This dish is served in many restaurants in New England. You can use lobster, any type of fish you wish or no fish at all. It is very versatile.

1 lb scallops
1 lb medium shrimp
1 lb crabmeat
2 lbs boneless haddock
12 ounces shredded mozzarella cheese
2 1/2 cups Ritz cracker crumbs
1/2 cup butter (melted)
1 teaspoon garlic powder
1 1/2 teaspoons Worcestershire sauce

Steps:

  • In a well-buttered 9"x13" baking dish, layer seafood in the order listed; cover with cheese. Mix together the Ritz cracker crumbs, butter, Worcestershire sauce and garlic powder; spread over the cheese, covering top.
  • Bake uncovered at 350 degrees for 45 minutes. Serve the casserole with a wedge of lemon.

This is number 400 recipe that I have posted.I hope you seafood lovers will enjoy it. It's relative easy to make a bit expensive but every once in a while it feels good to splurge.

3/4 lb bay scallops or 3/4 lb sea scallops, if large cut in half horizontally,put in boiling water for about 4 minutes or until opaque
4 ounces canned crabmeat, membrance removed
3/4 lb medium-sized prawns, shelled,tail off,put in boiling water for about 2 minutes or until they have just turned pink
1/4 cup butter
1/4 cup flour
salt & pepper
13 1/2 ounces evaporated skim milk
1/4 cup whole milk
1 1/2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
1/2 teaspoon onion powder
1/2 cup cheddar cheese, grated
3 teaspoons butter, melted
1/4 cup dry breadcrumbs
1 teaspoon dry parsley flakes
2 tablespoons cheddar cheese, grated

Steps:

  • To Make Sauce-------------------------.
  • Melt butter in a saucepan, mix in flour, salt& pepper.
  • Stir in both the canned and whole milk, do this gradually so you do not get any lumps.
  • Add worcestershire sauce,mustard and onion powder.
  • Heat, stirring until it boils and thickens.
  • Add cheese, stir until melted and set aside.
  • Drain seafood well and add to the sauce.
  • Turn into an ungreased 2 quart casserole dish.
  • TOPPING-------------------------8r .
  • Stir crumbs and parsley into the 3 tsp melted butter.
  • Sprinkle over top.
  • Sprinkle the 2 tbsp cheese over the crumbs.
  • Bake uncovered 350f oven for about 25 minutes or until hot.
  • You can do this dish ahead of time, just leave off the topping until the last minute and then pop into the oven about 30 minutes before serving.

1 1/2 cups cooked mashed white potatoes (DO NOT USE MASHED SWEET POTATOES)
2 cups ham (cooked, chopped)
1/3 cup mayonnaise (not lowfat)
1 (10 1/2 ounce) can cream of mushroom soup
1 1/2 cups croutons, slightly crushed
1/4 cup milk
2/3 cup cheddar cheese (cubed)
dry breadcrumbs (for topping)
1/4 cup cheddar cheese, grated (for topping)

Steps:

  • Spray 2qt. casserole dish with non-stick vegetable oil spray.
  • Spread a good layer (about 1/2 inch thick) of mashed potatoes along bottom of the casserole dish.
  • In a medium sized mixing bowl, combine ham, mayonnaise, mushroom soup, croutons, milk and cheddar cheese.
  • Layer this on top of the potatoes.
  • Sprinkle top of casserole with grated cheddar cheese; then a slight layer of breadcrumbs.
  • Bake in 350 degree Fahrenheit oven for 30 to 35 minutes, or until top is nicely browned.
  • Serve with those leftover Thanksgiving rolls or biscuits!

The date on top of the page of this recipe is Dec. 14, 1995. I've been making it ever since and passed the recipe to many friends and family members. I usually put the salmon and/or haddock, cod in last so it will not all fall apart when mixing. I usually just use crotons for topping, plain or garlic. I serve this with white or wild rice, can also be served with pasta or alone...or with anything you want.

2 lbs cod or 2 lbs salmon
2 chicken bouillon cubes
6 tablespoons butter
6 tablespoons flour
1 cup cream (I use cereal cream)
2 egg yolks
1 cup grated cheddar cheese
1 cup mushroom (sliced)
1 tablespoon butter
1/8 teaspoon Worcestershire sauce
1 pinch cayenne pepper
3 cups breadcrumbs
2 tablespoons melted butter

Steps:

  • Bring 2 cups of water to a boil. Add raw fish and simmer 3 or 4 minutes. (longer if frozen).
  • Remove fish.
  • Dissolve chicken bouillon cubes in the cooking liquid. Pour into a two cup measure including any liquid from canned shellfish.
  • In a sauce pan, heat butter, stir in the flour and cook several minutes.
  • Gradually beat in the 2 cups of hot liquid. Continue to stir and cook until sauce thickens.
  • Add cheddar cheese, cook and stir until well blended.
  • Remove from heat.
  • Combine egg yolks and cream, beat with a fork and add slowly to the sauce while stirring vigorously.
  • Wash and slice mushrooms, cook in 1 tbsp butter.
  • Add the mushrooms, worchestershire sauce, cayenne pepper and shellfish to the sauce. Taste carefully and add salt if required.
  • Preheat oven to 450.
  • Pour mixture into 1 1/2 quart lightly greased casserole or individual scallop shells.
  • Toss bread cubes in melted butter and sprinkle over top.
  • Bake in the oven until bread cubes are golden. Approx 15 minute.

1 package (6 ounces) long grain and wild rice
1 pound frozen crabmeat, thawed, or 2-1/2 cups canned lump crabmeat, drained
1 pound cooked shrimp, peeled, deveined and cut into 1/2-inch pieces
2 celery ribs, chopped
1 medium onion, finely chopped
1/2 cup finely chopped green pepper
1 can (4 ounces) mushroom stems and pieces, drained
1 jar (2 ounces) diced pimientos, drained
1 cup mayonnaise
1 cup 2% milk
1/2 teaspoon pepper
Dash Worcestershire sauce
1/4 cup dry bread crumbs

Steps:

  • Cook rice according to package directions. Meanwhile, preheat oven to 375°., In a large bowl, combine the crab, shrimp, celery, onion, green pepper, mushrooms and pimientos. In a small bowl, whisk mayonnaise, milk, pepper and Worcestershire sauce; stir into seafood mixture. Stir in rice., Transfer to a greased 13x9-in. baking dish. Sprinkle with the dry bread crumbs. Bake, uncovered, until bubbly, 40-50 minutes.
