I found this recipe several years ago and use it regularly. You can substitute BBQ sauce for the ketchup. Finely diced green peppers also are a nice addition.

1 cup water
2 lbs lean ground beef
1/2 cup onion, finely diced
1 (6 1/4 ounce) package Stove Top stuffing mix
2 eggs
1/2 cup ketchup, divided

Steps:

  • Mix all ingredients except 1/4 cup ketchup.
  • Shape meat mixture into an oval loaf.
  • Place loaf in a 9x13 baking dish.
  • Top with remaining ketchup.
  • Bake at 375 degrees Fahrenheit for 1 hour.

This is a Kraft recipe, I think it came with the coupons one Sunday...as a lot of my recipes did before I found Zaar! These are nice and easy little meatloaves...I've even frozen one for later, or used it for meatloaf sandwiches the next day.

1 cup water
2 eggs, beaten
1/2 cup barbecue sauce, divided

  • Shape meat mixture into 2 oval loaves, side by side, in a 13x9 baking dish.
  • Top with remaining 1/4 c barbeque sauce.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

A slightly altered recipe from Kraft Canada's Easy Pleasing Meatloaf. I've made it a few times and really like it; it lives up to it's name quite well. This would probably work with other kinds of meats as well as meatless mixtures.

2 lbs extra lean ground beef
1 (120 g) chicken stove top stuffing mix
1 cup water
2 eggs, beaten
1/2 cup ketchup, divided (or a full cup if you like ketchup as much as I do)

Steps:

  • Heat oven to 375°F.
  • Place meat, stuffing mix, water, eggs and 1/4 cup ketchup in large bowl.
  • Mix just until blended.
  • Shape into loaf in 13x9-inch baking dish.
  • Top with remaining ketchup. Bake 1 hour or until meatloaf is done (160ºF).

A recipe I threw together, that turned out quite tasty! Will make wonderful sandwiches with leftovers. Enjoy!

1 1/2 lb ground chuck
1 medium chopped onion
1 c garlic and herb bread crumbs
1 c milk
1 Tbsp worcestershire sauce
2 Tbsp ketchup
1 tsp mustard
Salt and pepper to taste
GLAZE
1/2 c each - ketchup & water
1 Tbsp mustard
1/4 c plus two tablespoons brown sugar
1/8 tsp salt

Steps:

  • 1. Preheat oven to 350 degree F. In a medium bowl, with clean hands, mix together all indredients for meatloaf until all ingredients are evenly distributed.
  • 2. Spray a small roaster or baking dish and pat meat mixture out into loaf form.
  • 3. Make glaze by whisking together until sugar is dissolved.
  • 4. Brush top and sides of meatloaf and place in oven and bake for 1 hour and 15 minutes or until reaches 160 degree, glazing several times as it bakes. I cover my meatloaf for the first 30 minutes.
  • 5. Once finished, remove from oven and let set for 10 minutes before slicing. If you have glaze left, heat and serve along side. Enjoy!
