Vegetable Brown Rice with Feta Cheese image

Warm up the rice while you're cooking the vegetables, and this dish will be ready in less than 20 minutes.

1/2 cup chopped red onion
1 (16.0-ounce) package frozen peas and carrots
1 (16.0-ounce) package frozen 365 Everyday Value Leafy Greens Blend
1 (20.0-ounce) package frozen 365 Everyday Value Organic Whole Grain Brown Rice, prepared according to package directions
1/4 cup crumbled feta cheese

Steps:

  • In a large, deep skillet, heat 1/2 cup water to a simmer over medium-high heat.
  • Add onion and cook until tender, about 5 minutes.
  • Stir in peas and carrots and leafy greens.
  • Cover and cook over medium heat until heated through, stirring occasionally, about 10 minutes.
  • Spoon vegetables over warmed brown rice and garnish with feta cheese.

1 cup brown rice
1 1/4 to 1 1/2 cups water
1/4 teaspoon kosher salt

Steps:

  • The Right Ratio: Trust us: Though it's printed on the package, the standard 2-to-1 ratio makes mushy rice. For long-grain brown rice, use 1 1/4 cups water to 1 cup rice. For short-grain, use 1 1/2 cups water.
  • Quick Cooking Time: Bring rice, water, and salt (1/4 teaspoon per cup of rice) to a boil. Cover, and reduce to a slow, steady simmer. Many recipes call for 50 minutes, but we think 30 minutes is plenty. A wide, shallow pot with a tight-fitting lid ensures evenly cooked grains.
  • Steam and Fluff: Let the cooked rice sit for 10 minutes, covered, to absorb maximum moisture; then remove the lid, and fluff the grains with a fork.

1 ½ cups uncooked brown rice
3 cups water
1 red bell pepper, thinly sliced
1 cup frozen green peas, thawed
½ cup raisins
¼ sweet onion (such as Vidalia®), chopped
¼ cup chopped Kalamata olives
½ cup vegetable oil
¼ cup balsamic vinegar
1 ¼ teaspoons Dijon mustard
salt and ground black pepper to taste
¼ cup feta cheese

Steps:

  • Bring brown rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low; cover and simmer until rice is tender and the liquid is absorbed, 45 to 50 minutes.
  • Combine red bell pepper, peas, raisins, onion, and olives in a bowl.
  • Whisk vegetable oil, vinegar, and mustard together in a separate bowl for the balsamic dressing.
  • Stir brown rice and balsamic dressing into vegetable mixture. Season with salt and black pepper.
  • Top brown rice and vegetables with feta cheese before serving.

1 teaspoon olive oil
1 large onion, finely chopped
1 cup brown rice
2 cups water or 2 cups broth
1 (10 ounce) box frozen spinach, thawed and drained
4 ounces feta cheese, crumbled
8 kalamata olives, pitted and finely chopped
4 eggs, lightly beaten (or 1 cup egg substitute)

Steps:

  • In a large saucepan, heat the oil over medium heat.
  • Add the onion and sautee for about 5 minutes or until just golden.
  • Stir in the rice and water.
  • Bring to a boil.
  • Cover and reduce the heat to a simmer.
  • Simmer, covered for about 45 minutes, or until all the water is absorbed.
  • Remove from the heat.
  • Preheat oven to 350°F Oil a 8x8 baking dish (ceramic or glass would probably be best).
  • Stir in the spinach, feta and olives into the rice.
  • Stir in the eggs.
  • Pour into the prepared baking dish.
  • Bake, uncovered for 25-30 minutes, or until a knife incerted into the center comes out clean.
  • Let stand for 5 minutes before serving.
