2 TBSP of all-purpose flour and the baking powder.
  • In a separate bowl, beat together the softened butter and the softened cream cheese.
  • Add in the eggs one at a time and beat.
  • Mix in the granulated sugar, vanilla, and lemon extract.
  • Slowly beat in the flour mixture into the wet mixture and then slowly stir in the chopped cherries.
  • Pour the batter evenly into 4 greased and floured mini loaf pans.
  • Place in the oven and bake for 25-30 minutes. Check the center of the loaves with a toothpick to check if they are done.
  • Allow the mini loaves to cool completely before glazing.
  • In a small bowl, mix together the confectioner's sugar, vanilla, and milk until it is creamy.
  • Drizzle over the cooled cakes and serve.
  • Prepare the mini loaves as directed above.
  • Set the Vortex Plus to BAKE, 300° and set the timer to 20 minutes.
  • Check the center of the loaves with a toothpick, if needed bake for an additional 3-5 minutes.
  • Allow the loaves to cool completely before glazing.

This wonderful bread is great with coffee as a dessert or, as my husband likes it, with a glass of milk for a late-night snack. It's also easy to make.

1 cup sugar
1/2 cup butter, softened
2 large eggs
1 teaspoon almond extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 cup chopped almonds
1 jar (6 ounces) maraschino cherries, drained and chopped

Steps:

  • In a large bowl, cream sugar and butter. Add eggs, one at a time, beating well after each addition. Blend in extract. Combine dry ingredients; blend into creamed mixture alternately with the buttermilk. Stir in almonds and cherries. Pour into a greased and floured 9x5-in. loaf pan. Bake at 350° for about 70 minutes or until loaf tests done. Remove from pan and cool on a wire rack.

I've been making these breads as Christmas gifts for my neighbors for more than 20 years. Each moist slice is dotted with cherries, chocolate and nuts.

1 jar (10 ounces) maraschino cherries
2 cups all-purpose flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 eggs
1 cup chopped walnuts
1/2 cup miniature semisweet chocolate chips
1/2 cup chopped dates

Steps:

  • Drain cherries, reserving 1/4 cup juice; set aside. In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk eggs and reserved juice; stir into dry ingredients just until moistened. Fold in the walnuts, chocolate chips, dates and cherries., Spoon into three greased 5-3/4x3x2-in. loaf pans. Bake at 325° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to a wire rack to cool completely. Wrap and store for 24 hours before serving.

This is a maraschino cherry bread recipe I got from my mother-in-law. It's simple, delicious, and makes great gifts. Freezes well.

1 cup white sugar
¼ cup solid vegetable shortening (such as Crisco®)
2 eggs
1 teaspoon salt
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
1 (8 ounce) jar maraschino cherries, drained and juice reserved, divided
½ cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.
  • Combine sugar, shortening, eggs, and salt in a large bowl; beat with an electric mixer until well combined.
  • Mix flour and baking powder together in a medium bowl. Add flour mixture to shortening mixture in 2 or 3 batches, alternating with maraschino cherry juice, mixing batter well after each addition.
  • Cut each cherry into 4 pieces; stir into batter with pecans. Spoon mixture into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pan for 10 minutes. Run a table knife around the edges to loosen and invert loaf onto a wire rack. Let cool completely.

CHERRY ALMOND PRESERVES



Cherry Almond Preserves image

This recipe came from my mother-in-law. It's very old-fashioned-in fact, the friend who gave it to her used to cook it up on an old wood stove. With all the cherry orchards here in Bitterroot Valley, I make two batches of these preserves each summer. (I get the cherries from a nearby cannery by the gallons!) My family likes them on fresh bread, muffins, pancakes and even ice cream-the consistency's similar to a topping. I have to be careful, though, and ration the jars out or they'd be the first thing to disappear from the root cellar! Both my husband and I serve as 4-H leaders. We have three children-girls 16 and 14 and a son who's 12.

8 cups pitted sour cherries (about 4 pounds)
1-1/2 cups water
10 cups sugar
2 pouches (3 ounces each) liquid fruit pectin
1 teaspoon almond extract

Steps:

  • In a stockpot, bring cherries and water to a boil; boil 15 minutes. , Stir in sugar. Bring to a full rolling boil over high heat, stirring constantly. Boil 4 minutes. Stir in pectin. Continue to boil 1 minute, stirring constantly. , Remove from heat; skim off foam. Stir in extract. Ladle hot mixture into 11 hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.
