White chocolate is the wonderfully different addition to this tropical-tasting bread. The moist slices are so scrumptious, they disappear as soon as I serve them.

Number Of Ingredients 12

1 cup butter, melted
1-1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon rum extract
2 cups mashed ripe bananas (about 4 medium)
2-3/4 cups all-purpose flour
1-1/4 teaspoons baking soda
6 ounces white baking chocolate, coarsely chopped
1/2 teaspoon salt
1 cup sweetened shredded coconut
1 cup chopped pecans

Steps:

  • In a bowl, combine butter and sugar; mix well. Add eggs and extracts; beat on high speed until thickened. Stir in bananas. Combine the flour, baking soda and salt; gradually add to banana mixture. Fold in the chocolate, coconut and pecans. Transfer to two greased 8x4-in. loaf pans. Bake at 350° for 70-75 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup 1 stick unsalted butter
3/4 cup light brown sugar
2 eggs
1 to 1 1/2 cup mashed banana* (from 3 to 4 overripe bananas)
1 teaspoon pure vanilla extract
1 cup chocolate chips/chunks (semisweet, milk, or a combo, plus additional for top (optional))
1 cup shredded coconut (plus additional for top (optional))

Steps:

  • Arrange an oven rack in the center position of the oven and preheat to 350°F. Grease an 8- by 4-inch loaf pan with softened butter, or generously coat with non-stick cooking spray.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt; set aside. In a large bowl, use an electric mixer to blend the butter until creamy. Mix in the brown sugar and beat for 1 minute. Stir in the eggs, mashed banana, and vanilla until well blended (it's okay if it looks a little curdled at this point). Stir in the flour mixture until just combined. Fold in the chocolate chips and the shredded coconut.
  • Scrape the batter into the prepared loaf pan and smooth the top. Sprinkle with additional chocolate chips and/or coconut, if using, and lightly press into the surface (if stray pieces of coconut are sticking up, they will burn). Bake for 55 to 60 minutes or until the outside of the bread is dark and crunchy and a toothpick inserted into the center comes out clean (unless you stick it in a chocolate chip!).
  • Allow the bread to cool for at least 10 minutes before turning it out of the pan onto a wire rack to finish cooling. Serve warm or at room temperature. Once completely cool, tightly wrap or cover any leftover banana bread and store it on the counter for up to a couple of days (and in the refrigerator after that).

This version incorporates other reviewers' suggestions to use a mix of white and brown sugar and to use butter instead of margarine. It also includes a little coconut and cinnamon. The coconut toasts nicely on top, adds great texture, and smells and tastes amazing with the banana and the chocolate.

⅓ cup packed brown sugar
¼ cup unsalted butter, softened
2 large eggs
1 cup mashed ripe banana
1 cup sour cream
1 teaspoon vanilla extract
2 cups all-purpose flour

1 teaspoon baking soda
¼ teaspoon salt
½ cup semisweet chocolate chips
½ cup unsweetened flaked coconut
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.
  • Cream white sugar, brown sugar, and butter together in a large bowl until smooth. Beat in eggs, one at a time. Stir in banana, sour cream, and vanilla.
  • Whisk flour, baking powder, baking soda, and salt together in another bowl; gently stir into wet mixture just until combined.
  • Toss together chocolate chips, coconut, and cinnamon in a small bowl. Fold about 2/3 of the mixture into the batter, then pour batter into the prepared pan. Sprinkle with remaining chocolate chip mixture.

3 Very ripe bananas;
1 Tlbs. unsweetened apple sauce;
1 stick of softened salted butter (best if left out a few hours before to soften);
1 cup of sugar;
2 cups of flour;
2 large eggs;
1 tsp. baking powder;
1 tsp. baking soda;
1 Tlbs. cinnamon;
2 tsp. coconut extract or emulsion;
Either: 2 bars of Lindt white chocolate coconut, or 1 cup white chocolate chips and 1 cup frozen unsweetened coconut;
Muffin Pan with liners or greased.

Steps:

  • 1.) Pre-heat oven to 325 2.) Peel and mash bananas with a fork, mix with apple sauce cover and set aside. 3.) In a large bowl cream together butter and sugar till light and fluffy. 4.) Add 1 egg at a time beating well after each egg. 5.) Add banana mush and cream together. 6.) Add baking soda and powder as well as the cinnamon and coconut emulsion/extract mix together. 7.) Add one cup of flour at a time mixing in between. 8.) Lightly dust your chocolate with the leftover flour, just enough to coat a little. This helps chocolate not to sink to the bottom. 9.) Add Coconut and white chocolate (if using the bars instead, chop up into bits and add). 10.) Pour in pan and bake for 16-20 min. or until light brown and a toothpick comes out clean. Enjoy! Can bake in a loaf pan, if so you'll need to bake for 45min. to an hour till a clean toothpick.

2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
3/4 cup sugar

Steps:

  • Heat oven to 350°.

A twist on the classic banana bread, replacing the traditional walnuts with coconut flakes and chocolate chips. I combined and tweaked several traditional recipes to come up with this one.
