Five Ingredient Meatloaf image

Saw this recipe on a TV show,it sounded so yummy, forgot to note whose recipe it was and did not jot down exact measurements- so this is just from memory. Hope you like it!

Number Of Ingredients 6

1-1/2 lb good quality ground turkey, both light and dark mix
1 c sun-dried tomatoes packed in olive oil with garlic, divided
1-1/2 c bread crumbs
2 eggs, lightly beaten
1 Tbsp chopped fresh sage, or to taste
1 pinch salt and freshly ground pepper

Steps:

  • 1. Preheat oven to 375 degrees. Place sun-dried tomatoes and juices in food processor to puree. Put half of this into the turkey meat mix. I was able to purchase the sun-dried tomatoes already pureed.
  • 2. Mix in the breadcrumbs and eggs.Add chopped fresh Sage to this mix. Form into a meatloaf shape and place in a vegetable sprayed dish.
  • 3. Bake at 375 degrees for one hour. Remove from the oven and spread the reserved puree on top, then return it to the oven for 10 to 15 minutes.
  • 4. Another way to serve is to slice the meatloaf into one inch slices and add to a skillet to crisp on both sides for an extra layer of texture.
