1 (12 1/2 ounce) bottle honey lime dressing (Island Grove Key Lime Honey Ginger Dressing)
1/4 cup packed fresh basil, chopped
4 garlic cloves, minced
1 small onion, diced about 1/2 cup
4 chicken breasts, 2 1/2 -3 pounds
2 cups cooked rice (optional)
1 mango, peeled and sliced

Steps:

  • Place the first 4 ingredients in a large bowl mixing together, add chicken and marinate for 1 hour.
  • Heat grill to medium high.
  • Remove chicken from marinade shaking of excess; place the marinade in a small pot and bring to a boil then simmer stirring often.
  • Meanwhile place chicken on hot grill and grill for 3-5 on each side.
  • Remove chicken when 165° to 170°F cook until juices run clear. Sit for 10 minutes before slicing.
  • Mix 1/2 the heated sauce into the rice.
  • Plate chicken on some sauce serve with sliced fanned out mango, rice and a veggie of choice.

1 can (14 ounces) coconut milk
2 lemongrass stalks, bottom 4 inches only, thinly sliced
3 tablespoons Asian fish sauce
4 small boneless, skinless chicken breast halves (about 1 1/2 pounds total)
7 ounces glass (cellophane) noodles
1 teaspoon finely grated lime zest plus 2 tablespoons fresh lime juice
2 teaspoons sugar
5 Thai or regular shallots, thinly sliced
2 fresh Thai chiles, thinly sliced
1 1/2 cups packed Thai or regular basil leaves
3 fresh or frozen kaffir lime leaves, thinly sliced

Steps:

  • Bring coconut milk, half of the lemongrass, and 1 tablespoon fish sauce almost to a boil in a large pot over medium-high heat. Add chicken. Reduce to a simmer, and cook, flipping chicken once, until it is cooked through, 5 to 10 minutes per side. Remove from heat. Transfer chicken to a cutting board, and cut crosswise into thin slices. Return chicken to coconut milk mixture; cover, and set aside.
  • Soak noodles in boiling water according to package instructions, 3 to 5 minutes. Drain. Set aside.
  • Stir together lime zest and juice, sugar, shallots, chiles, basil, and lime leaves in a medium bowl. Add noodles, and toss to combine. Divide noodle mixture among 6 serving bowls. Using a slotted spoon, remove chicken, and evenly divide among bowls. Drizzle each bowl with some coconut milk sauce.

2 tablespoons fresh lime juice (from 2 to 3 limes)
1 tablespoon safflower or peanut oil
2 teaspoons low-sodium soy sauce
2 teaspoons sugar
1 large shallot, thinly sliced into rings
Coarse salt
2 boneless, skinless chicken breast halves (about 8 ounces each), pounded to an even thickness (about 3/4 inch)
1 cup basil leaves

Steps:

  • Stir together 1 tablespoon lime juice, oil, soy sauce, sugar, shallot, and 3/4 teaspoon salt in an 8-inch square baking dish. Add chicken; toss to coat. Refrigerate for at least 30 minutes.
  • Heat broiler. Arrange chicken on top of shallot in dish. Broil 8 inches from heat source until lightly browned, about 7 minutes. Flip chicken, arranging shallots around sides. Broil until chicken is cooked through, 6 to 7 minutes more. Let stand for 5 minutes. Slice chicken crosswise. Reserve pan juices.
  • Transfer chicken and reserved pan juices to a bowl. Toss with basil and remaining tablespoon lime juice.

Fresh basil is the most wonderful addition to this dish, in a pinch use dried but when fresh basil is in a bundance this is a great way to serve chicken. if you like you could actually grill or roast the chicken instead of cooking on the stove top. depending on the weather outside this recipe fits all seasons because of the fact you can use different methods for cooking the chicken. you could use boneless breasts if in a pinch for time!

3 tablespoons oil
8 chicken breasts, bone in
1 cup onion, chopped
1 tablespoon sliced fresh basil
1/2 cup dry white wine
1/4 cup fresh lime juice
1/4 teaspoon salt
1/8 teaspoon ground pepper
1 cup light cream or 1 cup half-and-half
2 tablespoons flour
2 egg yolks
fresh basil leaves and lime slice

Steps:

  • in large frying pan heat oil over medium high heat. brown chicken all over.
  • remove chicken and set aside.
  • add onion to the pan and saute until tender about 3-5 minutes.
  • add basil wine, lime juice, salt and pepper. bring to a boil then reduce heat. return chicken bone up to the pan coat with sauce and simmer covered for 20 minutes. remove chicken to platter.
  • in small bowl whisk cream and flour until smooth. add to the pan drippings and bring to a boil stirring constantly.
  • once thick and smooth whisk in the egg yolks. reduce the heat and let simmer 2 minutes.
  • spoon sauce over chicken on the platter and garinsh with lime slices and basil leaves.

This was the first recipe my mom taught me - mostly so I could get it started before she would get home from work. It's so easy and yum! I always serve with plain white rice - the juice is great on it - and steamed broccoli.

6 -8 lbs whole chickens (any size would work though)
1 -2 lime
1 1/2 tablespoons dried basil (more or less to taste)

Steps:

  • Preheat oven to 350.
  • Squeeze juice of halved lime(s) all over chicken.
  • Sprinkle liberally inside and out with basil.
  • Put 1 or 2 lime halves into cavity.
  • Cook approximately 30 minutes per pound, or until done.
  • Spoon juice over.

1/4 Cup Extra Virgin Olive Oil (I do not use this much...I eyeball it)
3 T Dijon Mustard
3 T Worcestershire Sauce
3 T Soy Sauce
6 Green Onions Chopped Divided
4 Cloves Garlic Minced Divided
1/4 cup Chopped Basil
Salt and Pepper to taste
3 lbs Chicken Breasts
1 jalapeno

Steps:

  • Combine the zest and juice of 2 limes, Olive Oil, Mustard, Worcestershire, Soy, 3 onions, 2 garlic cloves salt and pepper and mix well. Cut chicken into even cutlets and place in a gallon sized baggie. Pour marinade over the chicken and marinate for 2+ hours (I marinate overnight) Preheat grill or grill pan Place chicken on grill and grill for 7 minutes. Then flip and cook until internal temp reaches 170. Remove from grill and let meat rest. Meanwhile combine juice and zest of 2 lime with extra virgin olive oil, 3 chopped onions, 2 minced garlic cloves, jalepeno, basil. Slice chicken into bite-sized pieces and pour sauce over top.
