Time 3h55m

Number Of Ingredients 12

1 white cake (prepared in a 13×9 baking dish)
1 cup light brown sugar, packed
2 cups peeled & diced apples
¼ cup water
1 teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon kosher salt
14 ounce can sweetened condensed milk
1 box (3.4 ounce) Instant vanilla pudding mix
2 cups milk
1 teaspoon cinnamon
12 ounce whipped topping, thawed

Steps:

  • Prepare white cake according to box directions for a 13×9 cake.
  • While cake is baking, work on cooking the apples. In a large skillet, whisk together the brown sugar with water, cinnamon, nutmeg and salt. Heat over medium high heat until bubbly, then add diced apples. Reduce heat to low and simmer apples about 12-15 minutes.
  • When cake is done baking, poke holes all over (I use a meat thermometer, you can also use a wooden spoon handle or fork). Pour can of sweetened condensed milk over hot cake. Then pour apple mixture. Spread and smooth until apples are evenly disbursed over top of cake and liquids have drained into the poked holes of the cake.
  • Refrigerate 3-4 hours or overnight.
  • While cake is in refrigerator, whisk the vanilla pudding with milk and cinnamon until smooth. Refrigerate until ready to serve.
  • When ready to serve cake, combine pudding mixture with thawed Cool Whip. Spread over cake, slice and serve. ENJOY!

Apple pie is a classic American dessert that has been around for centuries. It is a staple in every baker's repertoire and a favorite treat among people of all ages. However, there have been several variations of traditional apple pie recipes that have emerged over the years. One such recipe that has become increasingly popular is the "apple pie in a poke" recipe.

What is "Apple Pie in a Poke" Recipe?

Apple pie in a poke is a dessert recipe that is similar to traditional apple pie, but with a unique twist. Instead of baking the pie in a traditional pie dish, the recipe involves wrapping individual portions of the pie in aluminum foil or parchment paper and baking them in a poke or poke bag. The poke method allows the ingredients to steam and lock in their flavors, resulting in a juicy and flavorful apple pie.

The Ingredients

The ingredients for apple pie in a poke recipe are relatively similar to traditional apple pie recipes. The key difference is the way in which they are layered and prepared. The ingredients for apple pie in a poke typically include:
1. Apples
The primary ingredient in apple pie is, of course, apples. When making apple pie in a poke recipe, it is recommended that tart apples such as Granny Smith be used. They have a firm texture that holds up well during the baking process.
2. Pie Dough
The crust of the apple pie is an integral part of the recipe. In apple pie in a poke recipe, it is essential to have a firm, flaky crust that can hold up during the baking process. Pie dough typically contains flour, butter, salt, sugar, and ice water.
3. Cinnamon and Sugar
Cinnamon and sugar add flavor and sweetness to the pie filling. They are typically added to the apples before they are layered on top of the crust.
4. Lemon Juice
A little bit of lemon juice is added to the apples to add a tangy flavor to the pie filling. It also helps to prevent the apples from turning brown.

The Process

Making apple pie in a poke recipe is relatively simple. The process involves the following steps:
1. Prepare the Apples
Peel and core the apples and cut them into thin slices. Add cinnamon, sugar, and lemon juice to the apples and mix well.
2. Prepare the Pie Dough
Roll out the pie dough and cut it into circles large enough to wrap the apple filling completely.
3. Layer the Apples on the Pie Dough
Place a spoonful of apple filling on each piece of dough, leaving enough space around the edges to seal the dough together.
4. Fold and Seal the Pie Dough
Fold the dough over the apples and seal the edges together by crimping them with a fork or your fingers.
5. Bake the Pies in a Poke Bag
Wrap each pie in aluminum foil or parchment paper and place it in the poke bag. Bake the pies in the oven for approximately 30-45 minutes, or until the crust is golden brown.

Conclusion

Apple pie in a poke recipe is an alternative way to enjoy the classic dessert. The steaming method ensures that the flavors are locked in, resulting in a juicy and flavorful treat. The recipe is relatively easy to make and requires minimal preparation time. With a few simple ingredients and the right cooking technique, you can enjoy a delicious apple pie in a poke treat in no time.
Apple pie in a poke is a delicious and easy-to-make dessert that combines the deliciousness of apple pie with the convenience of a portable snack. The recipe calls for ingredients such as apples, cinnamon, sugar, and pie crusts, which, when combined, create a golden-brown crust with a sweet, gooey filling. However, making a perfect apple pie in a poke can be tricky, and so, in this article, we will share some valuable tips that will help you make a perfect apple pie in a poke recipe.

Choosing the Right Apples

The choice of apples is an important factor that determines the taste and texture of your apple pie in a poke recipe. You should choose apples that are firm, tart, and juicy, as these apples will hold their shape while cooking and provide a tangy flavor. Some of the best apples to use for this recipe include Granny Smith, Honeycrisp, Braeburn, and Jonathan apples.

Preparing the Apples

Before using the apples in your apple pie in a poke recipe, it's important to prepare them properly. This includes peeling, coring, and slicing them into thin, uniform pieces. You should aim for slices that are about 1/4-inch thick, as this will ensure that they cook evenly and are not too chunky.

Seasoning the Apples

The seasoning of the apples is another important factor that determines the taste and flavor of your apple pie in a poke recipe. Most recipes call for a mixture of cinnamon, sugar, and flour, which helps absorb the juices released by the apples during cooking and thickens the filling. You can also add a pinch of nutmeg, cloves, or allspice, to enhance the flavor of the apples further.

Choosing the Right Pie Crusts

Pie crusts are an integral part of any apple pie in a poke recipe. You can either make your own pie crusts or buy pre-made ones from the store. If you're making your own pie crusts, make sure to use chilled butter or shortening, as this will prevent the dough from becoming too soft and sticky. You can also add a bit of sugar or cinnamon to the dough to make it more flavorful.

Assembling the Pie in a Poke

To assemble the apple pie in a poke, you'll need to roll out the pie crusts and cut them into circles that are about 6 inches in diameter. Then, add a few slices of apples on one half of the circle, leaving a bit of space around the edge. Sprinkle the apple slices with cinnamon, sugar, and flour, and then fold over the other half of the crust to cover the apples. Use a fork to crimp the edges and seal the pie shut. Repeat this process with the remaining pie crusts and apple slices.

Baking the Apple Pie in a Poke

After assembling the apple pie in a poke, you'll need to bake them until they are golden-brown and crispy. Preheat your oven to 375°F and place the pies on a baking sheet lined with parchment paper. Brush the tops of the pies with egg wash, and sprinkle them with a bit of sugar for extra sweetness. Bake the pies for 30-35 minutes, or until they are golden-brown and the filling is bubbly. Let the pies cool before serving.

Serving Suggestions

Apple pie in a poke tastes best when served warm with a scoop of vanilla ice cream or whipped cream on top. You can also dust the pies with a bit of powdered sugar for a fancy touch. Alternatively, you can serve them at room temperature as a portable snack or breakfast treat.

Conclusion

Making apple pie in a poke can be a fun and rewarding experience, as you get to enjoy delicious, homemade pies in a convenient, portable format. By following these tips, you can ensure that your apple pie in a poke turns out perfectly every time, with a crispy crust and a sweet, gooey filling. So, next time you're in the mood for something sweet and tasty, give apple pie in a poke a try, and enjoy the delicious flavors of fall in every bite.
