1 (2 pound) package frozen hash browns
1 (10.75 ounce) can condensed cream of potato soup
1 (10.75 ounce) can condensed cream of celery soup
1 (8 ounce) container sour cream
1 small finely diced onion
1 green bell pepper, minced
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease a 9x13 inch baking pan.
  • Spread frozen hash browns into the bottom of the prepared pan. Mix together potato soup, celery soup, onion, green bell pepper and sour cream; pour the mixture over the potatoes.
  • Bake in the preheated 300 degrees F (150 degrees C) oven for 60 minutes. Remove the pan from the oven, sprinkle with cheese, and bake another 30 minutes or until the cheese melts.

1 (30 ounce) package frozen hash brown potatoes, thawed
2 cups shredded cheddar cheese (I use some more)
1 chopped onion
salt and pepper
1 -2 green chili pepper, finely chopped, seeds removed
2 cups sour cream
1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
1/2 cup butter or 1/2 cup margarine, melted, divided
2 cups corn flakes, lightly crushed

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, combine the hash browns, cheese, onion, salt, pepper and chopped chilies.
  • In another bowl, combine the sour cream, soup and 1/4 cup of the butter.
  • Pour over potato mixture and mix gently to combine.
  • Transfer to a greased 3-qt. baking dish. Toss cornflakes and remaining butter; sprinkle over the top.
  • Bake, uncovered, for 45-55 minutes or until heated through.

2 lbs hash brown potatoes
1 small onion, diced
1 pint half-and-half (I use milk)
8 tablespoons margarine
9 ounces American cheese
1 (12 ounce) container cottage cheese

Steps:

  • Spread potatoes evenly into greased 9" x 13" baking pan.
  • Layer diced onion over potatoes.
  • In a saucepan heat half-and-half, margarine and cheese.
  • Cook until melted.
  • Stir in cottage cheese.
  • Pour sauce over potatoes.
  • Let stand at least 1 hour or overnight.
  • Bake at 350 degrees for 1 to 1 1/2 hours.

I've only made it a handful of times, much to my boyfriend's dismay for he loves this dish! It really is very good, but don't just take my word for it- try it for yourself!

1 (8 ounce) container sour cream
1/2 cup margarine, melted
3 tablespoons dried onion flakes

1 (32 ounce) package frozen hash brown potatoes, thawed
2 1/2 cups shredded cheddar cheese
2 cups Durkee onions

Steps:

  • Oven@ 350.
  • In a large bowl combine first 5 ingredients.

1 lb refrigerated or frozen shredded hash-brown potatoes, thawed
2 c whipping cream
1 1/2 c shredded cheddar cheese, divided
1/4 c sliced green onions (about 4 med.)
1 tsp salt
1/4 tsp black pepper

Steps:

  • 1. In a large bowl, combine the hash browns, cream, 1-1/4 cups of the cheddar, the onions, salt and pepper. Mix well.
  • 2. Lightly spray four 1-cup ramekins with nonstick cooking spray. Spoon the potato mixture into the prepared ramekins. Sprinkle with the remaining cheese.
  • 3. Bake in a preheated 350-degree oven until bubbly and golden brown and the potatoes are cooked, about 35-45 minutes.
  • 4. NOTE: If you prefer, prepare these in a 11x7-inch baking dish. Just increase the baking time by about 12 minutes.
