FENNEL-CRUSTED PORK CHOPS WITH WINTER CELERIAC SLAW

- Heat oven to 190C/170C fan/gas 5. Put the oil, fennel seeds, oregano, chilli and some seasoning on a shallow plate. Rub each pork chop on both sides in the mixture. Place on a baking tray and roast for 40 mins.
- Meanwhile, make the slaw. Put the mayonnaise, vinegar, Worcestershire sauce, mustard, sugar and a good pinch of salt and pepper in a large bowl. Mix well, then toss in the vegetables.
- When the pork chops are done, set aside 2 of the chops with one-third of the slaw for lunch. Divide remaining slaw between 4 plates and add a pork chop to each.

- Heat oven to 400°F.
- Place vegetables in 13x9-inch baking dish sprayed with cooking spray; drizzle with dressing.
- Coat chops with coating mix as directed on package; place over vegetables.
- Bake 35 to 40 min. or until chops are done (145ºF). Let stand 3 min. Sprinkle with cheese.

DRAKE'S WINTER PORK CHOPS WITH FENNEL, APPLE, SAGE, ONIONS

- Use two saucepans to sautée fennel and onions separately, so the green color of the fennel doesn't muddy the other colors. Before adding onions to second saucepan, brown the pork chops in olive oil, about 10 minutes each side in med-high heat. When they seem cooked through, remove from pan and add to juices the onions, cooking for five minutes before adding a variety of diced apples with skin on. After adding apples, continue to sautée on med heat for 15 minutes. Just before serving, combine the fennel with the apples and onions and add sage, fennel seeds and salt to taste. Add pork chops to mix, stir around a bit, then remove pork chops and serve with generous quantity of apple/fennel sautée on the side of plate.
WINTER-FRUIT PORK CHOPS
I love chops this way, but then again I'm a cranberry freak. I turn up the oven a bit on the last part and sometimes add some soy sauce and pineapple to the recipe.

Steps:
- In a heavy skillet brown chops in a small amount of butter or oil-remove and place in a casserole dish in a single layer-salt and pepper them.
- Cut 6 slices from the middle of the oranges.
- Squeeze juice from remaining orange pieces and the last whole one.
- You will want 1/2 cup juice plus 3 T.
- Set aside the 3 T.
- Mix the 1/2 cup juice with the brown sugar and pour over chops.
- Bake in 350°F oven for 45 minutes.
- Meanwhile dice bread, cranberries, celery and add to that salt and juice in a small bowl.
- Pull chops out of the oven, place an orange slice on each and mound with cranberry "stuffing".
- Spoon on some juice from the pan; return to oven and bake for 15 minutes longer.

WINTER PORK CHOPS
I saw a recipe similar to this in an Uncle Ben's ad some years ago. I never kept the ad, just started making this recipe. Although the seasoning is different, don't let it scare you. Everyone that I have ever made these for loves them, including my husband who doesn't like rice. Try them once. I make it without the craisins but they were in the original recipe.

Steps:
- Heat oil in a large skillet.
- Add pork chops.
- Season pork chops with salt and cinnamon (just like salt& pepper) on each side.
- Lightly brown the chops then remove to a platter.
- Add onions to skillet and cook until tender.
- Add apple juice, rice mix and seasoning packet from mix.
- Bring to a boil.
- Add pork chops and the juices from the platter back to the skillet.
- If using the craisins, add here.
- Cover and reduce heat to a simmer.
- Cook for 20-25 minutes.
- Sprinkle the top with cheddar cheese, cover and cook for 5 minutes more or until most of the juice is absorbed.
