350g penne pasta
1 tbsp vegetable oil
1 onion , chopped
8 rashers smoked back bacon , chopped
200ml hot vegetable stock
300g frozen pea
150g pack gorgonzola , cubed
250g spinach

Steps:

  • Cook the pasta following pack instructions. Meanwhile, heat the oil in a large frying pan, then add the onion and cook for 3 mins until starting to soften. Add the bacon, cook for a further 5 mins, then pour in the hot stock and bring to the boil. Simmer for a few mins until the liquid has reduced slightly.
  • Stir in the peas, followed by the gorgonzola, until the cheese has melted and the peas are defrosted. Quickly stir through the spinach to wilt. Drain the pasta and mix with the sauce, then serve.

pasta, of choice
1 cup cooked, cubed yellow squash
1/2 cup candied walnuts
1 cup fresh spinach
6-7 strips of bacon, cut into bits.
1/3 cup gorgonzola
1/4 cup parmesan
1/4 cup blue cheese
Sauce:
4 tablespoons butter
8 sage leaves
1/2 lemon, juiced

Steps:

  • While pasta, squash and bacon cooks, melt butter in a large saute pan and continue cooking until golden brown color appears. Add sage leaves and remove from heat. Add lemon juice and set aside. Drain the pasta, but leaving some cooking water, and gently pour into saute pan, add spinach and return to heat. Add the cheese, squash, bacon, and walnuts toss to coat and serve immediately.
