BAVARIAN APPLE TORTE

Bavarian Apple Torte image

I entered this dessert at my church's Harvest Fest Pie Bakeoff, and the judges created a category right there and then just for this torte so they could give it a blue ribbon! My friend, Nancy, shared this recipe with me. For such an elegant presentation, it's very easy to make. In this version, you don't even need to mix the apples before putting them on the filling.

  • FILLING: Mix until creamy: 8 ounces Cream Cheese, 1/3 Cup Sugar, 1 Teaspoon Pure Vanilla Extract, 1/4 teaspoon Pure Almond Extract, 1 Egg. Pour into the crust.
  • APPLE LAYER: Peel, core and thinly slice Apples. Arrange over cream cheese mixture.

  • TOPPING: 1/2 Cup Sliced Toasted Almonds.

  • Cool and refrigerate.
  • Hint #1: I purchase almonds already sliced, and simply toast them in a non-stick skillet at medium-high heat until fragrant and just starting to turn golden, just 2 or 3 minutes.
  • Hint #2; Have all ingredients at room temperature, and make the recipe in the order as written, saving the apple-peeling until just before you sprinkle on the almonds.
  • Hint #3: Use real vanilla extract, not vanilla flavor. It makes a big difference in the quality of flavor.

Yield Makes 6 to 8 servings

Number Of Ingredients 16

Apple filling:
2 pounds Granny Smith apples, peeled, cored, cut into 1/2-inch wedges
1/3 cup sugar
1 cup hard apple cider or dry white wine
Crust:
8 cups fresh breadcrumbs made from crustless Italian or French bread (finely ground in processor)
1 cup hazelnuts, toasted , husked
10 tablespoons sugar, divided
4 teaspoons finely grated lemon peel

3/4 cup whole milk
6 tablespoons (3/4 stick) unsalted butter, cut into 1-inch pieces
Powdered sugar (for dusting)
Whipped cream
Special Equipment
9-inch-diameter tart pan with removable bottom

Steps:

  • For apple filling:
  • Arrange apples in even layer in heavy large skillet. Sprinkle with sugar, then pour apple cider over. Cover and cook over medium heat until apples are tender, gently turning apples occasionally, 8 to 10 minutes. Uncover; cook until juices evaporate, frequently but carefully turning apples to keep wedges intact, about 10 minutes. Remove from heat. Let apples cool completely in skillet. DO AHEAD: Can be made 1 day ahead. Transfer to bowl. Cover; chill.

Combine milk and butter in small saucepan. Stir over medium heat just until butter melts. Pour milk-butter mixture over breadcrumb mixture; stir until moistened (dough will be sticky). Let dough rest in bowl until liquid is absorbed, about 15 minutes. Transfer 1 cup dough to floured work surface. Gather into ball; flatten into disk. Press out to 9-inch round; wrap in plastic. Chill at least 1 hour for top crust. Transfer remaining dough to work surface. Gather into ball; flatten into disk. Press disk onto bottom and up sides of 9-inch tart pan with removable bottom, pushing crust up to extend 1/2 inch above sides. Cover; chill at least 1 hour. DO AHEAD: Can be made 1 day ahead. Keep chilled.
  • Preheat oven to 375°F. Fill crust with apple mixture. Place top crust over filling. Fold bottom crust overhang up over top crust edges, pressing together to seal.
  • Bake torte until crust is deep golden and crust begins to separate from sides of pan (top crust may crack), about 1 hour. Cool in pan on rack at least 2 hours. Carefully remove sides from tart pan. Transfer to platter. Dust with powdered sugar. Cut into wedges. Serve with whipped cream.

Apple Torte Recipes are a delicious and decadent dessert that feature the juicy, tart flavor of apples paired with a rich, buttery cake. These recipes vary in complexity and ingredients, but all share the common thread of featuring apples as a key ingredient.

What is a Torte?

Before diving into apple torte recipes specifically, it's important to understand what a torte is. A torte is a rich, dense cake that is often layered with either cream, fruit or nut fillings. It is a dessert that originated in Europe and has since become popular in many other parts of the world.

Ingredients in Apple Torte Recipes

Apple torte recipes typically contain similar ingredients to any other cake-like dessert, such as flour, sugar, eggs, and butter. However, the addition of apples creates a unique flavor profile and texture. Depending on the recipe, other ingredients may include cinnamon, nutmeg, vanilla, or even brandy or rum for added depth of flavor.
Types of Apples Used in Torte Recipes
When it comes to the type of apples used in torte recipes, there are a few popular varieties that lend themselves particularly well to baking. These include:
  • Juicy Apples: Apples that have a lot of juice, such as Honeycrisp, Braeburn or Fuji, work well in tortes because their moisture helps keep the cake from drying out.
  • Tart Apples: Apples that are tart, such as Granny Smith or Jonathan, balance the sweetness of the cake and add a tangy contrast to the rich flavor of the torte.
  • Sweet Apples: Apples that are sweet, such as Gala or Pink Lady, add a pleasant sweetness to the cake and can even reduce the amount of sugar needed in the recipe.

Variations of Apple Torte Recipes

While many apple torte recipes are fairly traditional, some variations include additional ingredients or unique preparations. Here are a few examples:
Upside Down Apple Torte
An upside-down apple torte is a variation where the apples are sliced and arranged in the bottom of the cake pan, and the cake batter is poured on top. Once the cake is baked and flipped over onto a serving platter, the caramelized apples create a beautiful design on the top of the cake.
German Apple Torte
A German apple torte is a traditional recipe that uses a shortbread crust and a layer of cinnamon-sugar apples on top. The cake batter is poured on top of the apples and baked until golden brown. This type of torte is often served with a dollop of whipped cream or vanilla ice cream.
French Apple Torte
A French apple torte is similar to the German recipe, but typically uses a more delicate pastry crust rather than a shortbread crust. The apples are layered on top of the crust and dusted with cinnamon and sugar before being covered with the cake batter and baked. This type of torte is often served with a light dusting of powdered sugar or a drizzle of caramel sauce.

Conclusion

Apple torte recipes are a versatile and delicious dessert with endless variations. They are perfect for autumn gatherings, holiday dinners, or any time of year when apples are in season. Using high-quality ingredients and choosing the right type of apples can take a simple torte recipe from ordinary to extraordinary.

Apple torte is a classic and delicious dessert that has been enjoyed for generations. This dessert is perfect for autumn when apples are in season and can be found everywhere. Making apple torte recipes can be daunting, but with the right tips, you can create a scrumptious dessert that everyone will love. Here are some valuable tips that you should keep in mind when making apple torte recipes.

Tip #1: Choose the Right Apples

The type of apples you use is essential to create the perfect apple torte. Some apples are too sweet, while others are too tart. You want to choose apples that are slightly tart and firm enough to hold their shape after baking. Good options include Granny Smith, Honeycrisp, and Pink Lady apples.

Tip #2: Consider the Crust

The crust is an essential part of apple torte recipes. You can use a premade pie crust or make one from scratch. If you decide to make the crust from scratch, use a recipe that is specifically designed for apple torte. A good tip is to use butter instead of shortening, as this will create a flakier and more flavorful crust.

Tip #3: Slice the Apples Thinly

To ensure that your apple torte has an even texture, make sure to slice the apples thinly. You can use a mandoline or a sharp knife to cut the apples. Slicing them too thick will result in a lumpy and uneven texture, while slicing them too thin will make them too mushy.

Tip #4: Add Flavorful Spices

Adding flavorful spices is crucial to making an unforgettable apple torte. Cinnamon, nutmeg, and allspice are great options that pair well with apples. You can also add a little bit of vanilla extract to the recipe for an extra boost of flavor.

Tip #5: Add a Crumb Topping

A crumb topping is a delicious addition to the apple torte recipe. It is easy to make and adds a crunchy texture to the dessert. Simply mix together flour, brown sugar, butter, and cinnamon until it forms a crumbly texture. Sprinkle it over the top of the apple torte before baking.

Tip #6: Bake at the Right Temperature

Baking the apple torte at the right temperature is essential to getting the desired texture and flavor. Most apple torte recipes call for baking at 375°F. Make sure to preheat your oven before baking and keep an eye on the torte to ensure that it doesn't burn.

Tip #7: Let it Cool

Allowing the apple torte to cool completely before slicing it is crucial. If you try to slice it when it's still hot, it will fall apart and lose its shape. Once it's cooled, you can slice it into wedges and serve it with whipped cream or vanilla ice cream.

Conclusion

Apple torte is a delicious and classic dessert that is perfect for autumn. Making apple torte recipes can be intimidating, but by following these valuable tips, you can create a scrumptious dessert that everyone will love. Remember to choose the right apples, consider the crust, slice the apples thinly, add flavorful spices, add a crumb topping, bake at the right temperature, and let it cool before slicing. With these tips, you are sure to make an unforgettable apple torte.
