1 1/2 sticks (3/4 cup) unsalted butter, softened
3/4 cup packed light-brown sugar
5 to 7 plums, depending on size, halved and pitted
1 cup granulated sugar
2 large eggs, separated, room temperature
1 teaspoon pure vanilla extract
1 1/2 cups unbleached all-purpose flour
2 teaspoons baking powder
1 teaspoon kosher salt
1/2 cup buttermilk, room temperature

Steps:

  • Preheat oven to 350°F. In a 10-inch cast-iron skillet, melt 4 tablespoons butter with brown sugar over low heat. Using a fork, mix together until smooth. Remove from heat.
  • Place plum halves, cut-sides down, on a work surface; cut into 1/4-inch-thick slices. Transfer each slice to skillet, forming concentric circles beginning at outer edge and ending in center, overlapping slices as you go around.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat remaining 1 stick butter with granulated sugar on medium-high speed until light and fluffy. In a small bowl, beat egg yolks and vanilla; add to butter mixture. In another small bowl, whisk together flour, baking powder, and salt. With mixer on low speed, add flour mixture to butter mixture in three additions, alternating with buttermilk and beginning and ending with flour mixture; beat until just combined. Transfer batter to a wide bowl.
  • In a clean mixer bowl fitted with the whisk attachment, beat egg whites on medium-high until soft peaks form, about 2 minutes. Stir one-third of whites into batter. Gently fold in remaining whites until incorporated. Pour batter over plums, spreading with an offset spatula to cover evenly.
  • Bake until top is browned and springs back when lightly pressed in center, and a tester comes out clean, 50 minutes to 1 hour. Transfer skillet to a wire rack; let cool 20 minutes. Turn out cake onto a serving plate and let cool completely before serving.

18 plums, pitted and halved, or as needed
½ lemon, juiced and zested
2 ¼ cups all-purpose flour
7 tablespoons unsalted butter at room temperature
½ cup white sugar
2 eggs
⅓ cup sour cream
2 teaspoons baking powder
¼ teaspoon salt
1 teaspoon ground cinnamon
2 tablespoons confectioners' sugar, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 10-inch springform pan.
  • Sprinkle prepared plums with lemon juice in a bowl.
  • Combine flour, butter, sugar, eggs, sour cream, baking powder, salt, and lemon zest in the bowl of a food processor; pulse until blended. Process on low speed until smooth. Pour batter into the prepared springform pan.
  • Arrange plums, cut-side down, on the batter. They can touch or even overlap; the more plums you can fit, the better the cake. Dust with cinnamon.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 50 minutes. Cool on a wire rack for 15 to 20 minutes before serving. Run a table knife around the edges to loosen. Invert carefully onto a serving plate. Dust with confectioners' sugar.

1/2 cup (1 stick) unsalted butter
1 cup all-purpose flour
1 cup sugar
2 teaspoons baking powder
Pinch of fine sea salt
1 cup whole milk
1 teaspoon pure vanilla extract
1 1/2 pounds plums, halved, pitted, and sliced 1/4-inch thick
Whipped cream, creme fraiche, or ice cream, for serving

Steps:

  • Preheat oven to 350 degrees. In a 12-inch enameled cast-iron skillet or ovenproof baking dish, melt butter in the oven, 5 to 7 minutes.
  • Whisk together flour, sugar, baking powder, and salt in a large bowl. Remove skillet from oven and add melted butter to flour mixture; stir to combine. Add milk and vanilla extract; mix until well combined. Pour mixture into skillet and arrange plums evenly on top, leaving a 1-inch border.
