BANANA DATE BREAD
A great banana bread that uses the least amount of oil I've seen compared to some other banana bread recipes. Tastes great all by itself or add a little butter or cream cheese to make it even better. Leave the dates and/or nuts out if that's not your thing.

Steps:
- Preheat oven to 350 degrees.
- In a large bowl, beat together the oil and sugar.
- Add the egg and mix well.
- In a medium sized bowl, combine the flour, baking powder, baking soda and salt.
- In another bowl, combine the bananas, water and vanilla extract.
- Add banana mixture to the oil and sugar mixture alternately with the flour mixture, combining well after each addition.
- Stir in dates and nuts (if desired).
- Turn mixture into a greased and floured 9" x 5" loaf pan.
- Bake for 50-55 minutes or until a wooden toothpick inserted in the center of the loaf comes out clean.
- Cool for 10 minutes then remove from pan and let cool on wire rack before slicing.
BANANA DATE FLAXSEED BREAD
I'm always searching for healthy recipes, and this one filled the bill. The flaxseeds give the bread a really nutty taste.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan. Use an electric coffee grinder or food processor to grind 1/2 cup flax seed; set aside.
- In a large mixing bowl, beat together banana, oil, sugar and eggs. In a separate bowl, mix together flour, baking powder, baking soda, salt, ground flax seed and 1/4 cup whole flax seed. Gradually stir flour mixture into banana mixture. Fold in dates. Spoon batter into prepared loaf pan.
- Bake in preheated oven for 55 to 60 minutes, or until a toothpick inserted into the loaf comes out clean.

- Place 1/2 cup flax seeds in a blender, and process until ground to measure 3/4 cup flaxseed meal.
- Set flax seed meal aside.
- Preheat oven to 350°.
- Beat the banana, sugar, oil, and eggs at medium speed of a mixer until well-blended.
- Lightly spoon flour into dry measuring cups, and level with a knife.
- Combine flour, flaxseed meal, 1/4 cup flax seeds, baking powder, baking soda, and salt, and gradually add to sugar mixture, beating until well-blended.
- Stir in chopped dates.
- Spoon the batter into an 8x4-inch loaf pan coated with cooking spray.
- Bake bread at 350° for 55 minutes or until a wooden pick inserted in center comes out clean.
- Cool 10 minutes in pan on a wire rack, and remove from pan.
- Cool completely on wire rack.
- Serve and enjoy!

HEALTHIER SOUR CREAM BANANA DATE BREAD
This is my take on healthifying (is that a real word??) the super-popular Recipe #9351. I added dates and eliminated the sugar entirely, swapped out the white flour for whole wheat, and substituted grapeseed oil for half the butter. The result was a super moist loaf that was just sweet enough - the sweetness from the dates and bananas really shone through. It turned out so well I thought I would share.

- Grease a 9"x5" loaf pan.
- Sift the whole wheat flour, baking soda and salt together.
- Cream the butter and slowly blend in the grapeseed oil. Mix in the eggs one at a time, then stir in the vanilla and the dates.
- Stir in the dry ingredients, then add in the mashed bananas, nuts and sour cream. The mixture should be well blended.
- Bake at 350°F for 1 hour or until a toothpick inserted in the center comes out clean.

- Preheat the oven to 325 degrees F (165 degrees C). Spray a 9x9-inch baking dish with cooking spray (do not use a loaf pan).
- Mash bananas in a bowl. Add sugar and applesauce and mix well. Mix in eggs, baking soda, and baking powder. Add flour 2 tablespoons at a time. Fold in dates and walnuts. Pour batter into the prepared baking dish.

- Bake @ 350' for 60 minute
- In medium bowl pour boiling water and baking soda over dates, stir well, Reserve 1/4 cup liquid, allow mixture to cool.
- Stir eggs into cooled date mixture.
- In large bowl combine brown sugar and oil, sift in whole wheat flour, salt and baking powder;, mix throughly.
- Add bananas blended with reserved date water, then add date egg mixture, vanilla, banana flavorings and walnuts. Mix well.
- Pour into 2 well buttered loaf pans (4 1/2"x8 1/2").
- Bake 60 minutes @ 350' or til tooth pick inserted in center comes out clean. Cool before cutting.

BANANA DATE BREAD WITH LIME
I was four years old when we moved into a brand-new house in South Windsor, Connecticut. One afternoon, my father decided I needed friends and walked me and Norman down to the local playground to meet the neighborhood children. Norman gave me strength. A sweet, fuzzy-headed, thumb-sucking baby monkey doll. To rest, he slipped perfectly inside an 8-inch yellow felt banana-shaped sleeping bag. Norman was my comfort and conversation starter when I met new kids. I can't decide whether I've heard the playground story so many times that I think I remember it, or if I actually do. But the vision of us is seared in my mind. My dear dad and me, hand in hand, me clutching Norman and his banana for dear life, silently walking down the street, both a little fearful about the next steps. Back then, Norman and his banana were my ice-breakers. Now, it's the banana bread I offer up as I walk into the new and unfamiliar. Neither has ever let me down.

- Preheat the oven to 350°F. Butter and flour an 8 1/2 x 4 1/2-inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, salt, and baking soda and set aside.
- With an electric mixer on medium speed, beat the butter, sugar, and lime zest in a large bowl until light and fluffy, about 3 minutes. Beat in the eggs, 1 at a time, scraping down the sides of the bowl as necessary. Beat in the banana and vanilla and fold in the dates. Fold the dry ingredients into the wet ingredients.
- Transfer the batter into the prepared pan and bake until a skewer inserted into the center comes out with moist crumbs attached, 55 to 65 minutes. Transfer the pan to a wire rack to cool for 15 minutes, then flip the loaf out of the pan, turn it right-side up, and let it cool completely.

- Instructions: Preheat oven to 350°F. Butter a 9x5-inch loaf pan; set aside. In a large bowl, whisk together the flour, cinnamon, baking powder, baking soda, salt, and nutmeg. - 1. Preheat oven to 350°. Place dates in small pan, cover with water, and bring to a boil. Turn off heat and allow dates to soften 5-7 minutes. Remove dates from water and transfer to a blender or food processor. Purée until a smooth paste is formed. 2. In a medium bowl, mix 1-1/2 cups whole-wheat pastry flour, all-purpose flour, baking powder, salt, and cinnamon. Stir in walnuts. 3. In a small bowl, combine mashed bananas, yogurt, whole egg, egg white, and vanilla extract. Add 1/2 cup date purée to banana mixture. (Refrigerate any extra purée for future use.) Add banana mixture to flour mixture and mix just until combined. Do not over mix. 4. Coat a 9-inch loaf pan with cooking spray. DATE-SWEETENED BANANA BREAD

- 1. Preheat oven to 350 degrees. Grease a 9 x 5 x 3 loaf pan. (Can be lined with parchment if it is aluminum.)
- 2. Place the dates in the bowl of an electric mixer fitted with the paddle attachment. Add the hot water and allow the dates to soften for at least 10 minutes. (I usually get the rest of my ingredients ready while the dates are softening.)
- 3. Turn the mixer on low speed and blend until the water has incorporated with the dates. Turn the mixer to medium low speed and beat the dates until a smooth puree forms.
- 4. Add the butter or coconut oil and beat until well blended. Add the eggs, one at a time, beating well after each addition. Add the vanilla extract and mix.
- 5. In a medium bowl, combine the flour, baking soda, baking powder and salt. Add to the butter-date mixture and mix until just combined.
- 6. Fold in the mashed bananas and walnuts.
- 7. Pour the mixture into the prepared pan and bake for 50-60 minutes (I made it in many different ovens with this range of time), or until a toothpick inserted in the center comes out barely clean. Cool in the pan for 10 minutes. Remove from the pan and cool on a rack.
BANANA DATE BREAD
This is a very moist bread that freezes well. Even people who do not like dates, have commented that they like this. I often give a loaf as a gift and have many requests for this as it is so yummy. It is rich enough to be served alone but is also great with spread with flavored Cream cheeses. I have also been known to add chocolate chips to the batter as a special treat.

- Grease a 9x5x3 loaf pan. (I often make a double batch of this recipe and use 3 small loaf pans (7 3/8x 3 5/8) instead of 2 pans this size.)
- Cream together butter and sugar until light. Mix in the eggs. Add bananas and mix well.
- Add salt and soda to creamed mixture, mix and then add the flour a half cup at a time beating quickly.
- Stir in dates and nuts. (I use the pre-chopped dates sold in the store, if you find you have to chop your dates, you will have to mix them with a little flour so they will not stick together.)
- Preheat over to 350 degrees. Turn batter into pan. Let sit for 20 minutes. Bake 60 minutes or until done (toothpick inserted into bread comes out clean.) Bread will be very dark. Cool 10 minutes on wire rack and remove from pan. I usually leave a little longer and turn pan upside down to help bread release from pan.
