2 tablespoons olive oil
1 garlic clove, chopped
1/2 cup chopped drained oil-packed sun-dried tomatoes
1/2 cup dry white wine
1/3 cup purchased pesto sauce
1 15-ounce can cannellini (white kidney beans), rinsed, drained
8 ounces gemelli pasta
1/4 cup freshly grated Parmesan cheese (about 1 ounce)

Steps:

  • Heat olive oil in heavy medium saucepan over medium heat. Add garlic; sauté 2 minutes. Add tomatoes, wine and pesto; simmer over medium heat until reduced slightly, about 5 minutes. Add cannellini and stir until heated through.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain pasta, reserving 1 cup cooking water.
  • Add pasta and cheese to sauce; toss to coat. Mix in enough reserved pasta water, 1/4 cup at a time, to moisten. Season to taste with salt and pepper.

Coarse salt and ground pepper
1 bunch broccoli, cut into 1-inch pieces (about 4 cups)
10 ounces short pasta, such as fusilli
5 teaspoons extra-virgin olive oil
1/2 ounce Parmesan, finely grated (1/4 cup), plus more for serving (optional)
1 teaspoon finely grated lemon zest, plus 1 tablespoon lemon juice
1/2 cup packed fresh parsley leaves
1/2 small garlic clove
1 can (15 1/2 ounces) cannellini beans, rinsed and drained

Steps:

  • In a large pot of boiling salted water, cook broccoli until tender and bright green, about 4 minutes. With a slotted spoon, transfer broccoli to a food processor. Return water to a boil and cook pasta according to package instructions. Reserve 2 cups pasta water; drain pasta and return to pot.
  • To food processor, add oil, Parmesan, lemon zest and juice, parsley, and garlic. Puree until smooth, about 2 minutes, scraping down side as needed. Transfer pesto to pot with pasta. Stir to coat, adding enough reserved pasta water to make a creamy sauce. Stir in beans and heat over medium until warmed through. Season with salt and pepper. To serve, sprinkle with Parmesan, if desired.

½ cup walnuts
Kosher salt
½ cup fresh ricotta
Zest of 1 lemon
1 garlic clove, finely grated
2 tsp. finely chopped oregano
2 oz. Parmesan, finely grated, plus more for serving
¼ cup extra-virgin olive oil
Freshly ground black pepper
1 lb. tube- or rod-shaped pasta (such as rigatoni or spaghetti)

Steps:

  • Preheat oven to 350°F. Toast walnuts on a rimmed baking sheet, tossing once, until golden brown, 6-8 minutes. Let cool, then finely chop. Bring a large pot of generously salted water to a boil.
  • Vigorously mix walnuts, ricotta, lemon zest, garlic, oregano, and 2 oz. Parmesan in a large bowl until well combined. Add oil 1 Tbsp. or so at a time, stirring well after each addition, until all the oil is incorporated. Season pesto with salt and pepper.
  • Cook pasta in pot of boiling water, stirring occasionally, until al dente. Scoop 1 cup pasta cooking liquid into bowl with pesto and stir gently to combine (it's okay if some of the pesto is still in small clumps). Using a spider, tongs, or slotted spoon, transfer pasta directly to bowl with pesto. Mix energetically until pesto thickens enough to lightly coat pasta, about 2 minutes; the pasta should have sauce clinging to it but there should also be some extra sauce that collects in bottom of bowl.
  • Divide pasta among bowls and serve with more Parmesan alongside for sprinkling over.

PESTO PASTA WITH WHITE BEANS AND HALLOUMI



Pesto Pasta With White Beans and Halloumi image

This vegetarian weeknight dinner comes together in half an hour and is made super special with the addition of halloumi. It looks like a fluffy cloud when grated, and it gives the pasta just the right amount of salty tang. Be sure to use a very fine grater, like a Microplane, when you prepare the halloumi, as it will only add to the fluffy effect (which is what you're after). This is a full meal in its own right, but you can also serve it alongside a big green salad.

1/3 cup/75 milliliters olive oil
6 garlic cloves, peeled and thinly sliced
1 medium green serrano chile, stemmed and halved lengthwise
1 tablespoon fresh thyme leaves, chopped
2 (15.5-ounce/400-gram) cans cannellini beans, drained and rinsed
3 cups (about 9 ounces/250 grams) short, twirled pasta, preferably gemelli or trofie pasta
3 cups/700 milliliters chicken or vegetable stock
Kosher salt and black pepper
1/4 cup/60 milliliters lemon juice (from 2 lemons)
1 block halloumi (around 7 ounces/200 grams), very finely grated
Heaping 1/3 cup/50 grams pine nuts, well toasted
2 small garlic cloves, roughly chopped
3 lightly packed cups (about 2 ounces/60 grams) arugula (rocket), roughly chopped
1/2 cup/20 grams roughly chopped parsley (leaves and tender stems only)
1/3 cup/90 milliliters olive oil, plus more as needed

Steps:

  • Prepare the pasta: Add the oil to a large, lidded sauté pan, and then place it over medium-high heat. Once hot, add the garlic and chile, and cook for 2 minutes, stirring often, until the garlic is nicely golden. Stir in the thyme, beans, pasta, stock, 2 teaspoons salt and plenty of pepper, and bring to a simmer. Turn the heat to medium, cover, and cook for 12 minutes. Remove from the heat and let sit, with the lid off, for about 5 to 10 minutes. This will help it absorb more of the liquid.
  • As the pasta cooks, make the pesto: To a food processor, add the nuts, garlic, arugula (rocket), parsley, half the oil, 1/2 teaspoon salt and a good grind of pepper. Pulse a few times, scraping down the sides and pulsing again until you have a coarse paste. Transfer to a small bowl and stir in the remaining olive oil, adding a touch extra if needed to loosen the pesto.
  • When ready to serve, stir the lemon juice and half the pesto into the pasta (discard the chile, if you wish) and transfer to a large serving bowl or platter with a lip. Sprinkle over about half the halloumi, and serve with the extra halloumi and pesto to eat alongside.

1 bunch kale, washed and drained
4oz dried penne pasta
1/2 cup whole almonds, toasted
1 1/2 tbsp garlic(about 5 large cloves)
1/4 cup freshly grated parmesan cheese
1/2 tsp salt
Juice of two lemons, divided
2 tbsp EVOO
1 19oz can white (cannellini) beans, rinsed and drained
1/8 tsp salt
1 tsp EVOO
1/4 to 1/2 tsp crushed red pepper flakes
freshly ground black pepper

Steps:

  • 1)Cut lower stems off kale. Steam kale over 2 quarts boiling water 5-7min., until tender. Transfer to colander to drain. Do not discard water. Add pasta to water on stove and return to boil, stirring. When pasta is al dente, drain. 2)Meanwhile, place almonds in food processor and process until well chopped. Add garlic, cheese, 1/2 tsp salt, and juice of one lemon. Carefully squeeze water from steamed kale and remove leaves from stems; discard stems. Pat leaves dry with paper towels and chop roughly. Pat dry again and add to food processor. Process until all ingredients are finely minced. With motor running, add 2 tbsp olive oil in a stream until thick pesto is formed 3)In a medium bowl, toss beans with juice of one lemon and 1/8 tsp salt. 4)In a large skillet, heat 1 tsp olive oil over medium heat. Add crushed red pepper flakes and fry for about 1min. Add kale-almond pesto and cook,stirring, for about 30 seconds. If pesto seems too thick, thin with small amount of water. Add pasta and beans and toss gently until thoroughly heated. Sprinkle with black pepper and serve immediately.
