2 garlic cloves, minced
2 tablespoons olive oil
1 package (6 ounces) fresh baby spinach
1/4 cup slivered almonds
1/2 cup crumbled feta cheese

Steps:

  • In a large skillet, saute garlic in oil for 1 minute. Add spinach and almonds; saute 2 minutes longer or just until spinach is wilted. Sprinkle with cheese.

This mouth-watering vegetarian wilted spinach salad boasts baby spinach tossed with sauteed red onions, melty feta, olive oil, vinegar, and hard-boiled eggs. Meat-eaters can top theirs with bacon.

6 cups fresh baby spinach leaves (washed and dried)
5 tablespoons olive oil (divided)
1 medium red onion (cut into 1/4-inch thick wedges with some core attached)
2 hard-boiled eggs (diced)
3/4 cup crumbled feta cheese
2 tablespoons apple cider vinegar
Kosher or other coarse salt and freshly ground black pepper
Optional bacon - per serving
1 slice bacon (cooked, drained, cooled, and chopped)

Steps:

  • Add spinach to a large bowl.
  • Heat two tablespoons olive oil in a large skillet over medium heat-high. Add onions and saute, stirring occasionally, until softened and some bits are brown, about 7 minutes.
  • Remove skillet from heat. Pour onions over spinach. Top with egg.
  • Add remaining 3 tablespoons olive oil to skillet and stir in the feta cheese. Stir in unheated skillet until the cheese begins to melt, about 1 minute. Stir in the apple cider vinegar and season to taste with salt and pepper.
  • Pour the cheese mixture over the salad. Toss thoroughly to coat and wilt the spinach slightly.
  • Divide between four plates. Top individual servings with chopped bacon if desired.

1 lb pre washed baby leaf spinach
1 bunch green onions chopped
6 slice bacon cooked on the stove top to reserve the drippings
5 Tbsp apple cider or white distilled vinegar
2 tsp sugar
1 large apple, i used pink cripp plus extra for garnish
1/2 c or more crumbled feta cheese

Steps:

  • 1. I am giving you the ingredients and amounts that I used. This is the book where the original recipe came from.
  • 2. Chop the green onions and mix with the baby spinach and set aside till needed.
  • 3. Cook the bacon over medium high heat in a large skillet until crisp, I used a 16 inch size. Remove bacon to paper towel and set aside till needed crumble when cool enough to handle. Save about 4 tablespoons of the bacon fat in skillet.
  • 4. Add the sugar and vinegar to a measuring cup or small bowl, and stir until the sugar dissolves. With heat still on medium high add the vinegar sugar mixture to the skillet, and heat until it boils. Then add the spinach and onions and toss until spinach begins to wilt, about 1 minute. Then remove from heat.
  • 5. Add the bacon and toss gently to mix. Serve immediately. I made each serving from the skillet.
  • 6. Then add the apples & feta and stir to mix. Serve immediately while still warm. I added the feta after I place it on the serving dish. Garnish with additional Apple slices if desired. Add a SPRINKLING OF CHOPPED CHIVE OVER EACH PLATE IF DESIRED.
  • 7. Had one left over for the next days dinner. You can nuke it in the microwave if you want it to be warm.

1 salmon fillet (8 ounces)
2 teaspoons lemon juice
1/2 teaspoon Greek seasoning
1/2 cup quinoa, rinsed
1 cup reduced-sodium chicken broth
1 teaspoon olive oil
4 cups coarsely chopped fresh spinach
1 cup grape tomatoes, halved
1/4 cup crumbled feta cheese
2 tablespoons chopped fresh parsley
1 tablespoon minced fresh oregano
1/8 teaspoon pepper
Lemon wedges

Steps:

  • Preheat oven to 375°. Place salmon on a foil-lined baking sheet, skin side down. Sprinkle with lemon juice and Greek seasoning. Bake until fish just begins to flake easily with a fork, 15-18 minutes., Meanwhile, in a small saucepan, combine quinoa, broth and oil; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed and quinoa is tender, 12-15 minutes., To serve, break salmon into 1-in. pieces using a fork. Place spinach, tomatoes, quinoa and salmon in a large bowl. Add cheese, herbs and pepper; toss gently to combine. Serve with lemon wedges.

2 tablespoons extra-virgin olive oil
2 cloves garlic, finely chopped
1 medium onion, chopped
1 small bunch Swiss chard, stems and leaves chopped and reserved separately (about 12 ounces)
1/2 cup long-grain white rice
Kosher salt
Two 10-ounce packages frozen chopped spinach, thawed and squeezed dry
1 large egg, beaten
6 ounces feta cheese, preferably Greek, crumbled
1/3 cup coarsely chopped dill
1/3 cup golden raisins
1/4 cup pine nuts
1 teaspoon finely grated lemon zest
12 to 14 sheets phyllo dough from one 16-ounce package
1/2 cup unsalted butter, melted
Tomato Salad, for serving, recipe follows
3 ripe medium tomatoes, cut into wedges
1/2 cup sliced pepperoncini
1/4 cup halved pitted olives, such as Kalamata
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • 1. Preheat the oven to 400 degrees F. Heat the oil in a large skillet over medium-high heat and cook the garlic, onions and chard stems until softened, about 5 minutes. Stir in the rice and 1/2 teaspoon salt to combine. Add 1 cup water, cover, reduce the heat to low and cook without stirring until the rice is tender but not mushy, about 12 minutes. Uncover, add the spinach, chard leaves and 3/4 teaspoon salt. Cook, stirring, until the greens are wilted, about 3 minutes. Transfer to a large bowl to cool (stirring with a large spoon will speed this up).
  • 2. When the filling is cool, stir in the egg and then the feta, dill, raisins, pine nuts and lemon zest.
  • 3. Place a large piece of parchment paper on a work surface. Lay out one sheet of phyllo and brush all over with some of the melted butter. Lay another sheet crosswise on top and brush with butter again. Working to form a large round of phyllo layers, lay an additional 6 sheets of phyllo dough diagonally over the first 2 sheets, brushing each sheet with butter, so they overlap in the center. Spread the filling in the center of the sheets and bring all the loose ends of the phyllo to rest on top to make a free-form pie, using the butter to help the pieces stick to each other. Lay 4 of the remaining 6 sheets of phyllo evenly over the top of the pie, tucking the edges under the bottom to form an enclosed disk and brushing each piece of dough with butter. Use the last 2 sheets, if necessary, to cover the filling or enclose the circle. Brush the outside of the pie with butter.
  • 4. Lift the parchment with the pie onto a rimmed baking sheet and bake until the phyllo is golden brown and crispy, about 40 minutes. Serve hot or at room temperature with the Tomato Salad on the side.
  • Toss the tomatoes with the pepperoncini and the olives in a medium bowl. Drizzle with olive oil and season with salt and pepper.

4 green onions, chopped
2 tablespoons olive oil
3 tablespoons vinegar
3 tablespoons sugar
1/2 teaspoon dry mustard
2 red apples (sliced or chopped)
2 ounces reduced-fat feta cheese, crumbled
1 hard-cooked egg, peeled and crumbled
fresh ground pepper

Steps:

  • Wash spinach, drain well and combine with onions in a large salad bowl. Set aside.
  • In a small saucepan, add olive oil, vinegar, sugar, and dry mustard. Bring to a boil.
  • Remove from heat and toss with spinach.

2 bunches fresh spinach, preferably a hearty curly-leaved variety (1 1/4 pounds), thick stems removed
1 teaspoon vegetable oil, such as safflower, plus more for frying
1 medium yellow onion, halved and thinly sliced (2 cups)
1/2 cup unbleached all-purpose flour
1 large egg, beaten
1/4 teaspoon freshly grated nutmeg
Kosher salt (we use Diamond Crystal) and freshly ground pepper
3 ounces feta, drained and crumbled
Zesty Tomato and Curried-Sour-Cream Dipping Sauces, for serving

Steps:

  • Bring 1/2 cup water to a simmer over medium-high heat in a large skillet or saucepan. Add spinach, cover, and cook until wilted and tender, 2 to 3 minutes. Drain in a colander. When cool enough to handle, squeeze out as much moisture as possible with your hands (or use a ricer to press out excess). Coarsely chop spinach and transfer to a large bowl.
  • Heat oil in a medium heavy-bottomed skillet, such as cast iron, over medium. Add onion and cook, stirring occasionally, until tender but no color has developed, about 6 minutes. Transfer to bowl with spinach and let cool completely.
  • Stir in flour, egg, nutmeg, 2 teaspoons salt, and 1/4 teaspoon pepper. Fold in feta. Form mixture into golf-ball-size rounds, then flatten slightly into 1-inch-thick patties. Transfer to a parchment-lined tray and refrigerate until cold, at least 2 hours or, loosely covered, up to 1 day.
  • Pour a scant 1/2 inch oil into skillet. Heat over medium until oil shimmers and bubbles form instantly around a breadcrumb dropped in (350°F on a deep-fry thermometer). Working in batches, fry, flipping once and adjusting heat as needed to maintain a level temperature, until crisp and golden brown, about 5 minutes.
  • Drain on a wire rack set over a rimmed baking sheet; keep warm in a preheated 200°F oven while frying the rest. Serve warm, with dipping sauces.
