PEANUT BUTTER RICE KRISPIE COOKIES

These no-bake cookies are sweet, chewy, crunchy, and easy-to-make!!

Number Of Ingredients 6

1 cup granulated sugar
1 cup corn syrup
1 teaspoon vanilla extract
1 cup peanut butter (smooth or crunchy)
3 cups Rice Krispie cereal
course salt if desired

Steps:

  • Before getting started, make sure to gather all of your ingredients and measure everything out. Line a couple of large baking sheets with parchment paper
  • Add sugar and syrup in a saucepan over medium heat. Stirring often, bring to a low boil and cook for one minute.
  • Remove from heat and add the vanilla and peanut butter. Stir until peanut butter is melted and the mixture is smooth.
  • Stir in the cereal and mix until all of the cereal are coated with the mixture and everything is well combined.
  • Drop spoonfuls of the mixture onto the prepared baking sheets. Allow to cool for about 1 hour or until the cookies have firmed up. The cookies will continue to firm up more the longer they cool. Enjoy!
  • Sprinkle with salt if desired
  • Store in an airtight container on the countertop for 1 week.

6 cups crisp rice cereal
1 cup white sugar
1 cup peanut butter
1 cup corn syrup
1 tablespoon butter

Steps:

  • In a medium sauce pan, mix together sugar, peanut butter, and corn syrup. Be careful not to let it burn, or it will ruin the recipe. Stir mixture until well melted. Remove pan from heat.
  • Combine warm peanut butter mixture with crisp rice cereal.
  • Grease well a 9 x 13 inch pan with butter or margarine. Spread mixture in pan. Allow to cool. When mixture is no longer sticky to the touch, cut into bars.

1/2 cup raisins
2 tablespoons honey
shredded coconut (optional)

Steps:

  • Blend peanut butter and honey.
  • Work in as much of the dry milk as you need to make the mixture easy to handle and fairly stiff.
  • Pick up the mixture and knead in raisins, distributing them evenly throughout.
  • Roll this into a 1 inch thick, 10 inch long log.
  • Roll the log in coconut.
  • Chill several hours.
  • To serve, slice into rounds.
  • Store in the refrigerator.

1 cup light corn syrup
1/2 cup granulated sugar
1/2 cup light brown sugar
1 1/2 cups salted peanut butter
2 teaspoons pure vanilla extract
4 cups Rice Krispies

Steps:

  • Line a 9 x 13-inch baking pan with wax paper or baking parchment. Place the corn syrup and sugars in a large saucepan over medium heat and stir to combine. Bring to a boil. Remove from the heat.
  • Stir in the peanut butter and mix well to combine. Quickly stir in the vanilla and Rice Krispies. Spread into the lined baking pan. Cool and slice into squares.

This recipe was handed down from my great-grandmother. I'm not sure when traditional marshmallow krispie treats came on the scene, but this recipe could have preceded it! These are what I grew up on. I do not like marshmallows, so I find this recipe to be perfect. You can also top with melted chocolate if you like. Original recipe calls for 1 cup sugar, but I found it to be too sweet, so I cut it in half. You may wish to add more.

Warning! Addictive! I got this recipe out of our local newspaper. They melt in you mouth. These go into my holiday gift tins every year and they are always a big hit. This recipe makes about 150 pieces, so unless you want that many, you may want to halve it.

2 lbs white chocolate or 2 lbs almond bark
1 cup peanut butter
3 cups peanuts
3 cups miniature marshmallows
4 cups Rice Krispies

Steps:

  • Melt chocolate in a double boiler or in the microwave, being careful not to over cook.
  • Stir in peanut butter, blend well.
  • Mix with other ingredients until well blended.
  • Drop by teaspoonfuls onto waxed paper. (about the size of a small walnut).
  • Let stand until set.
