Pears are now used in all aspects of cooking. Try this salad that's made exciting with pears and a delicious Asian dressing! Adapted from Southern Living magazine.

2 cups shredded red cabbage
2 cups shredded romaine lettuce
3 red pears, sliced
2 medium carrots, shredded (about 1 cup)
1 green onion, chopped
2 teaspoons sesame seeds, toasted (optional)
1/4 cup olive oil or 1/4 cup vegetable oil
2 tablespoons rice vinegar
1 tablespoon soy sauce
2 teaspoons sugar
1/2 teaspoon toasted sesame oil
1/4 teaspoon dry crushed red pepper

Steps:

  • To make the dressing:.
  • Whisk the vinegar, soy sauce, sugar, sesame oil and red pepper with the oil. Set aside. (Makes 1/2 cup).
  • To make salad:.
  • Toss together the cabbage, lettuce, pears, carrots, and green onion in a large bowl, and drizzle with Asian Sesame Dressing, tossing gently to coat. Sprinkle with sesame seeds, if desired. Serve immediately.

Watercress Salad With Soy-Sesame Dressing image

1 bunch watercress
1 head endive
1/2 of an orange, peeled
1 clove garlic, crushed
1 teaspoon dark soy sauce
1 tablespoon red wine vinegar (or more to taste)
1 tablespoon dark sesame oil
1/4 cup extra-virgin olive oil
Coarse salt and freshly ground pepper to taste

Steps:

  • Trim the stalks from the watercress. Wash and spin dry the leaves. Rinse the endive and slice it lengthwise into thin slivers. Place the endive in a salad bowl with the watercress.
  • Remove the pith from the orange segments and cut them into small pieces.
  • In a small bowl, combine the garlic with the soy sauce, the vinegar and the sesame and olive oils. Crush the garlic into the dressing with a fork, and then remove it. Season the dressing to taste with salt and pepper.
  • Toss the salad in the dressing and serve.

2 c shredded romaine lettuce
2 c red cabbage, shredded
3 red bartlett pears, sliced
2 medium carrots,shredded (about 1 cup)
1 green onion, chopped
ASIAN SESAME DRESSING
1/4 c vegetable oil
2 Tbsp white wine vinegar
1 Tbsp soy sauce
2 tsp sugar
1/2 tsp sesame oil
1/4 tsp dried crushed red pepper
* 2 teaspoons sesame seeds, toasted (optional)

Steps:

  • 1. Toss your lettuce, cabbage, pears, carrots, and onion in a large bowl. Drizzle with asian dressing, tossing just enough to coat. Sprinkle with sesame seeds, if desired. Serve immediately.
  • 2. Dressing- Whisk all you ingredients together. Makes 1/2 cup.
