2 cups uncooked multigrain bow tie pasta
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
6 cups fresh baby spinach (about 6 ounces)
2 cups fresh broccoli florets
2 plum tomatoes, chopped
1 medium sweet red pepper, chopped
1/2 cup cubed part-skim mozzarella cheese
1/2 cup pitted Greek olives, halved
1/4 cup minced fresh basil
1/3 cup reduced-fat sun-dried tomato salad dressing
1/4 teaspoon salt
1/4 cup chopped walnuts, toasted

Steps:

  • Cook pasta according to the package directions. Drain; transfer to a large bowl., Add beans, vegetables, cheese, olives and basil to pasta. Drizzle with dressing and sprinkle with salt; toss to coat. Sprinkle with walnuts.

1 cup uncooked bow tie pasta
1 package (10 ounces) fresh baby spinach
1 medium sweet yellow pepper, diced
1/2 cup chopped dried apricots
1/2 cup balsamic vinaigrette

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large serving bowl, combine the spinach, yellow pepper and apricots. , Drain pasta and rinse in cold water; add to spinach mixture. Drizzle with vinaigrette and toss to coat.

I ate this salad from a Grocery Store Deli one day,then made my own version that Duplicated it to make it my own!It WAS that GOOD!

Number Of Ingredients 9

16 oz package bowtie dry pasta
1 pkg baby spinach leaves
1/2 c vegetable oil
16 oz blue cheese crumbles
1 pt cherry tomatoes
1 bottle white wine vinegar -1/2 cup
Add Salt to taste
1 tsp garlic powder with parsley
16 oz shredded parmesan -1 cup

Steps:

  • 1. Cook pasta according to pkage Directions,adding a splash of oil to pot of salted water Aldente is suggestd for this recipe.
  • 2. Drain Pasta. Rince with Cold Water. Set aside. In the bottom of a resealable container,mix Oil,Garlic Salt,and white wine vinegar. Stir well until somewhat combined.
  • 3. Add Pasta and Stir to coat pasta fully. Add Tomatoes, a handful Blue Cheese crumbles,Shredded Parmesan,and dry Spinach leaves. Toss well!
