APPLE STRUDEL MUFFINS

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
- In a medium bowl, mix flour, baking powder, baking soda and salt.
- In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
- In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
- Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

Definitely a comfort food! Tastes best warm out of oven with a little vegan margarine. Sort of a cross between apple pie and banana bread - but very subtle flavours. Recipe ends at line with 1 cup of water, the remaining ingredients are for the optional topping.

- Mix flour, baking powder and soda, salt and spices.
- In a separate bowl mix sugar, banana and oil.
- Add apples to flour mixture and ensure they are well coated.

Dry ingredients:

Instructions
1. Preheat your oven to 375°F. Grease a muffin tin with cooking spray or butter or line with muffin cups. 2. In a large bowl, sift together the flour, baking powder, baking soda, salt, and granulated sugar. Mix well and set aside. 3. In another bowl, beat the egg and add the melted butter, milk, and vanilla extract. Whisk until well combined. 4. Gradually pour the dry ingredients into the wet ingredients and stir until just combined. Do not overmix. 5. In a separate bowl, combine the chopped apples, brown sugar, flour, ground cinnamon, ground nutmeg, and softened butter. Mix well. 6. Gently fold in the apple mixture into the muffin batter, using a spatula. Do not overmix. 7. Spoon the batter into the prepared muffin tin, filling the cups about 2/3 of the way full.
