BACON-CHEDDAR CHEESE SCONES



Bacon-Cheddar Cheese Scones image

4 slices bacon, chopped
3 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon sugar
1 1/2 teaspoons salt
1 stick unsalted butter, cut into pieces
6 ounces sharp cheddar cheese, grated (about 1 1/2 cups)
1/2 cup thinly sliced green onions
1/2 teaspoon freshly ground black pepper
1 cup heavy cream, plus 2 tablespoons

Steps:

  • Preheat the oven to 400 degrees F.
  • In a medium skillet, cook the bacon, stirring, until crisp, about 5 minutes. Remove with a slotted spoon and drain well on paper towels. Into a large bowl, sift together the flour, baking powder, sugar, and salt. Cut in the butter, cheese, green onions, and pepper with a pastry blender or fork, and work just until it starts to form lumps and come together. Add the bacon. Add 1 cup of the cream and work just until it becomes a sticky dough, being careful not to overwork.
  • Turn out onto a lightly floured surface and pat until it comes together. Form into 2 large circles, about 7 inches in diameter and 3/4 inch thick and cut each into 8 wedges with a sharp knife. Transfer to baking sheet with a spatula, leaving 1/2-inch space between each wedge. Paint the tops of the wedges lightly with the remaining 2 tablespoons of cream and bake until golden brown, 22 to 23 minutes. Remove from the oven and let cool slightly on the baking sheet. Serve warm.

4 cups all-purpose flour
¼ cup white sugar
2 tablespoons baking powder
2 teaspoons salt
½ teaspoon baking soda
2 cups shredded Cheddar cheese
1 (8 ounce) container sour cream
½ cup canola oil
⅓ cup milk
2 large eggs

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Whisk flour, sugar, baking powder, salt, and baking soda together in a bowl. Fold in Cheddar cheese.
  • Whisk sour cream, oil, milk, and eggs together in a small bowl. Add wet ingredients to the dry ingredients; stir just until moistened.
  • Knead dough on a lightly floured surface 10 to 12 times. Pat out to a thickness of 3/4 inch. Cut into 3-inch squares or cut circles with a 3-inch cutter. Transfer to the prepared baking sheet.

2 tablespoons granulated sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 cup cold butter, cubed
1 cup old cheddar cheese, shredded
1 cup buttermilk
1 egg, lightly beaten

Steps:

  • In a large bowl, stir together the flour, sugar, baking powder, baking soda, cayenne pepper and salt.
  • Using a pastry blender or two knives, cut in the butter until the mixture resembles coarse crumbs.
  • Stir in the cheese.
  • Add the buttermilk all at once, stirring with a fork to make a soft, sticky dough.
  • With lightly floured hands, press the dough into a ball.
  • On a lightly floured surface, knead gently 10 times.
  • Pat out the dough into a 3/4-inch thick round.
  • Using a 2-1/2-inch floured cutter, cut out rounds.
  • Place on a ungreased baking sheet.
  • Gather up the scraps and repat dough once; cut out more rounds.
  • Brush the tops of the scones with egg.
  • Bake in a 425 degree F oven for 12 to 15 minutes or until golden.

Savory Cheddar Cheese Bacon and Onion Scones image

2 1/2 cups self rising flour
1 1/2 tablespoons sugar
1/4 teaspoon salt
2 tablespoons onion, chopped and sauteed
2 tablespoons bacon, chopped
3 eggs
3/4 cup buttermilk
1/4 cup cheddar, grated

Steps:

  • Preheat the grill on a medium flame.
  • Using a medium sized bowl, mix flour, sugar, salt, onions, and bacon together. Let the mixture rise for about 30 minutes.
  • Then add the eggs, buttermilk, and cheese. Continue mixing until a firm dough is formed. If the dough becomes a little watery, just add a little more flour.
  • Place the dough on the counter and with sprinkle with flour. Then flatten it out with your hands. Using a circular cookie cutter, cut out 2-inch rounds.
  • Line a small pan with parchment paper, and place the cut outs in the pan. Sprinkle desired amount of cheese on top and place the pan on a grill, lid closed, for 15 minutes.
  • To plate, slice in half and spread with butter, or preferred topping.

SCOTTISH CHEDDAR CHEESE AND SPRING ONION TEA-TIME SCONES



Scottish Cheddar Cheese and Spring Onion Tea-Time Scones image

Another one of my Scottish grandmother's recipes! I have several cheese scone recipes posted on Zaar, but this one is one of my favourites. Spring onions are also called green onions or scallions. My mum still makes these regularly and serves them filled with cream cheese (Boursin is great!) and cooked ham, a tea-time scone sandwich! Try to use a mature Scottish cheddar - my favourite comes from the Isle of Mull, but any mature farmhouse cheddar cheese will work. Another idea is to make mini versions of these scones for delightful appetisers, spread them with a filling of your choice - very welcome with a chilled wine or sherry!

225 g self-raising flour
good pinch mustard powder or cayenne pepper
100 g butter
200 g cheddar cheese, grated
3 spring onions, trimmed and finely chopped
2 small eggs or 1 large egg, beaten
2 -4 tablespoons buttermilk or 2 -4 tablespoons plain yogurt

Steps:

  • Preheat oven to Gas Mark 6, 400F or 200C Grease or butter a large baking/cookie tray.
  • Sift flour and mustard powder, or cayenne pepper, into a bowl. Rub in the butter until it resembles fine breadcrumbs.
  • Add just over three-quarters of the cheese and the chopped spring onion, and mix well. Stir in the eggs and yogurt; I have suggested between 2 and 4 tablespoons of yoghut, add it a tablespoon at a time to get the right consistency. The dough will be very soft. Knead very lightly on a WELL floured surface.
  • Pat out dough to about 2.5cm (1in) deep and cut out about 5 scones. Knead the trimmings and pat out, then cut out another 2-3 scones. Put the scones on the baking sheet and sprinkle with the rest of the cheese, and more cayenne, if you like.
  • Bake for 20 - 25 minutes until golden brown and risen. Remove from oven and allow to cool for 15 to 30 minutes.
  • Best served warm with butter and a sliver of cheese, or spread with cream cheese and ham.
  • Tip: Use a larger cutter to make bigger scones, then serve them with spinach and a poached egg on top. Bake them for slightly longer.
  • To freeze: cool and pack in polybag. Seal, label and freeze. Use within 2 months. Thaw at room temperature. Warm through in the oven for serving.

Steps:

  • Preheat oven to 425°F. Sprinkle large rimmed baking sheet with flour. Whisk first 3 ingredients in large bowl. Stir in chives and cheese. Whisk 3/4 cup milk, 1 egg, oil, and mustard in small bowl. Gradually add milk mixture to dry ingredients, tossing until moist clumps form and adding more milk by tablespoonfuls if dough is dry. Turn dough out onto lightly floured surface; knead just until dough comes together.
  • Pat out dough to 1-inch-thick round. Using 2 1/2-inch-diameter cutter, cut out scones. Gather dough scraps and repeat. Transfer to prepared sheet. Whisk remaining egg in small cup; brush over scones. Sprinkle with sesame seeds.
  • Bake scones until golden on top and tester inserted into center comes out clean, about 14 minutes. Cool scones on sheet 5 minutes. Transfer to basket. Serve warm.

12 ounces self raising flour
1 1/2 teaspoons baking powder
2 ounces margarine
1 1/2 teaspoons mustard powder
2 -3 teaspoons sambal oelek or 2 -3 teaspoons thick chili sauce
5 ounces cheddar cheese, Mature, Grated
1 cup milk, to mix
1 pinch salt

Steps:

  • Sift flour, salt and baking powder together. Rub in the margarine. Add the mustard and cheese.
  • Stir through well. Add the Sambal or chilli (not sweet) sauce to the milk and mix in well. Add enough of the milk to give a fairly soft dough.
  • Roll out to about 1 1/4 inches thick. Cut and brush slightly with milk and add a sprinkling of extra grated cheese on top--not too much.
  • Bake in a hot oven (210-220°C) for approximately 7 to 10 minutes.

2 tablespoons plus 1/2 cup yellow cornmeal
3 cups all purpose flour
4 teaspoons baking powder
1/3 teaspoon cream of tartar
3/4 teaspoon salt
3/4 cup plus 2 tablespoons (1" sticks) chilled unsalted butter, cut into 1/2-inch pieces
2/3 cup (packed) coarsely shredded sharp cheddar cheese (about 3 ounces)
1 cup plus 4 tablespoons (about) chilled whole milk
1/4 cup purchased pesto
1 large egg

Steps:

  • Preheat oven to 375°F. Sprinkle each of 2 baking sheets with 1 tablespoon cornmeal. Combine remaining 1/2 cup cornmeal and next 4 ingredients in processor; blend 5 seconds. Add butter and process, using on/off turns, until coarse meal forms. Add cheese and mix in, using 3 on/off turns. Transfer flour mixture to large bowl. Whisk 1 cup plus 2 tablespoons milk, pesto and egg in small bowl to blend. Gradually add milk mixture to flour mixture, stirring until dough just comes together and adding more milk by tablespoonfuls if dough is dry.
  • Turn dough out onto lightly floured work surface. Knead gently until smooth, about 5 turns. Pat out dough to 1-inch thickness. Using floured 2-inch-diameter cutter, cut out scones. Gather dough scraps; pat out to 1-inch thickness. Cut out additional scones. Repeat if more dough remains. Transfer scones to prepared sheets, spacing 2 inches apart.
  • Bake scones until pale golden and tester inserted into center comes out clean, about 20 minutes. Place scones in basket and serve warm.

5 c flour
3 Tbsp sugar
6 tsp baking powder
1/2 tsp salt
3/4 c butter
1 1/2 c heavy cream
4 eggs, beaten
1/3 c shredded cheddar cheese
3 Tbsp finely chopped green onions
2 Tbsp grated parmesan cheese

Steps:

  • 1. Butter 2 small cookie sheets. In a large bowl combine flour, sugar, baking powder, and salt. Mix well. With pastry blender or fork cut butter into flour mixture until result resembles coarse crumbs. Add cream, eggs, cheddar cheese, and onions. Mix until ingredients are combined. Cover dough with a towel and let dough rest for 40 minutes.
  • 2. Preheat oven to 375 degrees. Divide dough into 2 parts. Knead each part about 10 times. Roll each out to a circle about 3/4 inch thick. Place on buttered cookie sheets and sprinkle each with 1 tablespoon Parmesan cheese. Score each circle into 8 wedges. Bake for 35-40 minutes or until nicely browned. Remove from oven and cut wedges. Serve warm.
