- In a large skillet, saute the mushrooms, jalapeno and onion in 2 teaspoons butter until tender. Place fillets in an ungreased 8-in. square baking dish. Sprinkle with lemon-pepper, steak seasoning and bread crumbs. Top with mushroom mixture. Divide remaining butter and place on each fillet., Cover and bake at 400° for 10 minutes. Uncover; sprinkle with cheese. Bake 5-8 minutes longer or until fish flakes easily with a fork.

- Heat oven to 375 degrees.
- If fish fillets are large, cut into 4 serving pieces. Arrange in ungreased square baking dish, 8 x 8 x 2 inches. Sprinkle with paprika, salt and pepper.
- Melt butter in 10-inch skillet over medium heat. Cook mushrooms and leeks in butter, stirring occasionally, until leeks are tender. Stir in wine. Pour mushroom mixture over fish. Sprinkle with almonds and cheese.
- Bake uncovered 15 to 20 minutes or until fish flakes easily with fork.

Steps:
- Place frozen fillets in shallow buttered baking dish.
- In saucepan, combine remaining ingredients and simmer 10 minutes; pour over fillets.
- Top with 1 cup buttered breadcrumbs which have been lightly seasoned with poultry seasoning (or 1 cup prepared stuffing mix.).
- Dot with butter and bake for 45 minutes at 375 degrees.
- This may easily be halved.

- Cut salmon into 4 equal portions.
- Lightly butter a 13x9 baking dish.
- Place salmon in the dish.
- Heat butter in skillet and add mushrooms and green onions.

- Add milk and bring to a boil.
- Cook and stir until thick, then add wine or water and lemon juice.

- Place swordfish in a 9x13-inch baking dish. Place bell pepper slices around the fish. Pour wine over top and sprinkle with shallots. Cover and marinate in the refrigerator for 1 hour.

- Melt the butter in a small saucepan over medium-low heat. Add garlic and shallots; cook and stir until transparent, about 3 minutes. Season with tarragon, salt and white pepper.
