CRANBERRY APPLE CASSEROLE

Cranberry Apple Casserole image

This dish can easily be prepared in advance and chilled in the refrigerator until ready to bake and serve. I came across a recipe from Cooking Light which I adjusted to include more common ingredients that I had in my pantry. It's a great dish for using up all those leftover dinner rolls and cranberry sauce (or cranberry relish) from your holiday dinner. The great thing about this dish is that it's rather verastile. It's not so sweet, so it can be served as a dinner side dish. Or, it can easily be served as a tart dessert because it is similiar in appearance and taste as a fruit cobbler. NOTE: For Step #6...The longer the dish sits, the thicker the dish will turn out after baking. Setting it aside for the minimum of 20 minutes will result in a cobbler-like consistency. But if you prepare this dish in advance (several hours to a day before baking) and letting it chill in the refrigerator will result in a quiche-like consistency.

Time 1h

Yield 1 casserole, 12 serving(s)

Number Of Ingredients 13

2 tablespoons butter
3 medium apples, diced
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 cup brown sugar
6 crescent rolls (or any day-old leftover dinner rolls)
2 cups whole berry cranberry sauce
1 1/4 cups apple juice or 1 1/4 cups apple cider
1 1/4 cups milk (I use 1%)
1/2 teaspoon grated lemon peel
1/4 teaspoon ground nutmeg
6 large eggs, beaten
1/4 cup chopped walnuts or 1/4 cup sliced almonds

Steps:

  • Preheat oven to 350°. LIghtly coat the bottom of a 9x13-inch baking dish with a non-stick cooking spray.
  • Melt butter in a large skillet. Add the diced apples, cinnamon, cloves and brown sugar. Cook over medium heat for 10 minutes or until the apples are tender. Remove from heat and set aside.
  • Slice crescent rolls in half lengthwise. Arrange crescent roll halves in the bottom of the baking dish, with the cut side up (crust side down).
  • Spread the cranberry sauce evenly over the tops of the dinner rolls.
  • Spread the apple mixture evenly over the cranberry layer.
  • Add the apple cider, milk, lemon peel, nutmeg, and beaten eggs to a bowl, and blend well with a whisk. Pour the milky mixture over the top of the cranberry and apple layers. Sprinkle the nuts over the top. Let stand for at least 20 minutes, or cover the dish and place it in the refrigerator for several hours), to allow the milky mixture to soak into the rolls. JUST A QUICK NOTE ABOUT THIS STEP -- The longer the dish sits, the thicker the dish will be after baking. Setting it aside for at least 20 minutes will result in a cobbler-like consistency. But if you prepare this dish in advance (several hours to even a day ahead of time) and letting it chill in the refrigerator (covered) will result in a thicker, quiche-like consistency.
  • Bake at 350° for 50-55 minutes. Remove the baking dish from the oven, and let the dish stand for about 10 minutes before serving.
  • This can be served immediately as a side dish (while still hot), or the dish can be allowed to cool completely and served as a tart dessert topped with ice cream or whipping cream.

Tips for Making Delicious Apple a Day Casserole Recipes

Casserole recipes are a fantastic way to make a delicious meal that can serve many people with minimal prep time. One type of casserole that has grown in popularity in recent years is the apple a day casserole. These recipes typically feature a filling mixture of apples, spices, and sometimes other fruits or nuts, baked in a dish with a topping of some kind. If you're new to making apple a day casseroles, or just looking to improve your technique, there are a few valuable tips you should keep in mind. Here are some suggestions to help you make the most delicious apple a day casseroles possible!
Choose the Right Apples
One of the most important factors in making a delicious apple a day casserole is choosing the right apples. Not all apples are created equal when it comes to baking - some are better suited for pies, while others are great for snacking. For apple casseroles, you want to choose apples that will hold up well to baking and won't turn mushy. Some great apple varieties for baking include Honeycrisp, Granny Smith, Rome, and Jonathan apples. These apples have a firm texture and hold their shape well when baked. Avoid using apples that are too soft or mealy, like Red Delicious, as they will break down and turn to mush when cooked.
Don't Overdo the Sugar
Apple a day casseroles are often made with a generous amount of sugar to balance out the tartness of the apples. However, it's important not to overdo it with the sugar, as too much can overpower the flavor of the fruit and make the casserole too sweet. A good rule of thumb is to use about 1/3 cup of sugar for every four cups of sliced apples. You can adjust the amount of sugar up or down depending on the sweetness of the apples you're using and your personal taste preferences. If you prefer a less sweet casserole, you can also try reducing the sugar and adding some other sweeteners, like maple syrup or honey.
Add Some Spice
In addition to sugar, another essential ingredient in apple a day casseroles is spice. A combination of cinnamon, nutmeg, and allspice is a classic choice, but you can also experiment with other flavors like ginger, cardamom, or cloves. Adding a pinch of salt can also help bring out the flavors of the apples and spices. When adding spices, start with a small amount and taste the mixture as you go. It's easy to overdo it with spices, especially if you're using strong flavors like cloves or ginger. A little goes a long way, and you can always add more if needed.
Consider Mixing in Other Fruits or Nuts
While apples are the star of the show in apple a day casseroles, there's no reason you can't mix in some other fruits or nuts to add variety and texture. Pears, cranberries, raisins, or chopped nuts like pecans or walnuts are all great additions to apple casseroles. If you're adding other fruits, try to choose ones that will complement the flavor of the apples and won't turn to mush when baked. Cranberries, for example, add a tartness that pairs well with the sweetness of apples, while pears and raisins add a milder sweetness and a softer texture.
Choose the Right Topping
The topping for apple a day casseroles can vary widely, depending on the recipe and personal preference. Common choices include streusel toppings made with butter, sugar, and flour, or a crust made with pastry dough or biscuit mix. When choosing a topping, consider the overall flavor and texture of the casserole. If you've used a lot of sugar and spices in the filling, you might want to go with a simpler topping that won't overpower those flavors. A streusel topping with oats and nuts can add some extra crunch and texture, while a pie crust topping will be more buttery and flaky.
Bake the Casserole Just Right
Finally, the key to a delicious apple a day casserole is getting the baking time and temperature just right. Overbaking can cause the filling to become dry and overcooked, while underbaking can leave it too soupy and undercooked. Before baking your casserole, make sure your oven is preheated to the correct temperature listed in the recipe. You should also use a dish that is the right size for the recipe, as the filling needs space to cook evenly. Check the casserole periodically as it bakes, and use a toothpick or small knife to test the apples for doneness. They should be soft but still hold their shape and not be too mushy. If the topping is browning too quickly, you can cover the casserole with foil to prevent burning. With these tips in mind, you'll be well on your way to making delicious and flavorful apple a day casseroles that will be a hit with everyone at the dinner table!
