Every now and again, I'll walk into the grocery store and see whoopie pies for sale, I may grab some here and there, but they never taste like...

TO MAKE THE ICING
5 Tbsp all purpose flour
1 c milk
1/2 c crisco
1/2 c butter, softened
1 tsp vanilla extract
1/4 tsp salt
1 1/2 c powdered sugar
CAKE
2 c sugar
1/2 c crisco
2 eggs
1 c sour milk
1 c boiling water
1/2 tsp salt
1 c cocoa powder
1 tsp vanilla
4 c all purpose flour
1/2 tsp baking powder
2 tsp baking soda

Steps:

  • 1. Preheat oven to 450 degree F. Coat cookie sheets with cooking spray. I like to line my sheets with parchment paper, but it isn't necessary. It helps save time with clean up. NOTE: I doubled the recipe when posting this. Just and fyi as you browse throught the photos and notice 4 eggs, etc.
  • 2. Start by prepping the first step of icing. In a saucepan, add milk and flour. Heat on low heat. Stir constantly until mixture becomes pasty. Cooking time takes approximately 10 minutes. You must stir constantly as it cooks to prevent mixture from becoming lumpy. When done, remove from heat & transfer to a bowl. Put in refrigerator to cool completely while you prep the cake tops and bottoms, about one hour. Do not cover, or if you must, cover lightly to prevent condensation from forming. We will finish the icing last.
  • 3. You will need 3 mixing bowls to make cake mixture. In first bowl, combine sugar, Crisco, & eggs. Cream together.
  • 4. In the second bowl, combine Sour Milk, Boiling water, salt, cocoa, and vanilla. Mix well until cocoa is dissolved completely into liquid. (To make sour milk, add 1 teaspoon lemon juice or white vinegar to 1 Cup of milk, stir and allow to sit for a few minutes.)
  • 5. In the third bowl combine flour, baking powder, and baking soda, mix well.
  • 6. Next, add the cocoa liquid mixture to sugar cream and mix well on low speed of mixer. gradually add flour mixture. Mix batter until all is blended well.
  • 7. Drop batter onto cookie sheets, approximately 1/8 of a cup. I use a cookie scoop or small cupcake batter scoop. Bake in preheated oven for 5-7 minutes. Toothpick inserted in middle of cake will come out clean when done. Remove from cookie sheet & place on cooling rack, allow to cool completely.
  • 8. Complete icing: In mixer, add Crisco, soft butter, vanilla & salt. Cream together. Add flour/milk mixture, & mix on low speed, gradually add powdered sugar until well blended. Place in refrigerator for about 20 minutes.
  • 9. Put together your Whoopie Pie! I like to use a pastry bag, and pipe my icing onto one cake, flat side, then top with another. It saves time and a big mess! Refrigerate for approximately one hour before serving. Keep refrigerated or in freezer. Makes an awesome midnight snack! :)

1 pkg chocolate cake mix
1/4 c crisco oil
1 1/2 c milk
1 box instant chocolate pudding
4 eggs
filling
1/2 c oleo
1/2 c crisco shortening
1 c milk
1 box instant vanilla pudding
1 tsp vanilla
1 c 10x sugar

Steps:

  • 1. For the Cake Mix all ingredients together beat with a mixer for 2 minutes.bake in two greased 8" or 9" cake pans on 350 degrees for 30 minutes. cool for 4 hrs. better yet to make the day before.
  • 2. Filling Mix instant vanilla pudding with i cup of milk put in frig. in a mixing bowl add soft oleo and crisco shortening add 1 cup of 10x sugar and the vanilla,add in prepared pudding. on the first layer of cake put the filling then top with the next layer.

A friend sent me the picture of the cake and the recipe. I made it when we were expecting company and they loved it.. hubby did too! yea!!

1 c margarine
2 c sugar or 1/2 sugar and 1/2 splenda
2 1/2 c flour
1 tsp baking soda
1 tsp salt
1 1/4 c buttermilk
3 eggs
9 Tbsp cocoa powder
icing:
2 c whole milk
3/4 c white flour
2 c sugar/splenda
8 Tbsp butter
1 Tbsp vanilla
1 c solid vegetable shortening

Steps:

  • 1. Pre heat oven 350*
  • 2. Grease (2) 9 inch round cake pans.
  • 3. Beat together the margarine and sugar. Add flour,baking soda and salt. Mix slowly, gradually adding the buttermilk. Beat 2 full minutes.
  • 4. Add eggs, then gradually add the cocoa, beating another 2 minutes, stopping occasionally to scrape the sides of bowl.
  • 5. Pour batter into prepared pans and bake about 40 minutes until center springs back when gently pushed.
  • 6. Cool cake layers 5 minutes then remove them from pans and cool them completely on a rack.
  • 7. TO MAKE THE ICING: Pour the milk into a stainless steel saucepan over medium heat and gradually whisk in the flour until a thick paste forms. DO NOT SCORCH!!! Remove from stove and cool this mixture in the refrigerator.
  • 8. In a separate bowl, mix the sugar,butter,vanilla and shortening. Add the cooled paste and whip for at least 3 minutes until creamy. This makes enough icing for a 2 layer cake.

2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
8 tablespoons cocoa
1 1/4 cups buttermilk (soured milk may be subbed, if necessary)
3 eggs
3 tablespoons flour
1 cup milk
1 cup sugar
1 teaspoon vanilla
1 cup butter (must be butter)

Steps:

  • Preheat oven to 350F; grease and dust two 9-inch cake pans with cocoa.
  • Beat butter and sugar together until fluffy; add eggs and beat until smooth.
  • Sift dry ingredients together; add alternatively with buttermilk to the egg batter and beat for two minutes.
  • Pour equally into prepared cake pans.
  • Bake for 25 minutes or until cakes test done.
  • Let rest in cake pans for 10 minutes, then turn out onto cooling rack to complete cooling.
  • While the cake is cooling, make the frosting: Add milk to flour slowly, avoiding lumps.
  • Cook flour and milk until very thick, stirring constantly.
  • Cool completely.
  • Cream sugar, butter and vanilla until fluffy.
  • Add to cooked mixture.
  • Beat, high speed, until very fluffy.
  • Looks and tastes like whipped cream.
  • Place one layer on cake plate and liberally frost top.
  • Place second layer on top of first and frost top and sides.
  • Sift cocoa powder lightly over the top for garnish, if desired.

1/4 cup vegetable oil
4 eggs
1 (3 1/2 ounce) box instant chocolate pudding mix
1 1/4 cups milk
1 cup Crisco
1 cup sugar
1 cup milk
1 (3 1/2 ounce) box vanilla instant pudding mix

Steps:

  • Preheat oven to 350°F.
  • Mix all cake ingredients together.
  • Divide cake batter into two foil-lined 9x13 inch baking pans.
  • Bake at 350 F for 15 minutes.
  • Let cakes cool, the first one to room temperature and the second cake by placing into the freezer until stiff enough to "flop" on top of the room temperature cake (approx. 30-60 mins.).
  • Prepare filling by combining all ingredients into large bowl(large bowl size is important so that it can contain all the filling when it "fluffs" up). Whip hard for 5-10 minutes.
  • When cooled to room temp., icing the first cake with all of the filling.
  • Take the second cake out of the freezer and carefully "flop" on top of the first filling-topped cake.
  • Serve!

I found this recipe on a website for parents. The original was for the actual Whoopie pies, but I am too lazy for all of that. I altered a little and made a cake out of it. It is awesome and so worth the work. Note: use real butter, makes it much better.

1 (18 ounce) box devil's food cake mix
3 eggs
1/2 cup buttermilk
1/4 cup oil
1/2 cup water
12 tablespoons unsalted butter, softened but still cool (1 1/2 sticks)
1 1/4 cups confectioners' sugar
1 1/2 teaspoons vanilla extract
1/8 teaspoon table salt
2 1/2 cups marshmallow cream

Steps:

  • For the cakes: Heat oven to 350°F; line 2 cake pans with parchment paper.
  • Combine all cake ingredients and mix.
  • Pour half of batter into each cake pan. Cook approximately 20 minutes, or until cakes spring back when pressed. Cool completely on baking sheets, at least 1 hour.
  • For the filling:.
  • With electric mixer on medium speed, beat butter and sugar together until fluffy, about 2 minutes. Beat in vanilla and salt. Beat in Fluff until incorporated, about 2 minutes. Refrigerate filling until slightly firm, about 30 minutes. (Bowl can be wrapped and refrigerated for up to 2 days).
  • Spread filling onto one of the cakes. Place other cake on top. Refrigerate in air tight container up to 3 days.
  • This is also good if you heat a can of frosting for 20 seconds and pour over the cake.

1 cup brown sugar
1/4 cup granulated sugar
1 large egg (room temperature)
1 tsp pure vanilla extract
1 1/2 cup all-purpose flour
3/4 cup unsweetened cocoa
1 1/2 tsp baking soda
1/2 tsp salt
1 1/4 cups milk (room temperature)
filling
2 sticks (1 cup) unsalted butter (room temperature)
1 1/2 cups powdered sugar, sifted
7 oz marshmallow fluff
1 1/2 tsp vanilla extract
1/4 tsp salt
2 Tbsp milk or heavy cream

Steps:

  • 1. Line bottom of 2 − 9" round cake pans with parchment paper, spray with cooking spray and set aside and preheat oven to 350 degrees. 2. Cream butter and sugars together until light and fluffy. Add egg and vanilla and beat until well incorporated. 3. Sift flour, cocoa, baking soda and salt into separate bowl. 4. Add half of flour mixture and half of milk to butter mixture and mix until just incorporated. Repeat with remaining flour mixture and milk. 5. Divide batter evenly between prepared cake pan and bake 25−30 minutes, until center springs back when touched and tester comes out clean. Remove from oven and cool completely in pans. 6. Prepare filling while cakes are cooling by whipping butter and powdered sugar until completely incorporated and no lumps remain. Add marshmallow fluff and whip until incorporated. Add vanilla, salt and milk, whip until light and fluffy (2−3 minutes). 7. Remove cooled cakes from pans and remove parchment. Place first cake upside down on cake plate. Place all filling in center of bottom cake and spread evenly toward edges with offset spatula or butter knife. Place top cake carefully (right side up) on filling, press gently into position. 8. Slice, serve and enjoy!
