ARABIC COFFEE, THE SAUDI WAY
Somehow I find the idea of saffron in my coffee just a touch decadent but very nice, :D. Sweeten as/if you like.

Steps:
- Put 3 cups of water in a pot and bring to a boil.
- Add the coffee and boil over low flame. Turn the heat off after 5 minutes and leave the coffee to clear.
- Pour the coffee into a kettle, leaving the coffee to settle in the pot.
- Add in the cardamom and saffron to the kettle of coffee and boil once before serving in small cups.

- Combine the smashed cardamom pods, the water, and pulverized coffee beans in an Arabic coffeepot or a small saucepan. Bring to a boil over medium-high heat, reduce to low, and simmer, covered, for 15 to 20 minutes, until the grounds have settled and the coffee is very strong. Pour the coffee carefully into small cups, allowing the grounds to stay in the bottom of the coffeepot. You can strain the coffee through a fine sieve, if desired. Serve.
ARABIC COFFEE WITH ROSE WATER
The Persian Gulf was the location for given with this recipe. It should be appropriate to pretty much all of North Africa and the Middle East though. If your not familiar with rose water go very easy with it to start (no more than 2 Tbsp) and add more if you wish. Rose water is potent.

- Heat 6 cups of water in a large pan with the cardamom powder.
- 2. Before the water boils, add the coffee and stir several times. Leave to boil for a minute or two.
- 3. Remove from heat and leave for a few minutes for the coffee to settle.
- 4. Pour the coffee in a kettle but leave the settled coffee at the bottom of the pan. Add in the cardamom pods, saffron, and rosewater.
- 5. Place the kettle over low heat and when it starts to boil, remove and serve hot in small cups.

- In a brass coffee pot or regular sauce pan add all the ingredients. Bring to a boil (be careful, once it boils it boils over really fast).
- When it becomes frothy, remove from the fire and stir until the froth has receded, then place back on the fire and repeat 3 times.
- Turn off the stove and let the coffee rest for a couple minutes, allowing the coffee grinds to rest.
- Serve in small Arabic coffee cups, and enjoy!
