SHRIMP IN CHIPOTLE SAUCE

A sauce just spicy enough to make your mouth tingle enveloping tender shrimp- this is fairly quick to prepare if you use pre- peeled shrimp. This recipe includes Cola which adds flavor as well as a touch of sweetness. The sauce is good spooned over white rice. I would not suggest using diet cola for this recipe. 8 garlic cloves, minced
1/4 cup fresh lime juice
sea salt & freshly ground black pepper
shrimp
3 tablespoons extra virgin olive oil
1/2 cup finely chopped white onion
4 ripe tomatoes, about 1 1/2 lbs. chopped or 2 (14 1/2 ounce) cans each chopped tomatoes, drained
2 canned chipotle chiles, en adobo with 1 tablespoon sauce
1/2 cup Coca-Cola or 1/2 cup Pepsi
1/4 teaspoon dried oregano, preferably Mexican

Steps:

  • In a bowl, stir together the garlic, lme juice, and sea salt and pepper to taste. Add the shrimp and toss until thoroughly coated. Let marinate while preparing the sauce, at least 5 minutes.
  • In a heavy frying pan or cazuela over medium-high heat, heat the olive oil. Add the onion and saute until golden, about 3 minutes. Add the tomatoes and cook, stirring constantly, just until the color deepens, less than 1 minute. Using a slotted spoon, transfer the tomato mixture to a blender, allowing any excess oil to drip back into the pan. Reserve th oil in the pan. Add the chiles an dsauce, cola, and oregano to the blender. Process until you get a textured sauce.
  • Remove the shrimp from the marinade and pat dry with paper towels. Return the pan with the reserved oil to medium-high heat and heat until the oil begins to shimmer. Add half of the shrimp and cook until opaque, about 2 minutes. Using the slotted spoon, transfer to a plate. Repeat with the remaining shrimp and add them to the plate.
  • Return the still-hot pan to medium-high heat and add the sauce. Fry, stirring frequently, until the sauce thickens and the flavors deepen, about 5 minutes. Stir in the shrimp and cook for 2 minutes longer just to heat through. Divide the shrimp evenly among warmed individual plates. Spoon some of the remaining chipotle sauce over each serving and serve at once.

1 pound large size (13-15 count) shrimp, cleaned and deveined
1 pound baby octopus
1/2 cup red onion finely chopped
1 cup fresh plum tomatoes, peeled and seeded, cut in small dice
1 medium habanero chile, seeds and ribs removed, chopped into tiny pieces
1 1/2 cup fresh squeezed orange juice, strained
1/2 cup fresh squeezed lime juice, strained
1 large avocado, peeled and cut in medium-size dice
1/2 teaspoon salt
Chopped cilantro leaves
Crispy corn tortilla chips, for garnish

Steps:

  • Grill or broil the shrimp until cooked. Set aside until they cool and then chop the shrimp into a medium-size dice.
  • Clean the baby octopus, and boil for about 40 minutes in salted water, strain and grill. Set aside until they cool, and then chop the octopus into a medium-size dice.
  • In a large glass bowl mix the onion, tomatoes, habanero, orange juice, lime juice, and salt. Add the shrimp and octopus and mix. Cover very tightly with plastic wrap and refrigerate for 2 hours.
  • Add the avocado and carefully mix so the avocado doesn't fall apart. Serve in medium-size martini glasses garnished with an orange wedge, lime wedge, cilantro and julienne strips of crispy tortillas.

This recipe comes from The Art of Mexican Cooking. Very authentic. Update: Some may find this recipe a bit on the 'spicy' side so I've made notations to "adjust to taste" on some ingredients. On ocassion I have substituted canned tomatoes.

1 lb large shrimp, peeled and butterflied with tail shell left on
sea salt
fresh ground black pepper
1/4 cup fresh lime juice
1/3 cup light olive oil
1 medium white onion, finely sliced
2 medium tomatoes, broiled or 2 medium tomatillos, can be substituted
2 -4 chipotle chiles, in adobo (seeded, adjust to taste)
1 garlic clove, peeled and roughly chopped
1/3 cup white wine
1/4 teaspoon Mexican oregano

Steps:

  • Season the shrimps with salt and pepper and lime juice and set aside to marinate for about 30 minutes.
  • Heat the oil in a frying pan; add the drained shrimp (reserving any liquid), and sliced onion and fry, shaking the pan and tossing (or stirring) the ingredients, for about 3 minutes. Remove the shrimp and onion with a slotted spoon and set aside.
  • In a blender jar, blend the tomatoes, chipotles, and their liquid, and garlic to a textured sauce. Reheat the oil, and add the sauce, and fry over high heat stirring and scraping the bottom of the pan to prevent sticking for about 8 minutes. Add the wine, oregano, marinade and salt to taste and cook for another minute. Add the shrimp/onion mixture and cook for about 2 minutes--for the shrimps should be just cooked and not rubbery.

This dish is an homage to the amazing shrimp on the Pacific coast of Mexico and more specifically, Mazatlán. Every morning around 6:30, the shrimp boats come in and beautiful shrimp arrive at the markets. Pairing the sweet shrimp with the fruity but tart tomatillo balances the dish with the nuttiness of the toasted pasta and the heat of the serrano.

8 ounces fideo, vermicelli or angel hair pasta, broken into 2-inch pieces
1 pound large shrimp (16 to 20), peeled, deveined and tails removed (see Cook's Note)
2 tablespoons bacon fat, lard or extra-virgin olive oil
1/2 medium onion, chopped
1 medium poblano chile, stemmed, seeded and chopped
2 garlic cloves, thinly sliced
1 serrano pepper, stemmed and thinly sliced
4 large tomatillos (8 ounces), husked, rinsed and thinly sliced
4 teaspoons kosher salt
2 1/2 cups low-sodium shrimp stock (see Cook's Note), fish stock, clam juice or water
1 large avocado, sliced
1/4 cup cilantro leaves and tender stems

Steps:

  • Heat a large skillet over high heat for 2 minutes and toast the fideo, tossing constantly, until most of the fideo has browned, 3 to 4 minutes; transfer to a medium bowl and set aside until ready to use.
  • Heat the bacon fat in the same skillet over high heat and cook half the shrimp until just beginning to brown, about 1 minute per side; transfer to a plate. Repeat with the remaining shrimp.
  • Reduce the heat to medium high and add the onion, poblano, garlic, serrano, tomatillos and salt in the same skillet; cook, tossing occasionally, until tender and just beginning to brown, 6 to 8 minutes. Add the stock and fideo and bring to a boil; cover, reduce the heat to low and cook until all of the liquid has been absorbed, 17 to 22 minutes. Remove from the heat and let sit for 5 minutes. Arrange the shrimp on top, cover and let sit for 5 minutes to heat the shrimp through.
  • Serve the fideo topped with avocado slices and cilantro leaves.

1/2 medium avocado peeled and pitted
2 medium tomatillos, husks removed
1/2 cup cilantro
1 cup cold water, plus 1 cup for chipotle sauce
1/2 teaspoon salt, plus 1/2 teaspoon for chipotle sauce
3 medium plum tomatoes, roasted, peeled and seeded
7 canned chipotles, seeds removed
1 pound tiger shrimp (16-20 count peeled and deveined)
1 medium fresh mango peeled and cut into thin wedges

Steps:

  • In a blender or food processor blend the avocado, tomatillos, cilantro, water and salt, until you get a smooth puree. Set aside. In a blender or food processor blend the tomatoes, chipotles, water and salt, until you get a smooth puree. Set aside.
  • Season the shrimp with salt and on a grill or broiler cook the shrimp until tender; (being careful not to overcook).
  • On a medium-size plate place the avocado sauce on half of the plate, and on the other half the tomato-chipotle sauce; garnish the plate with the mango slices and set the grilled shrimp between the 2 salsas.

CAMARONES ENCHIPOTLADOS (SHRIMP IN CHIPOTLE SAUCE)

This recipe is based on one served at Brisas del Mar, a restaurant on the boardwalk of the Port of Veracruz. A flavorful dish that can be served as an appetizer or main course.

1 lb large shrimp, peeled and butterflied with tail left on
sea salt, to taste
fresh ground pepper, to taste
1/4 cup lime juice
1/3 cup olive oil
1 medium white onion, sliced thin
2 medium tomatoes
4 chipotle chiles in adobo (more or less to taste, depending upon how hot you like it)
1 garlic clove, minced
1/3 cup dry white wine
1/3 teaspoon dried oregano, Mexican if possible

Steps:

  • Line a small shallow pan with foil.
  • Add the tomatoes.
  • Broil 2-inches from the heat, turning occasionally, until skin blistered and browned and flesh inside is mushy.
  • Set aside to cool.
  • Season the shrimp with salt, pepper and lime juice; set aside to marinate for about 30 minutes.
  • Heat the oil in a frying pan.
  • Drain the shrimp, reserving liquid.
  • Add shrimp and onions to hot oil in frying pan.
  • Saute for 3 minutes stirring and turning frequently.
  • Remove shrimp and onions with slotted spoon and set aside.
  • Place tomatoes, chipotles and adobo sauce, and garlic in a blender; Puree to a textured sauce.
  • Reheat the oil, add the sauce and fry over high heat, stirring and scraping the bottom of the pan to prevent sticking, for about 8 minutes.
  • Add the wine, oregano, reserved marinade.
  • Salt to taste and continue cooking for 1 more minute.
  • Add the shrimp/onion mixture to the sauce and cook for 2 more minutes.
  • The shrimp should be just cooked and not overdone.
  • Serve as an appetizer or as a main dish over hot rice.

2 lbs medium shrimp, shelled and deveined
1 large white onion, chopped
3 garlic cloves, finely chopped
2 tablespoons unsalted butter
2 cups white mushrooms, sliced
2 roma tomatoes, chopped (about 2 cups)
1 teaspoon kosher salt
1 cup Mexican crema or 1 cup creme fraiche
1 -2 tablespoon chipotle chile in adobo
salt and pepper
shrimp broth (optional)

Steps:

  • Using a food processor or blender, combine cream and chiles, adding chipotles a little at a time to taste, and pulse until smooth. Set aside.
  • Melt butter in a large heavy skillet over medium heat.
  • SautĂ© the green onion, garlic, and salt until soft, about 5 minutes.
  • Add the sliced mushrooms and cook covered, about 3 minutes.
  • Add the tomatoes and bring to a simmer. Reduce heat and cook, an additional 5 minutes.
  • Add shrimp and simmer, covered until they begin to turn pink, about 2-3 minutes.
  • Add broth if additional liquid is needed. Add the chipotle cream and heat until cooked through, an additional 3-5 minutes.
  • Season with salt and pepper to taste.
  • Serve with warm corn tortillas, over rice, or with avocado.
  • Notes: To make broth, combine reserved shells with 2 cups of water and 1/2 teaspoon of salt and bring to a simmer. Continue to simmer over medium heat for 30 minutes. Strain and use broth as needed to add liquid to the dish or thin the cream sauce to desired consistency.
