After-Thanksgiving Turkey, Sweet Potato and Bacon Chowder image

I had this at a church function and searched out the person who brought it, so I could request the recipe. This is a fantastic recipe for using up leftover Thanksgiving turkey. Or, if you don't have any leftovers, it's also very good with rotisserie chicken from the grocery store.

Time 35m

Yield 6 serving(s)

Number Of Ingredients 14

5 slices lean smoked bacon
1 cup chopped onion
3/4 cup chopped celery
2 cups cubed sweet potatoes, 1/2-inch dice
kosher salt
black pepper
4 cups chicken broth or 4 cups turkey broth, divided
1/4 teaspoon dried thyme
1/8 teaspoon dried rubbed sage
3 tablespoons flour
1 1/2 cups half-and-half
2 -2 1/2 cups roasted turkey, cut into 1/2-inch dice
fresh sage (to garnish)
fresh thyme sprig (to garnish)

Steps:

  • In large, heavy pot set over medium heat, saute bacon until browned and crisp, 3 to 4 minutes. Remove to drain on paper towels. Crumble coarsely and set aside. Pour off all but 2 T of drippings in pan.
  • Add onion and celery to same pot, still over medium heat.
  • Saute, stirring, 2 minutes. Then add sweet potatoes, 3/4 teaspoons salt and 1/2 teaspoons pepper. Saute, stirring, until slightly softened, 3 to 4 minutes. Add 3 1/2 cups of the broth, the thyme and sage and bring mixture to a simmer.
  • While mixture is coming to a simmer, place flour in a small bowl and whisk in remaining 1/2 cup stock to form a slurry into soup once it comes to a simmer. Reduce heat and cook at a simmer until vegetables are tender, but not mushy, about 10 minutes.
  • Whisk in the half and half, bring mixture to a simmer and cook 1 minute. Add turkey and cook 1 to 2 minutes to warm through. Taste and season with more salt and pepper if needed.
  • The soup can be prepared 1 day ahead; cool, cover and refrigerate. Reheat over medium heat, stirring often.
  • Serve chowder in 6 soup bowls and garnish each serving with some crumbled bacon and, if desired, with a fresh sage and thyme sprig.

Number Of Ingredients 18

6 slices bacon (4 ounces)
1 medium yellow onion, chopped
1 medium carrot, sliced into 1/4-inch thick rounds (halved lengthwise if large)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 red bell pepper, seeded and chopped
1/2 medium jalapeño, finely chopped, plus more to taste
1 teaspoon ground cumin
6 cups (48 ounces) homemade or store-bought low-sodium chicken or turkey broth
1 medium sweet potato (about 1 pound), peeled and cut into 1/2-inch cubes
Two 4-ounce cans mild diced green chiles, drained
2 teaspoons dried oregano
2 dried bay leaves
4 cups shredded turkey or rotisserie chicken
10 ounces frozen corn, thawed
3/4 cup half-and-half, plus more to taste
Sliced scallions, for serving
Chopped parsley, for serving

Steps:

  • In a large pot over medium heat, cook bacon until crisp, 8 to 10 minutes. Drain on a paper towel and crumble into small pieces and set aside, reserving the fat in the pot.
  • Pour off all but 1 tablespoon fat, return the pot to medium heat, and add onion, carrot, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cook, stirring occasionally, until softened, about 5 minutes. Add bell pepper and cook, stirring occasionally, for 3 minutes more. Add jalapeño and cumin and cook, stirring, 1 minute more.
  • Add broth, sweet potato, chiles, oregano, and bay leaves and bring to a simmer. Cook until sweet potato is tender, about 10 minutes. Stir in the turkey or chicken and corn and cook until warmed through, 3 to 5 minutes. Add 1/2 teaspoon salt, 1/4 teaspoon pepper, and half-and-half. Continue to cook until just warmed through. Taste and adjust seasoning, thinning the chowder with another 1/4 cup half-and-half, if desired.
  • Serve chowder topped with crumbled bacon, scallions, and parsley.

Thanksgiving Traditions

Thanksgiving is a time to gather with family and friends and enjoy a traditional feast together. The centerpiece of most Thanksgiving dinners is a roasted turkey, which is often accompanied by side dishes like sweet potatoes and bacon. While these dishes are delicious on their own, creative cooks have found a new way to enjoy them by combining them into a rich and creamy chowder.

A New Twist on Thanksgiving Leftovers

The day after Thanksgiving marks the beginning of the holiday season and is often a time when families come together to enjoy each other's company and celebrate. It is also a time when leftovers from the previous day's feast are plentiful. Instead of serving the same dishes in the same way, why not try something new by turning your leftovers into a savory chowder?
After Thanksgiving Turkey Sweet Potato and Bacon Chowder Recipes
Homemade chowder is easy to make and can be customized to your liking. Here are a few recipe ideas to get you started:

Classic Chowder

For a classic chowder, start by sautéing diced onions and celery in butter until they are soft. Add in diced sweet potatoes and cook until they are tender. Pour in chicken broth and bring to a boil, then lower the heat and let the mixture simmer until the sweet potatoes are cooked through. Add in diced turkey and cooked bacon, along with heavy cream and a pinch of salt and pepper. Simmer for a few minutes until the chowder is heated through and serve hot.

Cheesy Chowder

For a cheesy chowder, start by following the recipe for classic chowder listed above, but add in shredded cheddar cheese as you stir in the heavy cream. Let the cheese melt into the chowder, stirring constantly to prevent burning. Garnish with chopped green onions or chives and enjoy!

Spicy Chowder

For a spicy chowder, start with the same base as the classic chowder, but add in diced jalapeño peppers and cumin during the sautéing process. Instead of heavy cream, use coconut milk to add creaminess while also giving the chowder a Thai-inspired twist. Serve with a dollop of sour cream and a sprinkle of chopped cilantro.

Vegetarian Chowder

For a vegetarian version of the chowder, simply omit the turkey and bacon from the classic recipe and add in more sweet potatoes and diced carrots for extra vegetables. Instead of chicken broth, use vegetable broth for a richer flavor. You can also add in other vegetables such as corn, green beans, or peas to make the chowder even heartier.

The Perfect Meal for Cold Weather

After Thanksgiving, the weather is often colder and the nights are longer. What better way to warm up than with a hearty bowl of chowder? You can make a batch for a cozy night in with family or friends, or freeze the leftovers in individual portions to enjoy throughout the winter season.

In Conclusion

After Thanksgiving, don't let your leftovers go to waste! Try turning them into a delicious chowder recipe that is sure to warm the hearts (and stomachs) of everyone at the table. Whether you like classic, cheesy, spicy, or vegetarian chowder, there is a recipe out there for everyone. So gather your ingredients, start cooking, and enjoy the rich, creamy goodness of a sweet potato and bacon chowder!
After Thanksgiving, invite your friends and family over to indulge in a hearty and delicious "Sweet Potato and Bacon Chowder" made from leftover turkey. This recipe is quick and easy to make and perfect for cold weather. Here are some valuable tips to help you make the perfect Thanksgiving leftover chowder.

Tip 1: Choose the Right Ingredients:

The ingredients you choose for your chowder are essential in bringing out the perfect blend of flavors. Sweet potatoes and bacon are the primary ingredients that make this recipe stand out. Make sure to pick the right type of sweet potato that is creamy and smooth in texture. Choose meaty pieces of turkey for added flavor and texture. Use fresh and crisp bacon to enhance the taste of your chowder.

Tip 2: Pre-Cook your Turkey:

Leftover turkey has already been cooked, and it is vital to be mindful of how you use it in your chowder. Instead of using it right away, pre-cook your turkey by sautéing it in a skillet with butter, salt, and pepper. This added step ensures that the turkey is adequately cooked and seals in its flavors.

Tip 3: Mindfully Cook the Vegetables:

When making the chowder, remember that the vegetables are the foundation of the dish. Be mindful of the size of the sweet potato cubes, and don't overcook them as this causes them to break apart and spoil the texture of your chowder. Saute your onions and garlic until they are nicely browned to bring out their flavors.

Tip 4: Choosing the Right Liquids:

When choosing the liquids for your chowder, the most important thing to remember is not to add too much liquid. This can result in a watery soup instead of a thick and creamy chowder. Use a combination of broth and heavy cream, and add the liquids gradually until you get the desired consistency.

Tip 5: Season Your Chowder:

Seasoning your chowder is essential to bringing together all of the flavors. Use a combination of bay leaves, thyme, salt, and pepper to enhance the taste of your chowder. Be mindful of how much salt you use, as the bacon already contains salt, and you don't want to overpower the overall taste.

Tip 6: Garnish Your Chowder:

The key to making your chowder look as good as it tastes is by garnishing it well. Garnish your chowder with a drizzle of olive oil, chive, and crispy bacon bits on top. This adds a pop of color to your chowder and makes it look more appetizing.

Tip 7: Store Your Leftovers:

If you have leftovers, you can easily store your chowder in the refrigerator. Make sure to use an airtight container, and the chowder can stay for up to 4-5 days. Reheat gently on low heat, and you are ready to indulge in your tasty leftovers.
Conclusion:
Making "Sweet Potato and Bacon Chowder" from leftovers can be a fun and easy way to use up your Thanksgiving leftovers. With these valuable tips, you can create a delicious and hearty chowder that is perfect for cold weather. Remember to choose the right ingredients, pre-cook your turkey, mindfully cook your vegetables, use the right liquids, season your chowder, garnish it well, and store your leftovers properly. With these tips, you can make the perfect chowder every time.
