BEST REUBEN SANDWICH

Best Reuben Sandwich image

This Reuben sandwich recipe is very hearty. When you take one bite of the buttery grilled rye bread, the hot sliced corned beef with melted cheese, tangy sauerkraut, and Thousand Island dressing, you're in sandwich heaven. Pick up sliced corned beef from the deli or use homemade St. Patrick's Day corned beef. Either way, this...

Provided by Susan Bartley

Categories     Sandwiches

Time 35m

Number Of Ingredients 6

1 1/2 lb thinly sliced corned beef
8 slice Swiss cheese
1 jar(s) sauerkraut
8 slice dark rye bread or marbled rye bread
1 c Thousand Island dressing
6 Tbsp butter, melted

Steps:

  • 1. If preparing your own corned beef, you will want to slow cook a 3 pound flat cut corned brisket on high for about 6 hours.
  • 2. Add a dark stout beer; one bottle will be more than enough. It gives your corned beef a wonderful flavor.
  • 3. If you cook your own corned beef you will want to completely chill it so you can slice it thin. I cook my corned beef a couple days before I plan on using it.
  • 4. Slice the corned beef into thin slices.
  • 5. Grill or heat up your corned beef before assembling the sandwiches.
  • 6. To assemble the Rueben, lay out the rye bread and brush one side of each slice with butter.
  • 7. Turn over bread and spread both pieces of the bread with a layer of Thousand Island dressing.
  • 8. Lay a piece of Swiss cheese on each piece of bread.
  • 9. Then put desired amount of corned beef on one of the slices of bread.
  • 10. Followed by about 1/3 to 1/2 cup sauerkraut.
  • 11. Put the other slice of bread and cheese on top and grill until golden brown on either side.
  • 12. Be very careful not to overcook. You don't want to burn your sandwich.
  • 13. Now cut in half, serve and enjoy!

REUBEN SANDWICH

Reuben Sandwich image

Like many classic dishes, the Reuben sandwich has multiple origin stories: Some accounts trace its origins to the since-shuttered Reuben's delicatessen in New York City, where Arthur Reuben created a special for one of Charlie Chaplin's leading ladies in 1914, using ham, turkey, Swiss cheese and coleslaw on rye. Another origin story points to a customer, Reuben Kulakofsky, who was said to have ordered a corned beef and sauerkraut sandwich at Blackstone Hotel, in Omaha, where Bernard Schimmel obliged by rounding it out with Thousand Island dressing, Swiss cheese, rye bread and a hot grill. Today's Reuben sandwiches feature corned beef, sauerkraut, Swiss cheese and a healthy smear of Russian dressing between toasted, buttered rye. Homemade dressing has a brighter, fresher flavor than the bottled variety, and comes together in just a few turns of a whisk. To achieve the prized crispy crust and gooey cheese, keep the heat low enough to allow the buttered bread to toast while the cheese melts.

Time 30m

Yield 4 sandwiches

Number Of Ingredients 11

1/2 cup mayonnaise
5 tablespoons ketchup
3 tablespoons dill pickle relish (not sweet)
1 tablespoon minced onion
1 teaspoon yellow mustard
1 teaspoon Worcestershire sauce
8 slices rye sandwich bread
4 tablespoons unsalted butter, at room temperature
1 pound thinly sliced corned beef
1 cup drained sauerkraut (about 6 ounces)
8 slices Swiss cheese (about 6 ounces)

Steps:

  • Make the Russian dressing: In a small bowl, combine all ingredients and mix well.
  • Make the sandwiches: Spread one side of each bread slice with 1/2 tablespoon butter. In a large nonstick skillet, arrange 2 slices of bread, buttered side down, over medium-low heat. Spread 2 tablespoons of Russian dressing on each slice of bread, then top each with 1/4 pound corned beef, 1/4 cup sauerkraut and 2 slices cheese. Top each with 1 slice of bread, buttered side up. Cook until golden and crispy underneath, about 5 minutes. Flip the sandwiches and cook, pressing down gently with a spatula, until second side is golden and cheese melts, about 3 minutes more. Transfer sandwiches to plates and wipe out skillet. Repeat with the remaining bread, sauce, corned beef, sauerkraut and cheese. Serve warm.

REUBEN SANDWICH

Reuben Sandwich image

Modern-day Reuben sandwiches are often open-faced and broiled, which dries out the corned beef and makes the cheese rubbery. Or, under the misguided belief that more is better, they are overstuffed. The main things to remember for a great Reuben are to keep the filling under control and in balance, so when you bite into it you get a harmonious and succulent mouthful; and to grill the sandwich slowly and under some pressure, so the bread gets toasty brown and buttery crisp, the meat gets warmed through, and the cheese is just melted enough to be oozy.

Categories     Sandwich     Beef     Cheese

Yield Makes 1

Number Of Ingredients 6

2 slices rye bread or pumpernickel
2 teaspoons butter, at room temperature
2 tablespoons Reuben's Russian Dressing
1/4 cup well-drained, fresh-style sauerkraut
2 ounces thinly sliced Gruyère or Switzerland Swiss cheese
1/4 pound thinly sliced corned beef

Steps:

  • Butter each slice of bread evenly to the edges on one side.
  • Place one slice, buttered side down, in a small cold skillet: Build the sandwich in the skillet you'll grill it in.
  • Spread 1 tablespoon of the Russian dressing on the face-up, dry side of the bread. Then put on the sauerkraut, spreading it evenly.
  • Arrange the cheese in an even layer over the sauerkraut, then do the same with the corned beef.
  • Spread another 1 tablespoon Russian dressing on the dry side of the second slice of bread and place it, dressing side down, buttered side up, over the corned beef.
  • Place the skillet over medium-low heat and grill the sandwich slowly, pressing down on it a few times with a wide metal spatula. Grill until the bread is browned and crisped, then turn the sandwich over with the help of the spatula.
  • Now weight the sandwich down by placing a plate (or another small skillet) over the sandwich, then adding on a weight, such as a 28-ounce can of tomatoes. Grill until the second side has browned and crisped, then flip the sandwich over one more time to briefly reheat the other side.
  • Serve immediately.

What Makes a Reuben a Reuben?

Before we dive into how to make a better Reuben sandwich, it's important to understand what a Reuben actually is. Traditionally, a Reuben is a hot sandwich made of corned beef brisket, Swiss cheese, sauerkraut, and Russian dressing, served on rye bread. The exact origin of the Reuben is disputed, but it is generally believed to have been created in the early 20th century in either New York City or Omaha, Nebraska.

Improving the Ingredients

One way to make a better Reuben sandwich is to focus on the quality of the ingredients. Using high-quality bread, corned beef, cheese, sauerkraut, and dressing can make a world of difference in the final result. Look for freshly baked rye bread, and try making your own sauerkraut to ensure it is fresh and flavorful. Consider using a high-quality Swiss cheese instead of a pre-packaged variety, and make your own Russian dressing for a more authentic and flavorful taste.

Experimenting with Variations

While the traditional Reuben sandwich is delicious, there are countless variations you can try in order to make a better version. Consider swapping out the corned beef for pastrami, or substituting the Swiss cheese for a sharp cheddar. Experiment with different types of bread, such as a crusty artisan sourdough or a soft brioche bun. You can also try incorporating additional toppings, such as caramelized onions or avocado slices, to add extra flavor and texture to your sandwich.

Grilling or Toasting

Another way to elevate your Reuben sandwich is to grill or toast it. Traditionally, a Reuben is often prepared on a griddle or in a panini press, which gives the bread a crispy texture and melts the cheese and dressing. If you don't have a griddle or panini press, you can also achieve a similar effect by toasting the bread in a toaster or oven, then assembling the sandwich and grilling it in a skillet until the cheese is melted and the bread is crunchy.

Serving Suggestions

The final step in making a better Reuben sandwich is to consider how you serve it. While the sandwich is delicious on its own, you can also pair it with a side salad or chips for a well-rounded meal. Some people also like to serve their Reuben with a pickle spear or a side of coleslaw. And don't forget the importance of presentation - arrange the sandwich neatly on a plate and sprinkle with fresh herbs or paprika for a visually appealing touch.

In Conclusion

Making a better Reuben sandwich is all about paying attention to the details. By focusing on high-quality ingredients, experimenting with variations, grilling or toasting the sandwich, and considering how to serve it, you can create a delicious and satisfying version of this classic sandwich. Whether you stick to the traditional recipe or put your own spin on it, a well-made Reuben is sure to please even the pickiest of sandwich connoisseurs.

Tips for Making a Better Reuben Sandwich Recipe

The Reuben sandwich is an American classic that is well-loved for its rich, savory flavors and hearty texture. Packed with layers of corned beef, sauerkraut, Swiss cheese, and thousand island dressing between slices of rye bread, a well-made Reuben sandwich can be a truly satisfying meal. However, there are a few key tips to keep in mind if you want to take your Reuben sandwich recipe to the next level. Here are some valuable tips to consider:

1. Choose the Right Bread

The bread you choose for your Reuben sandwich can make all the difference in the world. Traditionally, rye bread is used, but you can also experiment with other types of bread, such as pumpernickel or sourdough. Just make sure that the bread is of good quality and can stand up to the fillings without falling apart. You can also consider toasting the bread before assembling the sandwich to give it extra crunch and flavor.

2. Use High-Quality Meat

The meat is the star of the Reuben sandwich, so it's important to use high-quality ingredients for the best results. You can use corned beef or pastrami, both cured meats made from beef, to create the classic Reuben sandwich. Look for meat that is thinly sliced and well-marbled, as this will ensure that it has a rich, beefy flavor and a tender texture.

3. Get Creative with Sauerkraut

Sauerkraut is a key component of the Reuben sandwich, providing a tangy, sour flavor that balances out the richness of the meat and cheese. While traditional recipes call for plain sauerkraut, you can experiment with different varieties to add more depth of flavor. For example, try using red cabbage sauerkraut or pickled vegetables for a unique twist. You can also try adding other condiments or spices to the sauerkraut to give it even more flavor.

4. Make your Own Thousand Island Dressing

A good thousand island dressing is essential for a tasty Reuben sandwich recipe. While you can use store-bought dressing, making your own is relatively simple and can add a lot of flavor to the sandwich. Combine mayonnaise, ketchup, sweet pickle relish, and chopped onion for a classic thousand island dressing. You can also add other ingredients, such as Worcestershire sauce, mustard, or hot sauce to give it some extra zing.

5. Layer your Ingredients Properly

The way you layer the ingredients can have a big impact on the overall taste and texture of your Reuben sandwich. Start by spreading your dressing on both slices of bread, followed by a generous layer of sauerkraut on one side. Add the meat and cheese, and then top it off with another layer of sauerkraut. Finish with the second slice of bread, and press down gently to get all the layers melded together.

6. Use the Right Cheese

The cheese you use can make a big difference in the final taste of your Reuben sandwich. The traditional cheese for Reuben sandwich is Swiss cheese, which has a nutty, slightly sweet flavor that pairs well with the other ingredients. However, you can also try other types of cheese, such as cheddar or provolone, for a different flavor profile. Just make sure that the cheese is sliced thinly so it melts evenly and doesn't overpower the taste of the other ingredients.

7. Cook your Sandwich Properly

Cooking your Reuben sandwich to perfection is key to achieving a delicious result. You can either cook it on a griddle, in a pan, or in a sandwich press, depending on your preference. Regardless of how you cook it, make sure to use enough butter or oil to ensure that the bread gets crispy and golden brown. Cook it on both sides until the cheese is melted and the filling is heated through. This will ensure that your sandwich is hot and toasty, with a perfectly melted cheese and a crispy crust.

Conclusion

The Reuben sandwich is a classic for a reason: it's delicious and satisfying. With a few tweaks and adjustments, you can take your Reuben sandwich recipe to the next level and make it truly outstanding. By following these tips, you can create a Reuben sandwich that is packed with flavor and sure to be a hit with anyone you serve it to.
