MEDITERRANEAN NACHOS image

Number Of Ingredients 8

4 cups pita chips
2 tbl roasted garlic hummus, divided
2 tbl roasted red pepper hummus, divided
10 grape tomatoes, halved
1/4 cup zucchini, cut into 1/4 inch chunks
2 tbl chopped Greek olives
2 tbl chopped pepperoncinis
1 1/2 cups shredded mozzarella

Steps:

  • 1. Preheat oven to 375 degrees. 2. Place pita chips in a baking dish. 3. Top with small spoonfulls of both hummus. 4. Sprinkle tomatoes, zucchini, olives & pepperoncinis over the chips. Top with mozzarella. 5. Bake 15-20 minutes or until cheese has melted and edges begin to brown until warm.
