MOROCCAN CARROT & CHICKPEA SALAD
With fragrant spices, bright colors and savory flavors, this exotic twist on the carrot-raisin salad is a feast for the senses.

Steps:
- In a large bowl (large enough to mix the entire salad), whisk together all of the ingredients for the dressing.
- To the dressing, add all of the ingredients for the salad and toss well. Cover with plastic wrap and refrigerate for at least 30 minutes or up to a few hours. Taste and adjust seasoning if necessary (you might need more salt, lemon or honey, depending on the sweetness of the carrots). Transfer to a serving dish and garnish with more fresh chopped herbs. Serve cold.
- Note: To toast the almonds, preheat the oven to 350°F. Place the almonds on a foil-lined baking sheet for easy clean-up. Bake for about 5 minutes, until the almonds are golden.

CARROT RAISIN SALAD RECIPE

- First, add the nuts and seeds in a non-stick frypan and toast for 2-3 minutes until fragrant. Season with salt. Remove from heat and cool down in a bowl.
- Trim, peel carrots - I use about 10 small carrots for this recipe.
- Grate on the small grater attachment of your food processor or hand grater.
- Place the grated carrot in a large salad bowl. Set aside in the fridge.
- Make the salad dressing: add all the salad dressing ingredients to a bowl and whisk to combine. Set aside at room temperature.
- To assemble the salad, top the grated carrots with dried raisins, chopped fresh parsley, toasted seeds, and nuts and add the dressing all over. Stir to evenly blend flavors.
- Refrigerate an hour to increase flavor or serve immediately.

I came up with this as a side for a fish curry we ate last night. I have a hand held tool that shreds carrots in long strips. You could just grate the carrot if you don't have the same. I'm in a remote area so used dried mint, feel free to use fresh as I would if I could get it!
