SHRIMP AND AVOCADO TZATZIKI POCKETS

Simple pita pockets or lettuce leaves, stuffed with a creamy, tangy, shrimp and avocado filling makes for a great meal!

12 cooked shrimp, chilled
1 ripe avocado, cut into small chunks
⅓ cup Greek yogurt
¼ cup finely chopped cucumber
2 tablespoons extra-virgin olive oil
1 clove garlic, minced
2 teaspoons lemon juice
1 teaspoon lemon zest
½ teaspoon salt
¼ teaspoon chopped fresh dill
¼ teaspoon chopped fresh parsley
freshly ground black pepper to taste
4 pita bread rounds, halved
1 teaspoon sliced almonds

Steps:

  • Cut cooked shrimp into small pieces and mix with avocado in a bowl. Set aside in the refrigerator.
  • Combine yogurt, cucumber, oil, garlic, lemon juice, lemon zest, salt, dill, parsley, and pepper in a bowl and mix well. Chill for at least 30 minutes.
  • Mix shrimp and avocado in tzatziki dip gently. Divide mixture among pita pockets. Top with sliced almonds.

1 large avocado, peeled and pitted
2 cloves garlic, minced
1 lemons, juiced
¼ cup sour cream
½ cup chopped seeded cucumber
½ teaspoon red pepper flakes, or to taste
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh mint
salt and pepper to taste

Steps:

  • In a medium bowl, combine the avocado, garlic, lemon juice, sour cream and cucumber. Mash with a fork until smooth. If your avocado is not quite ripe enough, you may wish to use a food processor. Season with red pepper flakes, cilantro, mint, salt and pepper, and mix well. Cover and refrigerate for 1 hour before serving.

For the avocado and tzatziki lover's of this world. A Greek classic with an Aussie twist! Here is a delicious and yet simple way to combine your favorite food with Tzatziki. The recipe calls for 1 teaspoon of salt, but I half this as I found it too salty. I also tend to dice the avocado very finely or lightly mash.

1/2 cup extra virgin olive oil
1 teaspoon garlic, minced
1 teaspoon salt
2 cups plain yogurt

Steps:

  • In a bowl combine the lemon juice, olive oil, minced garlic & salt to the yoghurt.
  • Add the grated cucumber, and avocado and mix into the yoghurt.
  • Place mix into serving dish and chill for at least one hour.

1 tablespoon fresh lemon juice
1 teaspoon minced garlic
1 teaspoon kosher salt

Steps:

  • In a medium bowl, stir together the yogurt, olive oil, lemon juice, garlic and salt.

1/4 cup olive oil
2 Tablespoons fresh oregano leaves
4 6-ounce salmon fillets, wild caught preferred, skin on preferrably
2 lemons, halved
kosher salt, to taste
fresh ground pepper, to taste

AVACADO TZATZIKI
2 ripe avocados1-2 cloves chipped garlic
1 jalapeno pepper, chopped
1/2 cup Greek yogurt, fat free or whole milk
grated zest and juice of 1 lemon
1/2 English cucumber, grated or finely chopped
1/4 cup flat leaf parsley
kosher salt, to taste
fresh ground pepper, to taste

Steps:

  • Heat grill to high. If using cedar planks for fish, make sure to soak the planks for at least an hour before cooking. Combine the oil with the oregano in a blender and blend until smooth. Eason with salt and pepper to taste. Prepare the tzatziki sauce. Put the avocados, garlic, jalapeno, yogurt, lemon zest and lemon juice in the bowl of a food processor and process until smooth. Transfer the mixture to a medium bowl, stir in the cucumber and parsley, and season with salt and pepper. Cover and refrigerate until serving. Brush the fillets with the oregano oil and season with salt and pepper. Grill the salmon for about 3 minutes per side, or if cooking on plank grill until fish is done. While fish is grilling, brush the cut sides of the lemon with the oregano oil. Grill cut side down until golden. Serve the salmon with a dollop of avocado tzatziki and squeeze the grilled lemons over the top.

2 tablespoons minced garlic

1/4 teaspoon freshly ground black pepper
2 pounds boneless pork, cut into 1 1/2-inch strips or cubes
2 whole oranges, cut into wedges for the skewers
3 lemons, cut into wedges for the skewers
6 pita pocket rounds, sliced into two half-moon shapes
Iceberg or Romaine lettuce, shredded

1 tablespoon fresh lemon juice
1/2 cup extra-virgin olive oil
1 large clove garlic, minced
1 teaspoon kosher salt
2 cups plain yogurt (or low-fat)
1 medium cucumber, peeled, seeded and grated (about 1 cup)
1 avocado, halved, pitted and diced small

Steps:

  • To make the marinade: In a large glass bowl, whisk together the olive oil, lemon juice, orange juice, chili flakes, chili powder, garlic, salt, and black pepper. Add in the pork and toss to coat. Cover the bowl and refrigerate for at least 30 minutes (although I prefer to marinate for 3 hours or overnight). Soak the wooden skewers in a shallow pan of water for at least 1 hour. Remove the pork cubes from the marinade. Thread 3 or 4 pieces of marinated pork on the skewers, alternating the pork with small wedges of lemons and oranges. Place the skewers on an area of the grill with no direct flame. Continue to brush marinade during grilling, until the meat is browned, about 8 to 10 minutes, turning occasionally or to desired doneness. Transfer the pork from the skewers and place in pita pockets. Top the pork with shredded lettuce and avocado tzatziki.;
  • In a large bowl, whisk together the lemon juice, olive oil, garlic and salt. Whisk in the yogurt. Add the grated cucumber, diced avocado and mix well. Cover the mixture and chill for at least 1 hour.
