This is a super yummy recipe that intrigues your taste buds with a variety of flavors which come together even better the next day. I've tweaked this recipe a bit each time I've made it. Alternatives include swapping orange juice for lime juice or green onions for red.

2 (14 1/2 ounce) cans chicken broth
1/2 cup water
1 (1 lb) package long-grain rice (2 cups uncooked)
3 bay leaves
2 (15 ounce) cans black beans, drained, rinsed
2 red bell peppers, diced
1 medium red onion, diced
1 bunch fresh cilantro, chopped
1/2 cup olive oil
6 tablespoons lime juice
3 tablespoons red wine vinegar
3 teaspoons ground cumin
1 teaspoon chili powder
1 teaspoon salt

Steps:

  • Bring chicken broth and water to boil in heavy large saucepan.
  • Add rice and bay leaves.
  • Bring to boil.
  • Reduce heat to low, cover and cook until liquid is absorbed, about 20 minutes.
  • Transfer rice to large bowl and fluff with fork. (If you have time, chill cooked rice overnight).
  • Mix in black beans, peppers, red onion, chopped cilantro, oil, lime juice, vinegar, cumin and chili powder.
  • Season salad to taste with salt and pepper.
  • Cover and refrigerate. Serve chilled.

2 (15 ounce) cans black beans, rinsed and drained
1 green bell pepper, chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 orange bell pepper, chopped
4 medium tomatoes, diced
½ large onion, chopped
2 medium limes, juiced
3 tablespoons olive oil
1 teaspoon ground cumin
¾ teaspoon kosher salt
½ teaspoon honey
⅛ teaspoon cayenne pepper
¼ cup chopped fresh cilantro, or to taste

Steps:

  • Combine beans, bell peppers, tomatoes, and onion in a large bowl.
  • Whisk lime juice, oil, cumin, salt, honey, and cayenne together for dressing in a separate bowl.
  • Pour dressing over salad, toss well, and adjust seasonings to taste. Top with cilantro just before serving.

4 bell peppers, a mix of colors, chopped into a small dice
1/2 super-large or 1 medium white onion, chopped into a small dice
Juice of one lime
3 tablespoons olive oil
1 teaspoon ground cumin
3/4 teaspoon salt
1/2 teaspoon honey
1/8 teaspoon cayenne
Optional: If you're the kind of person who loves cilantro, it's a great match for this salad.

Steps:

  • Mix beans, bell peppers and white onion in a large bowl. In a separate, smaller bowl, whisk remaining ingredients into a vinaigrette. Ideally, you'll have a 1/2 cup of dressing. Pour it over the bean mixture, toss it well and adjust seasonings to taste.
