Old Fashioned Potato Salad with Egg image

As far as Potato Salads go, this one is about as traditional and standard as they get. Some folks love a Dill Pickle flavor in their Potato Salad. I much prefer the Sweet Pickle Relish, myself. The addition of Cider Vinegar adds the tartness to counter balance the flavors. The inclusion of Chopped Eggs is what makes this Old Fashioned for me. I believe making a Potato Salad is one of the smartest dishes you can make ahead, when you are entertaining. It goes with so many things, and you're not in the kitchen, at the last minute, mashing Potatoes. I'm all for making things ahead.

Number Of Ingredients 13

6 medium russet potatoes (cooked in jackets/cooled/peeled/roughly diced)
3 large hard boiled eggs (peeled/chopped)
2 large ribs of celery (minced)
1/2 medium red bell pepper (chopped fine)
1/4 medium onion (grated)
2 tablespoon(s) dijon mustard
2 tablespoon(s) sweet pickle relish
2/3 cup(s) mayonnaise
4 tablespoon(s) cider vinegar
2 tablespoon(s) sugar
1 teaspoon(s) salt
1 teaspoon(s) celery seed
1/2 teaspoon(s) black pepper

Steps:

  • Toss all ingredients in a large bowl. Chill well.
