BARBECUE BEEF CUPS

This is a quick and easy recipe given to me by a friend. My family loves it.

¾ pound lean ground beef
½ cup barbeque sauce
1 tablespoon dried minced onion
1 (12 ounce) package refrigerated biscuit dough
⅓ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease the cups of a muffin pan.
  • In a large heavy skillet over medium heat, cook beef until evenly brown. Drain excess fat. Stir in barbeque sauce and dried onion. Simmer for a few minutes over low heat.
  • Flatten each biscuit, and press into cups of the prepared muffin pan. Make sure the dough comes to the top of the pan. Spoon a portion of the meat mixture into each dough cup.
  • Bake in preheated oven for 12 minutes. Sprinkle with cheese, and bake for 3 more minutes.

1 lb lean (at least 80%) ground beef, cooked, drained
¾ cup barbecue sauce
1 can (10.2 oz) Pillsbury™ Grands!™ Flaky Layers refrigerated biscuits
¾ cup shredded Cheddar cheese (3 oz)

Steps:

  • 1. In 10-inch nonstick skillet, mix cooked beef and barbecue sauce. Heat over medium-high heat, stirring constantly, until hot. 2. Pull each biscuit apart into 2 layers; press each into 4-inch round. Place 1 round in each of 8 greased regular-size muffin cups. Firmly press in bottom and up side, forming ¼-inch rim. Fill with beef mixture; sprinkle with cheese. 3. Bake at 375°F 13 to 15 minutes or until edges of biscuits are golden brown. Cool 1 minute; remove from pan.

1 pound lean ground beef (90% lean)
1/4 cup each finely chopped celery, onion and green pepper
1/2 cup barbecue sauce
1 tube (12 ounces) refrigerated flaky biscuits (10 count)
1/2 cup shredded cheddar cheese

Steps:

  • Heat oven to 400°. In a large skillet, cook beef and vegetables over medium heat until beef is no longer pink, 5-7 minutes, breaking up beef into crumbles; drain. Stir in barbecue sauce; bring to a boil. Reduce heat; simmer, uncovered, 2 minutes, stirring occasionally., Separate dough into 10 biscuits; flatten to 5-in. circles. Press onto bottoms and up sides of greased muffin cups. Fill with beef mixture., Bake until biscuits are golden brown, 9-11 minutes. Sprinkle with cheese; bake until cheese is melted, 1-2 minutes longer.

1/2 lb. extra-lean ground beef
1 small each green and red pepper, finely chopped
1/3 cup KRAFT Original Barbecue Sauce
1 can (7.5 oz.) refrigerated buttermilk biscuits
1/2 cup KRAFT Mexican Style 2% Milk Finely Shredded Cheddar Jack Cheese

Steps:

  • Heat oven to 375ºF.
  • Brown meat with peppers in medium skillet. Remove from heat. Stir in barbecue sauce.
  • Separate biscuits. Press 1 biscuit onto bottom and up side of each of 8 muffin pan cups. (See tip for what to do with remaining 2 biscuits.)

1 cup hickory smoke-flavored barbecue sauce
2 1/4 cups Original Bisquick™ mix
1 cup shredded Cheddar cheese (4 oz)
2/3 cup milk

Steps:

  • Heat oven to 450°F. Spray 12 regular-size muffin cups with cooking spray.
  • In 10-inch nonstick skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in barbecue sauce; cook until mixture just begins to bubble.
  • In medium bowl, stir Bisquick mix, 1/2 cup of the cheese and the milk until soft dough forms. Spoon about 2 tablespoons dough into each muffin cup. Press dough in bottom and up sides of each cup. Spoon 2 tablespoons beef mixture into each cup.

These have reached comfort food status in my house. Very easy to make, spices can be added to personal taste, same with types of cheese, sauce, etc. This can easily be adjusted to a lower fat version by adjusting the ground beef fat content, biscuits and cheese. I am sure there are lots of these recipes or similar variations floating around the Zaar.

1 lb ground beef
1 (14 ounce) jar spaghetti sauce
2 (8 ounce) cans large refrigerated biscuits (8 oz each, I prefer Pillsbury Grands)
1 cup shredded cheddar cheese
1 teaspoon italian seasoning

Steps:

  • Preheat oven to 375 degrees.
  • Brown ground beef, drain, add spaghetti sauce and seasoning.
  • Cook over medium heat about 5-10 minutes or until heated through.
