MISS BROWN'S HOECAKES

Miss Brown's Hoecakes image

Hoecakes (or as my grandmother calls them, fried bread) are the perfect combination of my favorites: a pancake and cornbread. Served with maple syrup or a simple drizzle of honey, this dish can be served at breakfast or as a side item during dinner.

Provided by Food Network

Categories     side-dish

Time 25m

Yield 5 servings (10 small hoecakes)

Number Of Ingredients 10

2 large eggs
1 cup buttermilk, plus more if needed
1 cup yellow cornmeal
1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1/4 cup vegetable oil, plus more for the skillet
Unsalted butter, for the skillet, plus more for serving, optional
Syrup, for serving, optional

Steps:

  • Preheat the oven to 200 degrees F. Line a baking sheet with a wire rack.
  • Whisk the eggs and buttermilk in a medium bowl until beaten and combined. Whisk together the cornmeal, flour, sugar, baking powder and salt in a large bowl.
  • Combine the wet ingredients with the dry ingredients. Add a splash of water or an extra splash of buttermilk if it feels too thick. Add 1/4 cup of the vegetable oil and stir until just combined, being careful not to overmix. This is a thick batter.
  • Melt equal parts (about 2 tablespoons each) butter and vegetable oil in a large cast-iron skillet or griddle over medium heat. Working in batches, use an ice cream scoop to add small scoops (about 3 tablespoons each) of the batter to the skillet. Cook the hoecakes until bubbles start to appear in the face-up batter, 2 to 3 minutes. Flip and cook for another 1 to 2 minutes.
  • Remove the hoecakes to the wire rack and keep in the oven until they are all finished. Wipe out the skillet in between batches and add more butter and oil before repeating with the remaining batter.
  • Serve hot and fresh with butter and maple syrup if desired.

If you want to make this cake at home, there are some valuable tips that you need to keep in mind. Here are some tips that will help you make the best Amish Ho Ho Cake ever.
1. Use High-Quality Ingredients:
The key to making a delicious Amish Ho Ho Cake is to use high-quality ingredients. Use fresh eggs, butter, and milk for making the cake batter. Use high-quality chocolate for the ganache. Use fresh heavy cream for the filling. Using low-quality ingredients can affect the taste of the cake.
2. Use Room Temperature Ingredients:
Make sure all the ingredients are at room temperature before you start making the cake batter. Cold eggs and butter will not mix well, resulting in a lumpy batter, which can affect the texture of the cake. Room temperature ingredients will also help the cake to rise better.
3. Use a Good Quality Chocolate:
For the chocolate ganache, it is essential to use a good quality chocolate. The chocolate should be at least 70% cocoa solids. Using low-quality chocolate can affect the texture of the ganache and the taste of the cake.
4. Use a Good Quality Whipped Cream:
The filling of Amish Ho Ho Cake is made with whipped cream. Use high-quality heavy cream for the filling. The cream should be cold before whipping. Over-whipped or under-whipped cream can affect the texture of the filling.
5. Bake the Cake at the Right Temperature:
Bake the cake at the right temperature. Follow the recipe instructions carefully. Over-baking or under-baking the cake can affect the texture of the cake. Use an oven thermometer to ensure that the oven is at the right temperature.
6. Let the Cake Cool Completely:
It is essential to let the cake cool completely before filling and frosting it. If the cake is warm, the whipped cream filling will melt, resulting in a messy cake. A cooled cake will also help the ganache to set better.
7. Use a Cake Leveler:
To ensure that the layers of the cake are even, use a cake leveler for cutting the cake into layers. A cake leveler will help you to cut straight and even layers, resulting in a beautiful and visually appealing cake.
8. Use a Piping Bag for the Filling:
Use a piping bag for the whipped cream filling. A piping bag will help you to evenly distribute the filling between the layers of the cake, resulting in a delicious and evenly filled cake.
9. Let the Ganache Set Properly:
Let the chocolate ganache set properly before slicing the cake. The ganache should be firm to touch. This will ensure that the cake slices cleanly and that the ganache doesn't run off the sides of the cake.
10. Decorate the Cake:
Decorate the cake with chocolate shavings, sprinkles, or fresh fruits. A well-decorated cake will look beautiful and will be visually appealing.
