1-1/2 lb. lean ground beef
1/4 cup dry bread crumbs
1/4 cup finely chopped onions
1/2 cup A.1. Original Sauce, divided
1 pkg. (9 oz.) frozen chopped broccoli, thawed, well drained
1 cup KRAFT Shredded Cheddar Cheese, divided
1 can (14-1/2 oz.) stewed tomatoes, undrained, chopped

Steps:

  • Heat oven to 350°F.
  • Mix meat, bread crumbs, onions and 2 Tbsp. steak sauce just until blended.
  • Pat into 12x8-inch rectangle on sheet of waxed paper; top with broccoli and 3/4 cup cheese, spreading ingredients to within 1 inch of edges. Roll up, starting at one short end. Place, seam side down, in shallow pan sprayed with cooking spray.
  • Bake 1 hour or until done (160ºF). About 10 min. before meatloaf is done, cook tomatoes, and remaining steak sauce until heated through, stirring occasionally.
  • Top meatloaf with remaining cheese; bake 2 min. or until melted. Remove from oven. Let stand 5 min. before slicing. Serve topped with sauce.

1 1/2 lbs lean hamburger
1/2 cup old-fashioned oatmeal, can sub dried bread crumbs
1/4 cup milk
1/4 cup finely chopped onion
1 teaspoon seasoning salt
1 teaspoon Worcestershire sauce
1 egg
4 -6 slices deli ham (thin slices)
1 (10 ounce) package frozen chopped broccoli, thawed and drained
10 slices American cheese, can sub cheddar or 10 slices colby-monterey jack cheese, divided

Steps:

  • In large bowl combine first 7 ingredients til very well mixed.
  • Place mixture onto a sheet of foil.
  • Press out to a flat, even 8"x10" rectangle.
  • Top evenly with 6 slices ham to within 1/2" of edges.
  • Top with 6 slices american cheese.
  • Sprinkle cheese layer with chopped broccoli evenly. Chop any big pieces smaller.
  • Roll up starting from long side, lifting and using the foil to help you roll it all up.
  • Roll up tightly.
  • Pinch ends and seam closed VERY well. Place seam side down onto cookie sheet, or keep on the foil (seam side down)and place onto cookie sheet, that's what I did. Easier clean up!
  • Sprinkle with a little coarse ground pepper.
  • Bake in 350º oven for 55 minutes.
  • Cut remaining 4 slices cheese in half corner to corner. Place on top of meatloaf nicely, overlapping slices slightly, showing pointed sides.
  • Bake 5 minutes longer or til cheese is just melted.
  • Let rest 15-20 minutes before slicing.
  • Good served with mashed potatoes, baby carrots and fresh rolls.
  • *Some hams can turn ground beef slightly pink. It is done in 1 hour. Just check juices to see if they are running clear.
  • **"Do-ahead" Tip:This can be rolled up and refrigerated (covered)for up to 24 hours before baking.

24 premium saltine crackers, any variety, divided
1 1/2 lbs ground turkey or 1 1/2 lbs ground beef
1/3 cup chopped onion
1/4 cup chili sauce, divided
1 tablespoon chopped parsley
1 egg, beaten
1 cup shredded cheddar cheese
1 (10 ounce) package frozen chopped broccoli, thawed and drained

Steps:

  • Finely roll 12 crackers.
  • Mix cracker crumbs, turkey, onion, 2 tbsp chili sauce, parsley and egg.
  • Pat meat mixture into 12 by 8 inch rectangle on waxed paper.
  • Reserve 2 tablespoons cheese; sprinkle remaining cheese and broccoli onto meat mixture to within 1/2 inch of edge.
  • Coarsely break remaining 12 crackers; sprinkle over broccoli, pressing lightly into meat.
  • Starting at short end, roll up jelly-roll fashion, using waxed paper to help roll; seal ends.
  • Place loaf in 13x9x2-inch baking dish.
  • Bake at 350°F for 50-55 minutes.
  • During last 5 minutes of baking, spread remaining 2 tbsp chili sauce over meatloaf; sprinkle with reserved cheese.

A-1 BROCCOLI-CHEDDAR MEATLOAF

I found this on an A-1 Steak Sauce bottle about 20 years ago. It called for 8 oz can of stewed tomatoes mixed with remaining A-1 Steak sauce to be put on top but I omit this and just add all of the A-1 into the meatloaf.

1 1/2 lb ground beef
1/2 c a.1 steak sauce
1/4 c dry bread crumbs
1/4 c minced onion
1 c cheddar cheese, shredded
10 oz pkg. frozen chopped broccoli, thawed and well drained

Steps:

  • 1. Mix beef with steak sauce, bread crumbs, and onions. On waxed paper, pat to a 12x8 ", top with cheese and broccoli. (Keep a small ball of meat mixture to fix any cracks in the rolled up meat loaf). Roll up from the short end; seal. Transfer to a baking pan with sides. Seal any cracks that happen while transferring to dish. Bake at 350 degrees for 1 hour.

1 1/3 pounds ground lean turkey (average weight of 1 package)
1 tablespoon grill seasoning (a palmful, such as McCormick's Montreal Steak Seasoning)
2 teaspoons poultry seasoning (2/3 palmful)
1/3 cup bottled barbecue sauce, any brand
1 small or 1/2 medium zucchini, diced fine
1/2 small red bell pepper, seeded, cored, and diced fine
3 scallions, finely chopped
3/4 cup smoked almonds, such as Diamond brand, ground in food processor to bread-crumb consistency
1 egg yolk, beaten
Extra-virgin olive oil (EVOO), for drizzling
1 large head broccoli or 2 small heads
2 tablespoons butter
2 tablespoons flour
1 cup chicken stock or broth
1 cup milk
2 1/2 cups (10 ounces) good-quality shredded Cheddar cheese
2 teaspoons Tabasco sauce
Salt
1 cup store-bought chipotle, tomato, or tomatillo salsa, any brand

Steps:

  • Preheat the oven to 425°F.
  • Place the turkey in a medium mixing bowl and make a deep well in the center by punching the meat with your fist. Fill the well with the grill seasoning, poultry seasoning, barbecue sauce, chopped veggies, ground smoked almonds (clever sub for bread crumbs, I know, plus the smoked nuts rock with the BBQ sauce), and egg yolk. Mix the meatloaf ingredients together, then score the meat with your hand into 4 equal sections. Form 4 individual oval loaves, each 1 1/ 2 inches thick. Arrange on a nonstick baking sheet and drizzle liberally with EVOO. Roast the meatloaves for 18 to 20 minutes. While they roast, work on the broccoli and Cheddar sauce.
  • Trim the very end off of the broccoli stems. With a peeler or a paring knife, remove the thick, fibrous outer layer of the broccoli stems all the way up to within an inch of where the broccoli shoots off into its florets. Cut the broccoli lengthwise into large spears.
  • Heat a small or medium saucepot over medium heat and add the butter. When the butter melts, whisk in the flour and cook for 1 minute. Whisk in the chicken stock, then the milk. Thicken for 2 minutes, then stir in the cheese and melt, 2 minutes. Season with the Tabasco and salt to taste, then turn the heat to low.
  • Bring a couple of cups of water to a boil in a deep skillet. Add salt and broccoli and cook the spears for about 5 minutes in simmering water, until tender but still green. Drain and return to the pan to remain warm.
  • Place a turkey meatloaf on a dinner plate. Garnish with a spoonful or two of salsa. Pile some broccoli spears alongside and top with a generous ladle of cheese sauce.
