TURKEY BURGERS WITH BLUEBERRY BBQ SAUCE
I concocted this entrée after researching the nutrition benefits of blueberries. The fruity sauce complements the poultry patties, and mushrooms and spinach add a gourmet garnish.-Lori Merrick, Danvers, Illinois

- In a large skillet, cook onion and garlic in oil over medium heat until tender. Stir in the blueberries, brown sugar, pepper, vinegar, mustard and Worcestershire sauce. Cook and stir until thickened, about 10 minutes. Cool slightly. Transfer to a food processor; cover and process until smooth., Shape turkey into four patties; sprinkle with salt and pepper. Place mushrooms on a double thickness of heavy-duty foil (about 12 in. square). Fold foil around mushrooms and seal tightly. , Grill burgers and mushroom packet, covered, over medium heat for 5-7 minutes on each side or until a thermometer inserted into the burgers reads 165° and juices run clear. Top burgers with cheese; cover and grill 1-2 minutes longer or until cheese is melted., Place buns, cut side down, on grill for 1-2 minutes or until toasted. Serve burgers on buns with mushrooms, spinach and blueberry sauce.

Steps:
- Place bread in a food processor and pulse into fine crumbs.
- Transfer to a large bowl. (No need to wash the workbowl.).
- Add blueberries, vinegar, mustard, Worcestershire, garlic, salt and pepper to the food processor; process until pureed. Scrape into the bowl with the breadcrumbs. Add ground turkey and egg and mix well with a potato masher or hands.
- Divide the mixture into 5 or 6 equal portions; form into 1/2-inch-thick patties, about 4 inches in diameter.
- Meanwhile, preheat broiler or heat an indoor or outdoor grill to medium-high. If using the broiler, coat a broiler pan with cooking spray. If using a grill, oil the grill rack by rubbing it with an oil-soaked paper towel.
- Cook patties until browned and no longer pink in the center, 4 to 5 minutes per side.
- An instant-read thermometer inserted in the center should register 160°F
- Serve immediately, with or without rolls and toppings.

BLUEBERRY TURKEY BURGERS
Who would of ever thought to use blueberries in a burger recipe! Get ready to grill!

Steps:
- 1. Combine mayonnaise, basil, lemon zest, and half of the blueberries in a small bowl; mix well and reserve.
- 2. Combine remaining blueberries, garlic, lemon juice, and Dijon mustard in a bowl and mash well with a fork. Add ground turkey, bread crumbs, salt and pepper, mix until well combined.
- 3. Divide into 4 portions and form into 3 1/2 inch diameter patties.
- 4. Coat a grill pan with cooking spray and heat over medium high heat. Add patties and grill 5 to 6 minutes each side or until a thermometer inserted in the center registers 175 degrees.
- 5. To serve, place 1 tomato slice, 1 lettuce leaf and 1 turkey burger on bottom half of each English muffin(toasted)
- 6. Spread cut side of muffin tops with basil mayonnaise and place on burgers, serve right away.
