CHUNKY TOMATO BASIL SOUP

Easy tomato soup with basil is a hearty, delicious side dish or light entrée, perfect for serving guests.

Number Of Ingredients 10

2 tablespoons olive oil
2 yellow onions, chopped
8 cloves garlic, minced
2.5 ounces fresh basil leaves, chopped (or 1.5 teaspoons dried basil)
3 28- ounce cans whole peeled tomatoes, including juices/puree
3 cups vegetable stock
2 tablespoons butter
1 teaspoon baking soda
sea salt, I added no salt
Grated Parmesan cheese for serving

Steps:

  • In a large pot, sauté the onion in the olive oil over medium heat until browned, about 10 to 12 minutes
  • Add the garlic and sauté another 3 minutes
  • While onion and garlic are sautéing, open your canned tomatoes and dice the whole tomatoes.
  • Add the diced tomatoes and juices/tomato puree to the pot with the sauteed onion and garlic.
  • Add the vegetable stock, chopped basil and butter. Stir until butter is melted and incorporated.
  • Add the baking soda. This will cause the soup to bubble up quite a bit, so make sure your pot is big enough to hold a little momentary soup fizz. The bubbles/fizz will die down after a few seconds of stirring.
  • Bring pot to a full boil then reduce the heat to a simmer and cook for 45 minutes.
  • Optional: You can blend part or all of this soup for a smoother consistency, though I like it chunky.
  • Serve with grated parmesan on top. Seriously. It's the bomb!

2 tablespoons butter or margarine
1 medium onion, chopped (1/2 cup)
3 small carrots, shredded (1 cup)
2 tablespoons Gold Medal™ all-purpose flour
1 cup half-and-half
1 jar (26 oz) Muir Glen™ chunky tomato pasta sauce
1 can (14.5 oz) Muir Glen™ diced tomatoes, undrained
1/4 cup chopped fresh basil leaves

Steps:

  • In 3-quart saucepan, heat butter over medium-high heat. Add onion and carrots; cook and stir 3 to 4 minutes or until softened. Add flour; cook and stir until moistened. Gradually add half-and-half, cooking and stirring about 2 minutes or until smooth.
  • Stir in remaining ingredients. Cover; cook over medium heat about 15 minutes, stirring frequently, just until mixture comes to a boil.
  • If desired, top with additional chopped fresh basil leaves.

1 Tbsp olive oil
1 medium onion, chopped
2 stalk(s) celery, chopped
1 medium carrot, chopped
2 clove garlic, minced
2 can(s) (14.5 oz.ea.) diced tomatoes, undrained
1 tsp dried basil, crumbled
3 c reduced sodium chicken broth
salt and black pepper to taste
8 fresh basil leaves, julienned

Steps:

  • 1. In a large saucepan over medium-high heat, add oil and saute onion, celery, and carrots until tender, about 5 minutes. Add garlic and cook another minute.
  • 2. Add the diced tomatoes, dried basil, and chicken broth and bring to a boil.
  • 3. Reduce heat to low and simmer for 15 minutes or until vegetables are soft.
  • 4. Ladle into bowls and garnish with fresh julienned basil. Serve hot.

2 (15 ounce) cans diced tomatoes
1 (10 ounce) can tomato sauce
1/4 cup fresh basil, finely chopped
2 cloves large garlic, minced
1 tablespoon salt
1 teaspoon pepper
1 onion, diced
1 cup heavy cream
4 cups chicken broth or 4 cups vegetable stock, to make it vegetarian
2 cups parmesan cheese, shredded
3 tablespoons butter
1/4 cup flour
1 cup heavy cream or 1 cup half-and-half

Steps:

  • Add tomatoes, tomato sauce, garlic, onion, basil, salt, pepper, heavy cream and vegetable or chicken broth to your crockpot. Cover and cook on low for 6-8 hours (although it can be done on high for 2 hours as well). Stir occasionally and scrape down the sides (if you can).
  • minutes before serving, transfer soup to a blender or food processor and puree until smooth. Return to crockpot.
  • Make your roux by melting your butter in a saucepan over medium heat. Once butter is melted, add the flour and whisk until it's incorporated. Slowly whisk in the heavy cream until the cream is smooth and thickened.
  • Add Parmesan cheese and roux to the crockpot and stir to combine.
  • Cook for another 20-30 minutes. Cheese should be completely melted into the soup. Stir thoroughly before serving. Garnish with additional Parmesan cheese and basil if desired.

1/2 cup celery, chopped
3/4 cup onion, chopped
1/2 cup carrot, chopped
2 garlic cloves, minced
2 tablespoons butter
2 tablespoons olive oil
28 ounces muir glen diced tomatoes
24 ounces v- 8 vegetable juice
6 ounces muir glen tomato paste
28 ounces muir glen crushed tomatoes
16 ounces muir glen tomatoes
16 ounces chicken broth
kosher salt
crushed pepper
1 bay leaf
1/2 teaspoon baking soda
2 -3 tablespoons fresh basil, snipped
1 pint half-and-half cream or 1 pint fat-free half-and-half
2 -3 ounces heavy cream (optional)

Steps:

  • Saute the veggies in butter and olive oil combo until softened. Add tomato ingredients and spices. Simmer for 3 to 6 hours. Adjust thickness with more chicken broth or tomatoes.
  • About 5-10 minutes before serving, add the cream and cream cheese.
