BRANDIED SHRIMP

Number Of Ingredients 11

2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
3 garlic cloves, finely minced
1 pound medium shrimp, peeled and deveined
2 teaspoons Worcestershire sauce
1/8 teaspoon hot sauce (recommended: Tabasco)
Salt and fresh black pepper
1/2 cup ketchup
1 tablespoon chopped fresh oregano leaves
2 tablespoons brandy
2 tablespoons chopped flat-leaf parsley

Steps:

  • Melt the butter with the olive oil in a large skillet over medium heat. Add the garlic and cook until it is fragrant, about 1 to 2 minutes, stirring often. Stir in the shrimp, Worcestershire sauce, hot sauce, salt and pepper and let the mixture simmer until the shrimp are partially cooked through and beginning to curl, about 2 minutes.
  • Stir in the ketchup and the oregano and simmer until the shrimp are opaque and just cooked through, 2 more minutes. Add the brandy and parsley, stir to combine, remove from the heat and serve.

1 (16 ounce) package dry fettuccini noodles
¼ cup olive oil
1 pound shrimp, peeled and deveined
6 green onions, thinly sliced
4 cloves garlic, thinly sliced
¼ cup brandy
2 large tomatoes, diced
½ cup dry white wine
½ cup butter
½ cup chopped fresh basil
2 teaspoons salt
1 teaspoon pepper
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat olive oil in a large skillet over medium heat. Saute shrimp until pink. Stir in green onions, garlic and brandy. Carefully ignite brandy with a match, or the gas flame. Cook for 2 minutes. Add chopped tomatoes, and cook 2 minutes. Stir in wine and butter, and season with basil, salt and pepper. Cook for 3 minutes. Stir in Parmesan. Toss with pasta until evenly coated.

1 box wild rice mix
1/3 c flour
4 c whole milk
1 T butter
1 small onion
2 bottles (8 oz ea) clam juice
1 c heavy cream
1/3 c brandy
1 1/2 lbs shrimp

Steps:

  • Prepare the rice mix per instructions. Melt butter and sauté the onion until tender, then stir in the clam juice, brandy, and 3 1/2 c milk. Heat to boiling. In the remaining 1/2 c milk, whisk in the flour and salt and pepper to taste. Stir into hot milk mixture and boil one minute. Stir in the rice and the shrimp, cook another 2 minutes until shrimp is done and heated through.

1 tablespoon butter
1 tablespoon olive oil
4 garlic cloves (minced)
1 lb shrimp (cleaned and shelled)
2 tablespoons Worcestershire sauce
1/2 teaspoon pepper sauce (like Frank's)
1/2 cup ketchup
1 1/2 tablespoons dried oregano
3 tablespoons brandy
2 tablespoons dried parsley
salt
pepper

Steps:

  • melt butter and olive oil together in pan over medium heat.
  • Add garlic and cook for 3-4 minutes, be careful not to burn it.
  • Stir in shrimp, worchestershire sauce, pepper sauce and salt and pepper to taste.
  • Let the mixture simmer until shrimp are cooked, about 2-3 minutes.
  • Add brandy, parsley and spices.
  • Stir and serve.
  • Serve with rice or pasta.
