2 tablespoons all-purpose flour
1 tablespoon lemon juice
1 teaspoon ground cinnamon

FILLING:
4 ounces cream cheese, softened
1/4 cup sugar
1 egg
1 tablespoon all-purpose flour
1 tablespoon milk
TOPPING:
3/4 cup quick-cooking oats
2/3 cup all-purpopse-flour
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
5 tablespoons cold butter

Steps:

  • In a 2-qt. microwave-safe dish, toss the first six ingredients. Microwave, uncovered, on high for 6 minutes, stirring once. In a bowl, beat cream cheese and sugar. Add eggs, flour and milk; mix well. Spread evenly over apples., In a bowl, combine the oats, flour, brown sugar and cinnamon. Cut in butter until crumbly. Sprinkle over filling. Microwave, uncovered, on high for 4-1/2 minutes or until apples are tender. rotating dish twice. Serve warm.

1 1/2 cups chopped walnuts, toasted
1/4 cup maple syrup
Two 8-ounce packages cream cheese, cut into cubes
2 cups crushed gingersnap cookies
1 cup old-fashioned rolled oats
1/4 cup sugar
1 stick (8 tablespoons) unsalted butter, melted
Ice cream, for serving

1 1/2 teaspoons baking powder

Steps:

  • Spoon the apple filling into a shallow baking dish (1 qt. size works well).

  • Have previously washed your lettuces and spun dry, or put in a large, clean pillow case and swung over your head for a few seconds (this really works! The centrifugal force gets the water off the leaves and the pillow case absorbs it- don't let anyone see you doing this- they'll think you're insane).
