Unstuffed Pepper Soup image

This is a great alternative to stuffed peppers. Takes less time and tastes good too! A favorite in my house. The title is soup, it is a very thick soup.

Number Of Ingredients 10

2 lb ground beef
2 can(s) 140z cans diced tomatoes
1 can(s) 280z can tomato sauce
1 can(s) 14oz can tomato sauce
2 c chopped green peppers (can use a little more if you would like)
2 cubes of beef bouillon
2 c minute rice
1/4 c brown sugar
1 c water
salt, pepper, and garlic to taste

Steps:

  • 1. Brown ground beef in large pan. (same as what you would make chili in) Add Peppers, tomatoes, tomato sauce, beef bouillon, brown sugar, water, salt pepper and garlic. Bring all to a boil until peppers are to desired tenderness. I normally just let it cook on stove top for little while (maybe 30 min...little longer if you want)
  • 2. Add rice. Serve when rice is cooked and tender. Great with garlic bread
