Family tradition demands corn casserole at Thanksgiving at my house. This is the one my mom has made since I was a kid, and we never have any left.

1/4 lb butter (1 stick)
1 large onion, chopped
1/4 cup green pepper, chopped
2 eggs, slightly beaten
1 (15 ounce) can creamed corn
1 (15 ounce) can whole kernel corn, including liquid
1 box Jiffy corn muffin mix
1/2 teaspoon salt
1/2 pint sour cream
4 ounces cheddar cheese, grated

Steps:

  • Preheat oven to 400 degrees.
  • Saute onion and green pepper in butter.
  • Add eggs, creamed corn can, corn and liquid, Jiffy mix, salt, sour cream and cheddar cheese.
  • Pour into a 9x13 inch baking pan and bake for 45 minutes or until top is golden brown.

1 ½ cups croutons or crackers, finely crushed
4 strips bacon, cooked and crumbled
½ cup diced red bell pepper

Steps:

  • Preheat oven to 350 degrees F. Toss together Cheddar cheese, flour and pepper in a medium bowl; set aside.
  • Stir together milk, cream cheese, 1/3 cup green onions and hot sauce in a 9x13-inch baking dish. Add corn and shredded cheese mixture; stir well to blend evenly. Cover and bake 30 minutes.
  • Uncover and sprinkle with remaining 1/3 cup green onions and optional toppings, as desired. Bake 5 minutes longer.

2 tablespoons unsalted butter
1/4 cup finely chopped sweet onion, such as Vidalia
1 chipotle chile in adobo, finely chopped
2 tablespoons unbleached all-purpose flour
2 1/4 cups whole milk
2 teaspoons sugar
1 (16 ounce) bag frozen white corn, defrosted
1/2-3/4 cup finely shredded cheddar cheese

Steps:

  • Coat the inside of a 9-inch square baking pan with cooking spray.
  • Melt butter in a medium saucepan over medium heat; add in onion and chipotle; saute about 2 minutes, until the onion begins to soften.
  • Add in the flour; whisk until white bubbles form on the vegetables.
  • Cook the flour for about 2 minutes, being careful not to burn the chipotle.
  • Gradually add the milk and sugar and bring to a boil, whisking constantly.
  • Add in corn; stir to blend.
  • Pour the mixture into the prepared dish; sprinkle cheese over the top.

2 tablespoons butter, melted
1 onion, chopped
1 small green bell pepper, chopped
1 small red bell pepper, chopped
3 eggs
